Vegetable khorovats

Khorovats is not only an Armenian kebab, but also a dish of baked vegetables. Vegetable khorovats is a healthy dietary dish because it is prepared without adding oil and without frying the ingredients.

Products
Eggplants – 3 pcs.
Reddish bell pepper – 1 pc.
Yellowish bell pepper – 1 pc.
Tomatoes (cream) – 3 pcs.
Onions – 2 pcs.
Green cilantro – 50 g
Fresh hot pepper – 1 pc.
Salt – 20 g
Reddish hot pepper - to taste

To prepare vegetable khorovats, we prepare the necessary ingredients.

How to cook khorovats from eggplants, peppers and tomatoes:

Wash the vegetables under running water.

Place the eggplants and peppers on a baking grid and place them in the oven. Eggplants should be lightly pricked with a fork so that the skin does not burst and the eggplant pulp does not scatter throughout the oven.

While the vegetables are baking, rinse the cilantro thoroughly under running water.

Place the greens on a napkin to dry.

Check the readiness of the vegetables with a fork. When they are sufficiently baked, remove them from the oven and cool.

Place tomatoes and onions on a baking grid. We bake the onion in the peel.

Let's do the eggplants and peppers. Carefully remove the skin from the vegetables, but do not remove the tail from the eggplant - it is comfortable to hold it by the dry tail and remove the skin.

We do the same with pepper.

Cut the eggplant lengthwise into thin strips and later cut these strips into small pieces of approximately 5-6 cm.

Remove the seeds from the pepper and cut it into squares of approximately 3-4 cm.

Place the peppers and eggplants in a mixing bowl.

By this time the tomatoes and onions are ready. We take them out of the oven.

Peel the skins of the vegetables.

Grind the tomato until it becomes a homogeneous mass.

Finely chop the onion.

Place all the vegetables in a bowl, and finely chop the cilantro on a board.

If desired, you can add thinly sliced ​​hot pepper.

Mix all the ingredients in a bowl, add salt and hot reddish pepper.

With the beginning of spring, more people go out into nature and enjoy the taste of meat cooked over a fire. A salad of baked vegetables is great to serve with meat.

Khorovats - translated from Armenian means shish kebab, in other words, vegetables are baked over the fire in the same way as meat. Now I will tell you how to prepare such a salad at home, but so that it has a smoky smell. This method is suitable only for owners of gas stoves; this trick will not work with an electronic stove. It turns out exactly the same khorovats, as if you had cooked it over a fire. If anyone is confused by this method, then the vegetables can simply be baked in the oven, but then the smoky smell will not amuse you.

We will need the following products: It is best to take vegetables in equal quantities, but it is not forbidden to violate the proportions.

Line the gas stove with foil, making holes for the burners. Place a mesh from the oven on top. Turn on the burners to medium heat and add the vegetables. I cooked on 2 burners, but you can do it on 4. Just have time to twist the vegetables with tongs. They should char and become soft. It wouldn’t hurt to open the window and turn on the hood, although there is absolutely no burning or soot.

Place the roasted vegetables in a bag so that they steam and the skin just peels off.

Then peel the dark skins from the vegetables.

Chop everything on a board; the vegetables are very soft.

Place everything in a deep bowl.

Add a small chopped onion and a crushed clove of garlic. I don’t like to overwhelm the taste of the salad with garlic, but you can add more of it. Season with salt, pepper, and lightly drizzle with oil. It would be great to add greens - cilantro and parsley, but I didn’t have any, so I added dry celery and basil.

Mix everything until combined. If the tomatoes are tasteless, you can add a little lemon juice. This salad can be enjoyed at any time and with any side dish; you can simply spread it on a fresh flatbread.

Vegetable khorovats

Vegetable Khorovats For those who don’t understand, Khorovats is what the Armenians call shish kebab. So, this salad is usually prepared for barbecue, which is why it got the same name. The dish is very tasty, it can be prepared both at home and outdoors... of course, when it’s smoky, it’s a completely different matter!

Ingredients for “Vegetable Khorovats”:

Khorovats from vegetables: a recipe very close to the original

Absolutely “khorovats” is an Armenian kebab. But the name khorovats also stuck to the dish of baked vegetables, only with the clarification “vegetable”. I had the great happiness of living for two years next to Holy Etchmiadzin. I knew the customs of Western Armenians from my youth (I grew up in an Armenian village in Sochi). As a child, I even spoke a little in the Hamshen dialect of Western Armenian.

And, if the language of Eastern Armenians was very different from what I knew in childhood, then the tradition of baking vegetables in the summer and autumn on an iron sheet under which a fire was lit is similar everywhere. From Yerevan to my native Sobolevka, which is hidden among the hillocks in fact in the center of the once quiet provincial, and now ultra-urbanized Sochi, Armenians prepare vegetable khorovats.

In Etchmiadzin, I more than once saw the courtyards of high-rise buildings, among which there were a couple of fireplaces. With them, anyone could bake as many vegetables as they wanted for themselves, their own family and guests. A regular metal sheet or a piece of corrugated sheeting was installed on several bricks or stones and voila! Bake as much as you like! At the same time, vegetables were baked this way, and not on a grill over coals on a grid or skewers.

It was especially interesting to watch how entire families or households prepared khorovats from eggplants and other vegetables for the winter.

How many tales, stories, tales and fables can be heard during such a long-lasting and peaceful activity. After all, this is literally how they prepared it a huge number of years ago. No kitchen devices such as electric grills, ovens and the rest could replace a simple device made from a piece of iron, stones and live fire.

Vicious, I roast vegetables in a thick metal pan from time to time. My husband truly cooks the famous Armenian vegetable khorovats.

And now, in fact, a recipe for an unusually tasty dish with my liberties and some small (in my moderate opinion) deviations from the original.

Armenian khorovats made from vegetables

Ingredients

  • 3-4 eggplants.
  • 3-4 bell peppers.
  • 3-4 fleshy sweet tomatoes.
  • 2-3 cloves of garlic (depend on your own taste, more is possible).
  • 1 small zucchini or zucchini (optional, not included in the unique recipe).
  • Olive oil to taste.
  • Green basil (preferably purple, real “reyhan”), cilantro.
  • Fresh hot pepper.
  • Salt.

How to cook

  1. Wash the eggplants, remove the stems, cut lengthwise into fairly thick pieces (5-6 mm).
  2. Also cut the zucchini if ​​you use them (I already said that they are not included in the authentic recipe).
  3. Wash the peppers and cut them in half lengthwise.
  4. If you bake vegetables in metal frying pans or a grill pan, then place the vegetables on a previously heated surface.
  5. Bake on both sides until soft. At the same time, the pepper must be pressed to the surface so that it is baked as moderately as possible.
  6. This is what baked eggplants look like.
  7. Baked pepper.
  8. Baked zucchini.
  9. If you bake vegetables in the oven or on an iron sheet over a fire, or rather, coals, then you can bake a larger quantity at a time, like I did here. On such a sheet, vegetables are baked as if on a grill.
  10. You need to remove the hard skin from the eggplants with a knife.
  11. Wash the tomatoes and pour boiling water over them.
  12. Cool here in cool water.
  13. Remove the skin.
  14. Grind the tomatoes in a blender.
  15. You will get a puree like this.
  16. Peel the garlic, chop coarsely, lightly fry in olive oil until transparent.
  17. Place tomato puree in a frying pan, boil everything together for 2 minutes, turn off the heat.
  18. Grind eggplants, peppers and zucchini in a blender.
  19. The pieces of vegetables should be large enough; chop without fanaticism - the vegetables should not turn into a homogeneous mass.
  20. Place the chopped vegetables in the frying pan with the tomatoes, stir and add salt to taste.
  21. Chop the hot pepper.
  22. Chop the herbs (I used greenish basil, but purple is better, as well as cilantro).
  23. Add greens to the vegetable khorovats and mix again.
  24. And now, whether it’s served with pork kebab, or served with lamb shoulder, or just served with the freshest ciabatta, it will be surprisingly delicious!

My comments

  • The vegetables from which you will create khorovats can be baked using any method that is convenient for you.
  • If you bake the eggplants completely, then after they are ready, you need to place them in a plastic bag for a few minutes - after that you can simply remove the burnt skin from them.
  • Tomatoes are also baked in a unique recipe - try it, maybe you’ll like it better this way.

Grilled vegetables

I present to you the most authentic version of production from my good friend Verochka Ramazova. I give her my word.

Ingredients

  • 10 eggplants.
  • 7 bell peppers.
  • 6 tomatoes.
  • 2 heads of onions.
  • 1 bunch of cilantro.
  • Garlic to taste.
  • A piece of butter.
  • Salt.

Manufacturing development

  1. Bake vegetables on the grill, all of medium size, peel them by dipping your hands in water.
  2. Chop, mix, add thinly sliced ​​onion in half rings, finely chopped cilantro, garlic, a piece of butter, salt, pepper and add all this very quickly so that the vegetables do not cool down.
  3. After this, close the lid and throw in the vegetables to “get to know each other” for a couple of minutes. Now enjoy the most delicious dish in the world. Almost all of you probably prepare Armenian khorovats from grilled vegetables when you find yourself in nature.
