Cherry pie with sour cream; delicious and ordinary recipe
Cherry pie with sour cream - a delicious and traditional recipe
We offer you an extremely tasty and simple recipe for cherry pie with sour cream. It is airy and fragrant, with a juicy crumb and an appetizing crust.
For production, you can use both the freshest and frozen berries (defrost and drain all the juice in advance). You can use sour cream of any fat content; in this pie recipe, 10% sour cream was used.
Please note that all products must be at room temperature. Therefore, do not forget to remove from the refrigerator in advance not only the butter so that it softens, but also the eggs, sour cream and cherries - if all the ingredients are at a similar temperature, the pie will rise perfectly and bake better.
Ingredients:
- Chicken eggs – 3 pcs.
- Sugar – 110 g.
- Vanillin – 1/6 tsp.
- Sour cream – 150 g.
- Butter – 100 g.
- Baking powder for dough – 1.5 tsp.
- Wheat flour – 200 g.
- Fresh pitted cherries – 200 g.
- Salt – 1 pinch.
Production time: 40 minutes. Number of servings: 6.
Manufacturing:
1. Remove the butter from the refrigerator an hour before making the pie so that it has time to melt at room temperature and soften. Break the eggs into a mixer bowl, add softened butter, sugar and vanilla sugar. Beat for 3 minutes until the mixture becomes fluffy and the sugar grains dissolve.
2. Add sour cream. Beat again, but not for long - 7-10 seconds.
3. Sift the flour through a sieve to enrich it with oxygen, mix it with salt and baking powder. Add flour in portions (in 2-3 additions), stirring the dough with a mixer.
4. The result should be a fairly thick, homogeneous and shiny dough.
5. Turn on the oven to preheat to 180-190 degrees. Grease a baking dish with a thin layer of vegetable oil.
If you doubt the non-stick properties of your own mold, you can line it with parchment paper.
Pour the dough and smooth it into the mold - a diameter of 23 cm is suitable.
6. Place the pitted cherries in a sieve in advance to drain excess juice (it will prevent the pie from baking properly). Arrange the berries in a random order and gently press into the dough.
7. Place the pan in the preheated oven. Bake for 30 minutes until the crust is golden. Check the readiness of the pie with a toothpick; if it comes out dry, you can remove it from the oven. Cool in the pan.
Sprinkle the cooled cherry pie with sweet powder. Cut into portions and brew tea.

Olga Thank you, I’ll bake it tomorrow))
Mimi, we used a mold 24 cm across
Hello, what diameter shape did you use, thanks in advance
Olga Zakharova, thank you so much for such a detailed description! I’m sure that now even the most “nimble cherry” will not pop up).
Adriano Perchini, first you need to blot the cherries from excess water with a cardboard towel. Later put it on a huge flat plate and leave for 30-60 minutes. The cherries must be very dry, if possible. Later, use a fine sieve to dust it with flour or starch. No need to fall asleep, just powder. Later, use a knife or a wooden stick to mix the berries without disturbing their shape. And add these berries, rolled in flour/starch, to the dough. Minimum flour/starch. It's just like a raid)
Olga Zakharova, thank you very much for the advice! Do I understand correctly that this needs to be done in “Step 3”: place the cherries on the dough, sprinkle them with starch and pour over the filling? Do you think this will not affect the tenderness of the filling?
Adriano Perchini, I suggest sprinkling the nimble cherry with flour or starch, then it won’t have to float.
I baked this pie 6 times, and I had a question: what can I do so that the cherries don’t float up after pouring the filling over them? Out of 6 times, three times everything was in order, and in this case the pie came out excellent - tender and varied in taste (the crust was salty, the cherry was sour, the filling was sweet), and three times the cherry floated up immediately after the filling, despite all this it was not properly baked, and the cherries were not the insides, but the topping. Please tell me the reason why this is happening? At first he complained about sour cream, later about the variety of cherries, but at the last time (now) he took the same sour cream and the same cherries as the previous time, when the pie came out, and the cherries floated out again ((. I will be sincerely grateful for any help and advice!
Step-by-step recipe for pie with cherries and sour cream filling
I learned to cook a wonderful cherry pie with sour cream filling from my mother-in-law: she once shared with me a Russian cookbook containing a detailed recipe with a photo of the finished product. Since that time, I have been cooking only according to this management, since over the years I have not been able to find the most balanced and reliable source.
The traditional recipe has undergone some modifications to make the process of kneading the dough and preparing the filling easier, but it has remained just as simple and playful. Now I will present for you to the tribunal my own beloved sour cream pie with cherries, which will certainly amuse your homemade sweet tooth!
Kitchen tools
In order for the pie to cook quickly and without much hassle, I recommend that you prepare in advance the kitchen utensils and utensils necessary for making the dough and the insides:
- pie pan (it is better to use an iron springform pan) with a diameter of 26 cm;
- two or three spacious bowls with a capacity of 700 ml;
- cutlery (spoons, forks and knives);

- measuring cup or ordinary kitchen scale;
- cotton and paper towels;
- a piece of parchment paper;

- You can take cottage cheese of any fat content , but do not buy a 100% fat-free ingredient - the filling from it will turn out to be the least tasty and tender.
- Instead of sunflower oil, you can choose high-quality butter , so the pie will only benefit in taste and smell. Creamy margarine is also often added to the dough.
- Before using, cherries should be washed well and all seeds removed . After this, discard the berries in a colander to drain the excess liquid from the glass.
- Vanilla sugar can simply be replaced with regular vanillin in an amount of about 5 grams, and potato starch with corn starch in the same volume.
Manufacturing sequence
- Pour sunflower oil into a deep bowl, add milk to it.
- Mix slightly, add sweet sand, cottage cheese and soda slaked with vinegar.
- After this, sift the wheat flour into the mixture and mix the mixture with a spoon.
- Once the ingredients have slightly combined with each other, you can start the actual kneading by hand or using a food processor.
- Line the pie pan with baking paper, then coat its bottom and walls with sunflower oil.
- Roll out the dough on a kitchen table sprinkled with a small amount of flour, then transfer the acquired layer into the mold.

How can you vary a regular recipe?
In order not to get bored from constantly making pies according to the same traditional recipes, cooks try to change and supplement the list of required ingredients.
- You can get a superbly delicious pie if you make a half-and-half sour cream filling with heavy cream. After beating in a blender, the filling becomes softer, and during baking it hardens perfectly.
- also add additional spices to the filling , which significantly improve the taste and smell of the finished product. For example, ground cinnamon, cardamom, ginger and nutmeg are excellent.
- Cooks who have tasted the taste often add lemon zest or a few drops of lemon juice to the dough - this is how the product acquires a pronounced, catchy citrus flavor. In addition, ground nuts or chopped dried apricots look great in the base .
- If you don’t have enough free time to make such baked goods, try the usual recipe for a unique cherry pie in a slow cooker, which has a delicate structure and good taste.
