How to cook herring under a fur coat roll

- mayonnaise - 70 ml;
- gelatin - 1.5 tbsp. l.;

How to roll a herring under a fur coat
- First, pour dry gelatin into a bowl and pour 70 ml of hot water, stir well and leave to swell. Let's cook vegetables in their uniforms - potatoes, carrots and beets.
- Peel the onion and finely chop it. Grind the lightly salted herring fillet into small pieces, selecting small bones if possible.

- Squeeze the juice from the beets.
- Place cling film on the work surface. Spread the beets on it in an even, narrow layer.
- Carefully place the potatoes on top.
- Next comes the carrots.
- Now let's lay out the chicken eggs. Remember that any subsequent layer must be smaller than the previous one.
- Place finely chopped herring and onion cubes on the edge of the top.
- Helping yourself with the edges of the cling film, roll the appetizer into a roll and wrap it tightly - you can wrap it better.

Boil hard-boiled eggs, cool in cool water and peel.

Herring roll under a fur coat, the recipe for which I now bring to your attention, does not differ in complexity. The set of goods is usual: beets, carrots, potatoes, herring, onions and mayonnaise. I cook without eggs, but if you wish, you can, of course, include a couple of them in the list of ingredients (the layer will go after the potato layer). The sequence of layers in a herring under a fur coat will be literally the same as in the classic, but in order to wrap the vegetables with the herring in a roll, you need to lay them out in the reverse order, in other words, beets first, then carrots and so on.
Before serving, herring under a fur coat must be steeped for 5-6 hours in the refrigerator. Therefore, production must begin well in advance of the event. Let's get started?
Ingredients
- lightly salted herring – 1 pc.
- medium size potatoes - 4 pcs.
- carrots – 2 pcs.
- small beets – 3-4 pcs.
- chicken eggs – 3 pcs. optional
- onions – 1/2 pcs.
- green onions or dill – 10 g
- mayonnaise – 150 g
- salt, sugar and 9% vinegar - for pickling onions
Manufacturing
It is better to boil all vegetables in advance so that they have time to cool well. I boiled the potatoes and carrots with their skins on, and the beets separately (so as not to lose the color, I added a cap of table vinegar to the water when cooking). Peeled the cooled vegetables and chopped them on a small grater - any ingredient into a separate bowl. I also finely chopped the feathers of green onions.
The herring was filleted, all the seeds were removed, and then cut into a large cube. I chopped small onions finely, scalded them with boiling water to remove the bitterness, and then marinated them with the addition of 1 tsp. sugar and 1 cap of vinegar 9%.
When all the ingredients are prepared, you can begin to form the roll. On the board I spread a piece of cling film approximately 40 cm long. I lightly squeezed the grated beets through cheesecloth (if this is not done, the salad will turn out to be too liquid and will be difficult to cut), and then laid it out in an even layer, using a tablespoon to shape it into a rectangle. I covered the layer of beets with another piece of cling film on top and smoothed it out with my hands. Then I removed the film. I advise you to repeat a similar function after each layer, then they will all turn out even. Also, any vegetable layer must be coated with mayonnaise and lightly salted so that the salad does not come out bland.
The next layer is carrot, a little thinner than the previous one. Please note that I laid out a layer of carrots around the perimeter, departing approximately 3 cm from the edge. I smeared it with a small amount of mayonnaise sauce and lightly tamped it through the film.
Sprinkled chopped herbs on top. There is no need to grease with mayonnaise.
Next I laid out the potatoes in an even layer. I generously coated it with mayonnaise, because this particular layer is the most difficult to soak. I spread the mayonnaise with a spoon, and then pressed the potato layer through the film and added a little salt.
I painstakingly squeezed the pickled onions out of the water and sprinkled them randomly on top of the potatoes. I laid out pieces of herring in an even strip in the center.
All that remains is to form the roll. To do this, I lifted one edge of the cling film, then the other, and carefully wrapped the fish and vegetables in such a way that the protruding layers of beets overlapped. I pressed the edges and again wrapped the entire roll in film. Place the resulting salad “Herring under a fur coat” on a plate, seam side down, and put it in the refrigerator for 5-6 hours to steep.
The royal fur coat is ready! Before serving, just remove the film, trim the ends of the roll and decorate to your own taste. Happy holidays for you!
