Beetroot caviar is a lean, dietary and very healthy dish. This vegetable caviar can be prepared at any time of the year, but in winter the body simply needs it. I try to cook this necessary vegetable more often. Well, beet caviar cooked in a slow cooker comes out especially tasty and tender.
Ingredients:
- beets – 2-3 pcs.
- carrots – 1-2 pcs.
- onions – 2-3 pcs.
- tomato paste – 1 tbsp.
- vegetable oil.
- salt, spices to taste.
- fresh dill and garlic - optional.
How to cook beet caviar in a slow cooker:
Prepare all the vegetables, wash and peel them.
Heat the multicooker bowl with vegetable oil on the “frying” or “baking” mode. Finely chop the onion, place in a preheated multicooker bowl and fry until transparent.
Grate the carrots on a medium grater, add to the onion, stir and continue cooking.
Grate the beets on a large or medium grater and add to the onions and carrots. Mix.
Then salt the dish, add spices (dark pepper, herbs de Provence, fresh dill, garlic) and tomato paste. If you find beets that are not sweet enough, you can add a little sugar to the caviar to taste. Mix.
Next, close the lid, set the “stew” mode and cook the dish in the slow cooker for another 30 minutes.

Using a ripe and juicy root vegetable, you can prepare caviar in a matter of minutes. For this you will need:
- beets – 450 g, onions – 35–45 g;
- tomato sauce – 45–50 g, pepper optional – 2–3 g;
- vegetable oil – 3 tbsp. l., salt – 4–6 g, sugar – 1/2 tbsp.
The development of the production of beet caviar provides for the following steps:
- Vegetables are peeled and washed. The onion is finely chopped and fried in a frying pan until golden brown. The beets are grated and fried in another frying pan.
- The prepared ingredients are combined in one frying pan, covered with a lid and kept at the lowest heat for 10–15 minutes.
- Add tomato sauce, sugar, salt, pepper. Everything is thoroughly mixed and heated for 1-2 minutes.
The dish can be served either hot or cool. It is completely acceptable to sprinkle with finely chopped onion or parsley.
Beet caviar with carrots
By combining two root vegetables in one snack, you can get not only a vitamin product, but also enrich your taste perception. The following products will be required:
- beets – 550–600 g, carrots – 260 g;
- turnip onion – 180–220 g, tomatoes – 220–250 g;
- garlic – 3–4 cloves, hot pepper – 2 pcs.;
- vegetable oil – 120 ml, vinegar – 50 ml, salt – 3–5 g;
- sugar – 10–15 g, coriander – 2–3 g, bay leaf – 1–2 pcs.
The production path is as follows:
- Peel the root vegetables, rinse and grate. Grind tomatoes, garlic and hot peppers using a blender or meat grinder.
- Pour oil into a deep, thick-walled saucepan or cauldron, add onions and carrots. Fry. Add the tomato-pepper mixture and beets, stir.
- Add sugar, spices, salt and vinegar. Stir and simmer for 15–20 minutes. It is not necessary to close the lid.
- When the moisture has evaporated and the vegetables are almost soft, add grated garlic and continue heating for another 2-3 minutes. Grind the mixture with an immersion blender.
If you reduce the proportions of the recipe, then you can simply cook beet caviar in a frying pan. But you should see that this product will not be fried.
With pickled or pickled cucumbers
The fascinating taste of the snack will amuse and amaze gourmets. To make it, simply boil 2-3 beets using the usual method until tender. Products that will come in handy:
- pickled or pickled cucumbers – 3–4 pcs.;
- onion – 1 pc., salt – ½ tsp., sugar – 1–1.5 tsp.;
- citric acid (vinegar) – 1 g, vegetable oil – 5–6 g.

- You can place the appetizer on bread or toast. Parsley, dill or sesame seeds are used as design.

If you have at your disposal not only graters, but also a food processor, then with its help you can prepare the dish very quickly. The following components will be required:
- beets – 2–3 pcs., onions – 2–3 pcs.;
- garlic cloves – 2–3 pcs.;
- vegetable oil – 40–50 ml;
- salt – 2–3 g, vinegar – 5–8 g, sugar – 3–4 g;
- spices - to personal taste.
Stages of making a dish:
- Beets and onions should be chopped using a grater or food processor. Pour vegetable oil into a heated frying pan.
- Add all ingredients except garlic. Simmer covered for 15–20 minutes. 3-4 minutes before the end, add garlic, crushed using any method.
- For spiciness, use pepper, coriander or cardamom. Spices added to taste will diversify the serving.

How to cook beet caviar in a slow cooker:
Pour three glasses of water into the multicooker bowl and place the container for steaming. We wash the beets and place them in a container. Turn on the “steaming” mode for 30 minutes. After half an hour, the beets should be ready. We take it out and put it in cool water, so it will simply peel off the skin.
Cut the onions into cubes, chop the garlic, and grate the carrots on a large grater. Pour sunflower oil into the multicooker and fry the vegetables for 10 minutes.
Add salt, sweet sand, spices, tomato paste and grated beets. Continue frying for another 30 minutes. I didn’t add any liquid, but if you have a slow cooker stronger than a Panasonic, then it’s better to cook in the “stew” mode so that the beets don’t burn.
Grind with an immersion blender.

Recipe for “Beet caviar in a slow cooker”:
I cooked in the VITEK VT-4215 BW multicooker.
I had 3 beets, I forgot to weigh them.
I like to bring the beets to half-cooking earlier; later they grate more easily on a medium grater and the caviar cooks faster. I wrapped each one in foil and put it in the multicooker bowl and turned on the “Baking” mode for 45 minutes, you can steam it for 30 minutes. Let it cool a little later.
Pour vegetable oil into the multicooker bowl and add chopped onion and garlic. Fry on the “Saute” setting for approximately 10 minutes.
Pour in tomato juice, add sugar, salt, cumin and cook for another 5 minutes on the “Roasting” mode.
Grate the beets on a medium grater and add to the multicooker bowl, stir.
I cooked on the “Jam” mode for 1 hour, you can cook on the “Stew” mode for 40 minutes.
