Kuksi is a common dish in Korean cuisine. The name of the dish comes from the Korean word “Kuksu”, which was transformed by Russian Koreans into “kuksi”, meaning noodles, also a soup made with noodles.
In addition to noodles, the dish also includes a special broth, pieces of meat and a huge amount of vegetables.
Korean kuksi can be served either hot or cold. Now I would like to share with you a recipe for a cool version of the soup, which will be very stimulating in anticipation of the approaching summer heat. The dish comes out light, refreshing and very tasty. Thanks to a large number of vegetables and other ingredients, it is incredibly satiating, without leaving a feeling of heaviness.
To prepare Korean kuksi soup, prepare the ingredients. At first glance it may seem that there are a lot of them, but all the components can be divided into 3 groups - vegetable additives, broth and noodles.
Boil 3 liters of water for the broth and leave to cool while you prepare the other ingredients.
Cut the pork into small pieces - strips. Chop half an onion.
Fry the meat in a small amount of vegetable oil until the meat turns white and releases juice. Then add the chopped onion and simmer everything together for a couple more minutes until done. Turn off the heat and add a pinch of salt and ground black pepper.
You can also use beef to make kuksi, but in this case the production time will increase. If 15–20 minutes are enough to cook pork, then beef must be stewed for at least 30–40 minutes.
Prepare the ingredients for the broth. Grate 1 cucumber and 2-3 tomatoes. Chop the freshest greens.
Add grated vegetables, salt 1-2 tbsp, sugar 1-2 tbsp, soy sauce 3-4 tbsp, vinegar 1-2 tbsp to cooled boiled water. Stir thoroughly, taste the broth and add more herbs and spices as needed. Add chopped herbs and, if desired, sesame seeds.
Place the finished broth in the refrigerator for further cooling and infusion.
Grate the carrots or cut into thin cubes. Add 0.5 tsp. salt, 0.5 tsp. sugar, 0.5 tsp. vinegar, ground coriander, also black pepper to taste and stir thoroughly.
Fry 1 onion in a few tablespoons of vegetable oil. Add fried onions and 1-2 chopped garlic cloves to the carrots. Stir and add spices to taste as needed.
Thinly slice the cabbage. Add 0.5 tsp. salt, 0.5 tsp. sugar, red pepper to taste, 0.5 tsp. vinegar and 1 tbsp. vegetable oil. Mix, taste and add spices as needed.
Cut the cucumbers into small slices. Chop and add 1 onion and 1-2 cloves of garlic to the cucumbers. Add 0.5 tbsp. vinegar and 1 tbsp. vegetable oil, salt, ground black pepper to taste. Stir.
Beat the chicken eggs lightly. Add a pinch of salt.
Pouring the beaten egg in portions into a frying pan greased with vegetable oil, fry the purchased egg pancakes for a couple of minutes on both sides until cooked.
Roll the finished egg pancakes into a roll, transfer to a board and cool. Cut the chilled egg rolls into thin strips.
Boil the noodles until cooked according to the directions on the package. Drain the water and wash the noodles with cool water. I used wheat udon noodles, but you can also use regular thin spaghetti.
All components of the dish are ready and you can start assembling. Place a portion of noodles on a plate.
Add cooled broth.
Place cabbage, carrots, cucumbers, pieces of meat and omelet in portions on top.

Marinade for meat
- 2 (two) tbsp. spoons - vegetable oil
- 3 (three) tbsp. spoons - soy sauce
- Ground dark pepper - to taste
- Ground hot pepper - to taste
- Half a teaspoon of garlic powder
For egg pancakes
- 2 (two) pieces – eggs
- Salt to taste
- 2 (two) tbsp. spoons - water
Cucumber salad
- 2 (two) pieces – cucumbers
- 1 (one) teaspoon – sugar
- 2 (two) cloves – garlic
- Salt to taste
- Mix of ground peppers to taste
- 1 (one) tbsp. spoon - grows. oils
Muri dressing
- One and a half teaspoons - salt
- Half a bunch of cilantro
- Half a bunch of green onions
- 2 (two) teaspoons – vinegar essence
- Half a teaspoon – cilantro, coriander
- 1 (one) teaspoon – water
- 5 (5) art. spoon - soy sauce
- 1 (one) tbsp. spoon - sugar

- First, let's start filling the kuksi-muri. Let's boil water and cool it. Add soy sauce, sugar, vinegar, soy sauce to it and mix. Add chopped cilantro and onion. Place in the refrigerator
- Cut the meat into thin bars
- Add dark and reddish peppers, dry peas, soy sauce, garlic powder, vegetable oil to the chopped meat. Leave to marinate
- Now cucumber salad. Cut the cucumbers into half rings, add salt, sugar, garlic and pepper. Season with vegetable oil. Stir and refrigerate
- Finely chop the cabbage
- Cut the tomato into small cubes
- Grate the radishes on a small grater
- Place all vegetables in separate containers and lightly salt them. Put it in the refrigerator
- Now it's egg pancakes. Break two eggs, salt them and beat them with a fork. Add two tbsp. spoons of water and stir until the mixture is homogeneous. Fry like a pancake in a frying pan with oil. How to fry, wrap it in a roll and cut into narrow strips. It's like noodles
- Now it's meat. Fry it in a frying pan with oil. Top with chili pepper (optional)
- Cook the noodles until done. Don't overcook it. Wash it later. Add vegetable oil to prevent sticking. Put it in the refrigerator
- Now let's move on to the soup itself. Place all the prepared ingredients in a (deep) plate, pour in the dressing and chop the greens
Kuksi in Korean is served only cool!

Kuksi is a cool dish. It’s absolutely difficult to call it soup, since it is not cooked in broth: instead, a special dressing is prepared, which is called kuksi-muri. The dish also includes egg pancakes, noodles, thinly sliced meat and vegetables.
Making kuksi cannot be called ordinary, but the result exceeds all expectations.

For kuksi, various ingredients are useful, the list of which is quite impressive.
For refueling, prepare:
- water - 2 l;
- salt and rice vinegar - 1 tbsp. l.;
- sugar - 2 tbsp. l.;
- soy sauce - 3 tbsp. l.;
- cucumber;
- tomato.
The quantity of goods is approximate, so everyone seasons kuksi-muri in their own way. You can add more salt, sugar, or skip the vinegar. The main thing is to like the end result.

To fill the soup, use:
- beef - 300 g;
- white cabbage - 200 g;
- cucumber;
- daikon (Chinese radish) and onion - 100 g each;
- eggs - 2 pcs.;
- narrow Chinese noodles (wheat) - 250 g;
- vegetable oil - 50 ml;
- soy sauce - 30 ml;
- garlic - 3 cloves.
Also, don’t forget the seasonings that play an important role in shaping the finished taste of the soup: prepare hot reddish pepper, coriander and sesame.
The kuksi recipe differs in that any vegetables are added to it: some housewives add eggplant, zucchini, sweet peppers and tomatoes. Therefore, you can diversify the {filling} of the soup at your own request.

The methods for making kuksi also differ: some fry the cabbage, while others put it raw. The same thing happens with cucumbers. Try both methods, and in the future choose which one you like better.
If you can’t find Chinese noodles, take regular ones, but give preference to narrower ones.
Kuksi is a low-calorie dish, but very filling. Therefore, it can be used by everyone who watches their figure.
How to make kuksi at home
When you have collected all the ingredients, start making. In order not to get confused in the wealth of products and create everything correctly, use the detailed step-by-step instructions.
Before the first step, taste the soy sauce. If it is very salty, do not add salt to products where you need to use this ingredient, otherwise you will ruin the dish.

- Step 1 - make the gas station.
Pour water into a suitable jug or pan. Add salt, sugar, soy sauce and vinegar. Stir, try to taste - you should get sweet and sour water with a pleasant aftertaste.

Cut the cucumber and tomato into thin slices and add to the resulting water. Stir and refrigerate for at least two hours.
- Step 2: Tackle the meat.
Cut the beef into thin slices and chop the onion into half rings. Salt and pepper the meat.
Pour oil into a deep frying pan and heat it up. Quickly fry the beef until golden brown. Fry the onion separately. Then mix the ingredients, add a little water and simmer the food for 30 minutes.
- Step 3 - Prepare the vegetables.
Finely chop the cabbage, add a pinch of salt and a teaspoon of soy sauce. Mash the vegetables with your hands and leave for 10 minutes.
Meanwhile, finely chop the cucumber and daikon. Add a teaspoon of soy sauce to them.
Mix the vegetables and fry in a frying pan for 3 minutes. Then let them cool.
- Step 4 - Make the egg pancakes.
Break the eggs into a bowl and add a little salt. Pour two tablespoons of ice water into them and mix well.
In a preheated frying pan, prepare a narrow pancake, frying it on both sides. When cool, cut into thin strips.

- Step 5: Cook the noodles.
Boil the noodles in salted water until tender. Follow the times indicated on the packaging.
- Step 6 - assemble the kuksi.
It's time to combine the ingredients. Place a little meat, vegetable salad, pancakes and noodles in a deep bowl. Pour the dressing over the mixture, add chopped garlic, sprinkle with toasted sesame seeds and coriander and serve.
Portions of ingredients depend on the size of the dish. Place about 2 tablespoons of each product into a 300 g bowl.
You can eat kuksi with chopsticks or a regular spoon. Place soy sauce, rice vinegar and seasonings on the table so that guests can adjust the taste of the finished dish themselves.
