Rice can not only be served as a side dish for various dishes or in the form of pilaf. After all, there is a beautiful, ancient dish - porridge. But lately, almost everyone began to forget how to cook rice porridge, both sweet milk porridge or water-based porridge as a breakfast, and regular porridge with meat or mushrooms. I'll have to remind you.
Selection and preparation of rice
The taste and properties of porridge depend almost entirely on the properties of its main ingredient - rice. In principle, no matter what kind of cereal is suitable for this, incl. You can choose from your own preferences. But experienced cooks recommend using short-grain rice. If you want to be guaranteed to get crumbly porridge, then you should opt for long-grain varieties.
Before you start making porridge, the rice must be cooked. Previously, when cereals were sold by weight from canvas bags, it made sense to sort them out, removing bad grains and debris. You can skip this step for now. Packaged rice is usually fairly untainted.
But you shouldn’t abuse the grain by washing it. This must be done in cool water and repeat the function 5-7 times, i.e. until the water remains clear after rinsing. If you have time, you can soak the rice again in cool water for 20-30 minutes. This procedure is optional, but it will not be unnecessary.
How to cook rice porridge, proportions of cereal and water
Correct selection of the amount of water when cooking rice porridge is no less important than preparing the rice. Depending on whether there is more or less of it, the result will be different.
For 1 cup of rice you need to take:
- for crumbly porridge – 2-2.5 glasses of water;
- for viscous porridge – 4 glasses of water;
- for watery porridge – 5-6 glasses of water.
These ratios obviously apply not only to glasses. You can measure using any containers, or you can use scales, especially since approximately 200 g of rice fits in a 200 ml glass.

For this amount of water, 1 glass of rice cereal will be enough. As soon as the water boils, pour the prepared cereal into a saucepan, stir and add butter to taste (can be butter, or can be vegetable). After boiling again, reduce the heat and cook the porridge for half an hour. From time to time the contents of the saucepan need to be stirred. When 30 minutes are up, turn off the gas, cover the saucepan with a lid and let the finished dish brew. This will take another 30 minutes.

Place the cooked rice in a colander and wash. At the same time, boil milk (4 cups) in a saucepan, transfer half-cooked rice into it and cook for 20 minutes over low heat.
