How to cook pork liver pancakes so they are soft
Choose liver carefully, because the freshest ingredients are one of the main components of a tasty dish. A smooth, shiny and even surface, brown color and the absence of a nasty aroma indicate good quality of the product.
Ingredients:
- Liver – 0.5 kg.
- Onions – 2 pcs.
- Semolina – 100 gr.
- Egg – 1 pc.
- Greenery
- Garlic – 1 clove
- Mayonnaise – 50 gr.
- Dark ground pepper
- Salt
- Sunflower oil
Step 1. The liver needs to be washed and cooked. To do this, make a small cut on the surface and remove the top film. Cut the product into several pieces and remove all remaining tendons and connecting vessels. Divide into pieces so that it is convenient to pass through a meat grinder.
If you don’t have a meat grinder, then an ordinary blender can come to the rescue. There is another option: freeze the pieces of offal on a board, and then grate them.
Step.2 Peel the onion and cut into several pieces. Pass the liver and onions through a meat grinder.
Step 3. Add one egg, semolina, salt and dark ground pepper to the resulting mass. Stir the minced meat thoroughly so that the ingredients and spices are moderately distributed. Let the minced meat sit for 10-15 minutes.
If you use flour instead of semolina, you can fry it right away. Liverworts on semolina are the most tender.
Step 4. Heat the oil in a frying pan, add the minced meat using a tablespoon. When one side is browned, turn the pancakes over and fry until done.
The heat should be medium, because the liver fries quite quickly, and if the heat is strong, it may burn
Step 5. Prepare the sauce for our dish. Grate the garlic on a small grater, or put it through a garlic press, and chop the greens. Mix everything with mayonnaise.
Step 6. Serve the liver pancakes on a plate with sauce. They are not bad as an independent dish, but at the same time they will perfectly complement any side dish, for example: mashed potatoes, rice or buckwheat.
Pork liver pancakes with carrots and onions
Especially juicy pancakes are obtained specifically according to this recipe. And carrots somewhat change the taste of the liver, making it more tender. And if I like the 1st recipe more, the children liked the 2nd one more.
Ingredients:
- Liver – 800 gr
- Carrots – 700 gr
- Onion - 300 gr
- Semolina - 0.5 cups
- Salt - 1 tsp
- Ground pepper - 1 tsp
- Sour cream – 120 gr
Step 1. Prepare the liver, peel the onions and carrots. Grind the ingredients through a meat grinder.
Step 2. Add two eggs to the resulting mass and stir well
Step 3. Add semolina, salt and pepper to the minced meat. Mix again and let it brew for 30 minutes. At this step you can also add your favorite seasoning.
Step 4. Form small cakes with your hands. Place in a frying pan heated with vegetable oil. Fry on both sides for 2 minutes.
Step 5. Place the resulting pancakes in a pan and fill with sour cream. Simmer over low heat with the lid closed for 20 minutes.
If desired, you can dilute the sour cream with milk to the size of a glass.
Step 6. The finished pancakes are perfectly mixed with the freshest vegetables.
Pork liver pancakes with rice
According to this recipe, the liverworts are not only tender and soft. The rice makes them plump and filling.
Ingredients:
- Pork liver – 700 gr
- Rice - about 5 cups
- Onion - 1 pc.
- Egg - 1 piece
- Flour - 1.5 tbsp
- Salt, pepper to taste
- Vegetable oil for frying
Step 1. Wash the liver, remove all films. Pass through a meat grinder along with onions.
Step 2. Place half a glass of rice in about 5 ml of water and bring to a boil. After that, cook for 6 minutes, then discard in a colander.
Step 3. Combine the liver with onions and rice in one bowl. Add raw egg, spices, flour. Mix everything well.
Step 4. Place the minced meat in a heated frying pan with vegetable oil using a tablespoon. Fry the pancakes on both sides for 2-2.5 minutes.
Please note that the minced meat should not spill too much. If this happens, add more flour.
To make the pancakes the most fluffy, fry them under a closed lid.
Step 5. After frying, place the liverworts on a paper towel, it will absorb excess fat. Serve the pancakes hot with sour cream and garlic sauce.
The indisputable advantage of these dishes is that such pancakes can also be included in the diet. After all, the calorie content of pork liver pancakes is only 170-180 kcal per 100 grams.
To please the really picky people, the offal can be soaked in milk or salted water. This method will help soften its taste. It is necessary to soak for at least 2 hours. Then you can avoid the bitter taste after heat treatment.

It cooks even faster and costs less. And a little bitterness is simply removed with a glass of milk. You just need to do this in advance.
Step 2:
And so, we take pork liver. We wash it well; if there are veins and vessels, we try to cut them out. Cut the liver into pieces and pour a glass of milk. Leave the liver to soak in milk for at least half an hour, preferably an hour or two.

Let's prepare all the ingredients needed to make liver pancakes: pork liver soaked in milk, one huge onion, spices (I used a mixture of peppers), a little salt, soda, a tablespoon of sour cream, semolina and flour.
