A detailed recipe for an open cherry pie, which we will prepare without yeast. The basis of this delicious homemade pastry for us will be tender and crumbly shortbread dough, and the amount of juicy and thick berry inside will pleasantly surprise you. Shortcrust pastry for the pie can be created either by hand or using a food processor. Both fresh and frozen cherries are suitable for the inside - I indicate the unblemished weight without the pit. Corn starch, of course, can be replaced with potato starch, but in the first case the inside will turn out transparent and without the corresponding starchy taste.

To make cherry pie, we need the following ingredients: cherries, sweet sand and sweet powder, wheat flour, butter, corn starch and egg yolks.
I prepare the cherry pie shortcrust pastry in a food processor (iron blade attachment). Read this detailed recipe to learn how to create this without electrical help. So, first, about an hour before making shortcrust pastry, we need to take the butter (110 grams) out of the refrigerator and put it on the kitchen table so that it becomes very soft. It happens that you don’t have enough time or you didn’t plan to prepare the shortbread dough, then you can keep it in the microwave for a little while on the Defrost mode - about 20 seconds. Add 100 grams of sweet powder and two egg yolks to the soft butter.
Punch everything until smooth. You should end up with a smooth and warm creamy mass. You will also have the same yellowish color of the dough if you use homemade chicken eggs.
Now, be sure to sift the wheat flour (250 grams) and add it to the fat base.
Using pulsating movements, we ensure that the shortbread dough resembles large buttery crumbs. There is no need to achieve homogeneity!
Take a baking dish (you can use not only a round one - mine is 24 centimeters in diameter, but also a square or rectangular one). Transfer the shortbread dough.
Make the bottom and sides, carefully spreading the dough with your hands.
The next day, prick the dough a little with a fork so that it does not swell or become deformed during the baking process. Now you need to put a weight on top so that the shortbread dough does not rise during baking. For this I use lentils, but you can use any legumes or special balls. Place baking paper on the dough, lay beans on top evenly and place in a hot oven for 15 minutes at 180 degrees.
While the cherry pie base is baking, prepare the filling. Wash and dry the cherries.
We remove the seeds using any convenient method.
Transfer the berries to a saucepan - there should be a total of 700 grams of cherries (weight without pits). If you use frozen berries, simply leave them to thaw directly in the pan.
Add 120 grams of sweet sand and 45 grams of corn starch to the cherries. If you use potato, 30-32 grams will be enough.
Mix berries with sugar and starch.
Place over medium heat and, stirring constantly, simmer until the cherry juice thickens. Once the cherries are in the jelly, remove the future pie filling from the heat.
During this period of time, the base for our cherry pie set. Remove the weight and put the pan in the oven for another 15 minutes so that the bottom is also baked.
This is what the shortcrust pastry looks like after baking - it is already quite ready. We do not turn off the oven, maintaining the temperature at 180 degrees.
Carefully transfer the still hot cherry filling into the pan with shortbread dough and level it with a spoon or spatula.
Bake in a hot oven for about 10 more minutes at 180 degrees. I remember that I cook in a gas oven on the lower mode without convection.
Shortbread cherry pie is not bad even when hot, but it’s better to let it cool until warm. This is what the cut of the pie looks like 15 minutes after the oven - the inside is warm, it pours slowly and lazily. Unusually delicious with a scoop of homemade Ice Cream!
And then I cut the cake after it had cooled completely and even let it sit in the refrigerator for about an hour. A perfect cut comes out, while the shortbread dough remains crumbly, tender and sweet, and the thick cherry inside pleasantly sets off its sweetness with the corresponding sourness.

I really like ordinary cherry pies, to which an entire holiday is dedicated abroad under the moderate title “Cherry Pie Day.” In any home, cherry pastries are prepared on this day. Housewives treat their family, relatives, all neighbors, friends and acquaintances to the most delicious desserts from this beautiful berry given to us. Everyone tries to please according to the full program of the holiday. In one thing I only want to feel sorry for the poor Yankees. It's a winter holiday. This means that they only consume frozen berries.
What’s interesting is that any country can create its own classic baked goods on this topic, and every second housewife has her own favorite cherry pie recipe. Not long ago I prepared a very tasty and ordinary cherry pie from biscuit dough, see the recipe at the link. But South American cuisine has always been famous for its pies. And the famous South American cherry pie is a must-try! Cherry pie is being prepared from shortcrust pastry. In fact, this is an open-faced cherry pie, with a fragrant, sweet and sour cherry inside underneath the pastry basket. The mixture resembles cherry jam or jelly, although shortbread pie is made from fresh or frozen cherries. Well, are you interested? Let's get started!
Ingredients:
- 250 g flour;
- 150 g butter;
- 100 g sour cream;
- 1 tsp baking powder for dough;
- 500 g cherries with pits;
- 3 tbsp. starch (preferably corn);
- 1 tbsp. Sahara;
- 5-6 drops of vanilla extract or 1 tbsp. vanilla sugar.
Recipe for open pie with cherries made from shortcrust pastry
1. Pour flour into a deep bowl, be sure to sift it first to make it richer in oxygen. Sift through a sieve and baking powder. Next we add soft butter to the flour, which we took out of the refrigerator in advance and kept at room temperature.
2. Using a fork, rub the butter with flour until crumbs form.
3. Next, add sour cream to the bowl. We choose a lactic acid product for cherry shortbread pie with a fat content of 15%.
4. Now, using the same fork, grind the ingredients in the bowl again.
5. Next, all the product in the bowl needs to be collected into one, in other words, knead the dough. Knead it with your hands. Next, wrap the finished dough in cling film and put it in the refrigerator for an hour.
6. Next, let's deal with the berries. We sort the cherries, removing stems and spoiled fruits. Then wash it and let it dry. We remove the bone using a pin or a special device. Sprinkle the finished berries with starch and sugar according to the recipe.
7. Mix cherries with sugar and starch well. Leave for almost a couple of minutes so that the starch absorbs the juice released from the berries.
8. Next, take the dough out of the refrigerator and divide it into two uneven parts. We will use the larger part for the cake, and the smallest part for its decoration. We put the smallest part back into the refrigerator.
9. Place the part that we left for the crust on a flat surface and quickly roll it into a layer so that it does not separate.
10. The dough comes out soft, and so as not to tear it, we wrap it around a rolling pin.
11. Transfer the dough layer on a rolling pin into a mold with low sides. We do not grease the mold, because the dough contains butter, which will allow the cake to come out freely.
12. Now put the cherries on the dough. Sugar and starch have done their job, and the berry actually floats in thick syrup, which will turn into jelly during the manufacturing process.
13. Next, take out the smallest piece of dough from the refrigerator and roll it out on the work surface into a layer. Using a pizza cutter, cut long shaped strips.
14. Now you need to create a pie basket from the cut out strips. Place 5 strips along the baking sheet.
15. We begin to create the basket from the middle. The first, third and fifth strips must be wrapped, and on the remaining two we place one strip across.
16. Next, the three strips that we previously folded need to be unfolded. As a result, we wove one strip.
17. Next you need to wrap the second and fourth strips. On the remaining three strips we place a second strip across.
18. Using the same principle, we lay out the third transverse strip. Half of the basket is done.
19. Lay out the second half of the pie literally the same way. Here is the whole basket in its place. Carefully cut off all the hanging tails of the strips. You can, of course, decorate the cake at your own discretion. Use a special device to cut out the mesh and lay it out, you can cut the leaves. But usually South American cherry pie is made this way.
20. Now you need to create a border for the pie from the stripes. When placing it in the mold, do not stretch it too much. You can combine a border of two stripes. During the baking process, it does not have to move into the pan.
21. Now we put the shortbread pie with cherries in a previously preheated oven to 200°C. We will bake it for about 30 minutes. It is very important to watch the temperature. If it is lower, then the mixture in the pie will not boil, then you may not like the final result, because it will taste like starch. We place the mold in the oven at the bottom. To prevent the top of the cake from burning during baking, you can place an empty baking sheet on top of the pan.
