My favorite recipe is stewed zucchini with eggs. This is an ordinary, economical, but at the same time amazingly tasty dish. But there are aspects everywhere, and I would like to tell you how to properly stew zucchini so that they come out tender, juicy, do not burn and do not remain raw. Don't worry - there's nothing complicated here! And our step-by-step recipe will help you easily prepare stunning stewed zucchini with eggs at home.

Ingredients:

  • zucchini - 500-600 g;
  • onion - 250 gr;
  • eggs - 2 pieces;
  • salt - 1 level teaspoon (to taste);
  • ground pepper - to taste;
  • garlic - 2-3 cloves;
  • vegetable oil for frying - 50 ml.

  1. Finely chop the peeled onion. I also cooked using greenish feathers instead of onions - I liked it.
  2. Cut the zucchini into small cubes, 1 x 1 centimeter in size. If you are using a mature zucchini, it is best to remove the hard skin and large seeds inside. And pay attention: the time for producing such vegetables needs to be increased slightly.
  3. Heat vegetable oil in a frying pan. (For production, use refined vegetable oil - it does not taste bitter).
  4. Fry the onion over medium heat until light golden brown and add the zucchini. If you use greenish feathers, then throw them into the pan 5 minutes after the zucchini.
  5. Simmer, stirring occasionally and with the lid open, for about 20 minutes. The fire is average or slightly less than average. Then cover with a lid and cook for another 5 minutes. Thanks to this, the zucchini cooks very well and turns out soft and tasty.
  6. Finely chop the garlic and add it to the pan, add salt, pepper and mix. Let stand for about 1 more minute.
  7. Beat in 2 eggs and stir quickly so that they are well distributed throughout the mass.
  8. Once the eggs have curled, you can remove the frying pan from the stove.
    Step-by-step production in a slow cooker: first, we also fry the onion in the “Frying” or “Baking” mode. Without changing the mode, add the zucchini and fry for about 10 minutes, stirring to evaporate a little of the water from the liquid zucchini. Then cover with a lid and simmer for 15 minutes in the “Baking” mode, stirring occasionally so that the vegetables do not burn. Add garlic, salt, pepper, eggs, mix everything well. Cover with a lid and leave for another 5-7 minutes in the “Heating” mode so that the vegetables are steeped.

After 5 minutes, when the rings are browned, turn them over to the other side. Fry on it.

Then we break one egg into any circle.

Sprinkle washed and chopped dill and a mixture of peppers and salt on top.

Fry covered until the yolk becomes hard.

If you like a watery yolk, reduce the production time.

This particular recipe is a kind of simple but sweet country cuisine, they are even called “country-style zucchini.” It turns out to be a light but satisfying dish. Products:

1 young zucchini
Tomatoes - 1-3 pcs.

How to deliciously cook zucchini with eggs in a frying pan

1. Remove the skin from the zucchini and cut them into thinner circles.

2. Then roll them in flour.

3. And fry on both sides in vegetable oil.

4. Place on a plate for now, maybe on napkins to absorb excess oil.

5. Chop the tomatoes. You can also chop the onion at this step, but I do it without it.

6. Fry the tomatoes with a small amount of oil. Let them simmer until the excess water boils away. If you do it with onions, then it’s all together.


7. Add the prepared zucchini to the frying pan with the tomatoes, stir, simmer until tender under the lid ajar for a quarter of an hour or a little less, stirring from time to time. At this point you can add salt. When ready, smooth the surface with a spatula using a tapping motion.


8. Salt the eggs and stir with a fork.

9. Pour the eggs onto the top of the zucchini. To make it spread more evenly, I simply tilt the pan. Add chopped greens. Don't mix. Cover with a lid.


10. After 10 minutes, the egg layer will thicken and be ready. Open the lid to cool slightly before serving.

The most frisky, but not so tasty option:
1 Cut the zucchini into cubes.
Pour a little sunflower oil into the pan and simmer until half cooked, stirring from time to time. Simmer without a lid so that as much water as possible boils away. 2 Add tomatoes and onions, add salt and cook until done.
3 If desired, add ground crackers, they will add thickness and taste. Stir, level the surface, pour in the egg layer, sprinkle with herbs and bring to readiness under the lid.
