Pies are one of the most popular types of homemade baked goods. And now I would like to share my recipe for baked pies made from yeast dough with potato insides. They are usually prepared in the oven, and they turn out very tender and tasty.

It doesn't matter what the inside is, but potato inside is one of my family's favorites. Usually I add only the freshest chopped herbs to it, but if you wish, you can add previously fried mushrooms and onions, and fried minced meat - whichever suits your taste.

Ingredients

For the test:

  • 4 cups flour
  • 1 tbsp. spoon or 1 sachet (11 g) dry instant yeast
  • 1 tbsp. spoon of sugar
  • 1 teaspoon salt
  • 1 egg in the dough
  • 1.5 cups warm milk or water
  • 2-3 tbsp. spoons of vegetable oil

For the inside:

  • 1 kg potatoes
  • 100 g butter
  • salt to taste
  • greens to taste

To grease the pies:

  • 1 testicle
  • 1 tbsp. spoon of milk for greasing

How to cook potato pies in the oven

Sift the flour. Then pour dry yeast, salt and sugar into it.

Mix. Add the egg.

Pour in warm milk or water. Mix.

To prevent the dough from sticking to your hands, add vegetable oil.

Knead the dough and form it into a ball. Cover the bowl with the dough with cling film or cover with a towel and put it in a warm, draft-free space.

While the dough is rising, you can work on the insides.

Peel the potatoes and boil in salted water until tender.

Drain the water. Mash the potatoes. Add butter and herbs. Stir, cool.

After an hour and a half, the size of the dough should increase 2-3 times. It is necessary to knead it and put it again in a warm space to rise.

After about an hour the dough will rise again.

Place the finished dough on a floured table and knead a little.

Later you can start cutting. Roll the dough into a rope and cut into bars of similar size.

Roll the bars into balls. Roll out any ball into a flat cake approximately 1 cm wide. Place the filling in the center of the flat cake.

Connect the edges of the cake first in the center, pinch.

Then pinch on the sides. Form a pie.

Place the pies on a baking sheet greased with vegetable oil. Leave to proof for 15-20 minutes.

In a bowl, mix the egg and 1 tbsp. spoon of milk, beat in well with a fork. Grease the top of the pies with this consistency after proofing.

Then bake in a preheated oven at 200 degrees for 20 minutes until golden brown.

  • Wheat flour - 450-500 g;
  • Chicken eggs for lubricating products – 1 pc.
  • For the inside:
  • Potatoes - 1.2 kg;
  • Onions - 250 g;
  • Sunflower oil - 30 g;
  • Salt - to taste;
  • Ground dark pepper - to taste.

How to cook baked pies with potatoes in the oven, yeast dough

First you need to prepare the potatoes for the inside, because... it takes a lot of time. Peel and wash the tubers, then fill them with cool water and put them on fire. When the liquid boils, add salt and continue cooking until the potatoes are fully cooked.

While the potatoes are cooking, start making the yeast dough. You can replace the water with milk, then the baked pies will be even tastier. Heat the liquid to 35-40°C and pour it into a deep bowl suitable for kneading dough. Add sugar and stir. The snow-white crystals should completely dissolve. Add dry yeast and stir again. Cover the bowl with a clean towel and place in a warm place for 10-15 minutes.

After the designated time, take the bowl, remove the towel and you will see that a foamy, yeast cap has formed on the surface. Sift the flour and add it in small portions to the watery part. Stir the mixture with a spoon until it becomes very thick.

Sprinkle your work surface (countertop or large cutting board) with flour. Pour out the dough and continue kneading it with your hands. Perhaps a little more or less flour will be useful, it depends on its properties. The finished dough should be soft and not stick to your hands. Place the dough in a clean, dry, deep container and cover with a thick towel. Place in a warm space for one hour.

While the dough is rising, it is necessary to finish making the inside. Peel the onion, rinse and cut into small cubes. Pour vegetable oil into a frying pan and heat over medium heat. Place the onion there and fry, without lowering the flame, until light golden brown.

Drain the liquid from the finished potatoes into a separate bowl. Using a puree masher, grind the boiled tubers until smooth. Add fried onions, season with black pepper and taste. Add more salt as needed. If the mixture is very thick, dilute it with potato broth to the desired mixture. Cool the filling to room temperature.

To make it more convenient to work, divide the dough, which has risen 2-3 times, into 4 equal parts.

Take one part and roll it out with a rolling pin. It should not be very narrow, the recommended thickness is about 0.5 cm. Cut the layer into four parts: first along and then across. Place a portion of the inside on any piece of dough. Pinch the edges as you would when making dumplings. Then give the workpiece the shape of a pie.

Cover a baking sheet with parchment paper and lay out the pieces. Try to leave enough free space between the products, because... They will increase in size as they bake. Leave the pan in a warm place for 20-30 minutes to proof.

Break the egg into a small bowl and beat it well with a fork. Dipping a pastry brush or cotton pad into the resulting mixture, brush the top and edges of the product. Turn on the oven at 180°C and place a baking sheet with pies in it. Bake for 40-60 minutes. The time depends on the power of your equipment. The readiness of the pies is determined using a wood stick or toothpick. Pierce one product with it, pull it out and look: if there are no pieces of dough left, it means the baked goods are ready.

If you prefer baking without yeast, then pies made from kefir dough will be just a godsend for you. Such baked goods come out incredibly tasty, fragrant, tender and airy. Preparing this dough is very simple; you will not need any special culinary experience or a lot of time. Ruddy pies with potatoes in the oven will become one of your family’s favorite dishes.

Ingredients:

  • Dough:
  • Drink – 250 ml;
  • Wheat flour – 480-560 g;
  • Vegetable oil – 115 ml;
  • Salt, sugar - one pinch each;
  • Soda – 1/3 tsp;
  • Eggs for greasing pies – 1 pc.

Interior:

  • Potatoes – 1 kg;
  • Onion – 1 pc.;
  • Vegetable oil for frying;
  • Salt, pepper - to taste.
  1. Peel the potatoes, rinse, cover with cool water and place over medium heat. After boiling, add salt to your taste and cook until tender.
  2. The drink for the dough can be with any percentage of fat content. Heat the milk product to 30°C, it should be lukewarm.
  3. Take a deep bowl that is comfortable for kneading dough and pour the warm drink into it. Add salt, sugar and soda. Mix thoroughly until all the snow-white grains dissolve. If the drink used is not sour enough, then the soda must be quenched with vinegar or lemon juice.
  4. Pour in the vegetable oil and start adding the sifted flour. This must be done evenly by kneading the dough with a spoon. When it becomes quite thick, turn it out onto a floured surface. Continue kneading, bringing the dough to a suitable mixture: soft, viscous, and not sticky to your hands. The amount of flour may vary depending on its properties.
  5. Place the finished dough into a deep container, cover with a towel and place in a warm space for 40 minutes.
  6. Peel the onion, wash and finely chop. Fry in vegetable oil until beautifully golden brown. Drain the liquid from the potatoes into a separate bowl.
  7. Mash the boiled potatoes thoroughly with a potato masher, adding the water in which they were boiled as needed. The mixture of the insides should be like a puree: not very watery, and not too steep. Add fried onions to the potato mixture, add salt and pepper to taste as needed. Let the insides cool.
  8. Turn on the oven at 200°C until it warms up perfectly.
  9. Place the risen dough on a floured surface. Pinch off a small piece of it and roll into a ball. Roll out any bun with a rolling pin into a flat cake, about 0.5 cm wide. Place the potato filling in the center of the circle, pinch the edges and shape it into a pie.
  10. Place the pies on a baking sheet lined with parchment paper, leaving a small space between them. Brush each piece with beaten egg. Place the pan in a hot oven and bake for 30-40 minutes. Check the readiness of the pies with a toothpick.

I have loved potato pies since I was a teenager. I really adored the pies that my grandmother baked. Grandma always added dill to the fried pies, fresh or salted according to the season, and fried onions to the baked pies. I also decided to make a potato filling with fried onions.

To bake potato pies in the oven, you need to prepare all the ingredients according to the list. I used kefir for the dough.

Peel and boil the potatoes, add salt at the very end. Drain the potatoes and mash them with a potato masher.

Cut the onion into cubes and fry it in sunflower oil until golden brown.

Add the fried onions to the potatoes, also add paprika and mix. Let the insides cool.

Divide the finished dough into 15 pieces, each one – approximately 50-55 g.

Roll out the dough into a flat cake and place the potato filling in the center.

Pin the ends of the dough in the center and make pies according to the principle of dumplings. Pinch the dough well so that the pies do not open at the seam.

Cover a baking sheet with parchment and place the pies on it. You can lay it out like I did - with the seam up, or you can lay it out with the seam down if you are worried that the pies will open. Leave the pies to proof for 30 minutes, covering them with a towel. Then beat the egg with a fork and use a brush to brush the top of the pies.

Bake potato pies in an oven preheated to 200 degrees for 20 minutes. Place the finished pies on a wire rack, sprinkle with water from a spray bottle and cover with a towel.

Manufacturing process

Step 1: onions, potatoes and mushrooms.

  1. Peel and boil the potatoes, and then mash them.
  2. Finely chop the mushrooms and onions and fry in a frying pan in oil.
  3. Mix them with puree and let cool. Don't forget to add salt.

2nd step: flour, milk, yeast, salt, 2 eggs, butter, sugar.

  1. Add yeast, sugar and salt to warm milk.
  2. Add flour (450 g) in parts and start kneading the dough.
  3. Add the eggs and butter and knead the dough.
  4. Place the dough on a floured surface and knead until it becomes thick, but soft and elastic. Leave it for 1 hour.

3rd step: dough, inside, egg.

  1. Punch down the dough and divide it into medium pie pieces.
  2. Form them into a cake, spoon out the filling and seal the edges perfectly. Leave for 15 minutes.
  3. Place the pies on a baking sheet, brush them with beaten egg and bake for half an hour in the oven at 180°.

How to serve pies

Almost everyone prefers to coat potato pies with sour cream and only then eat them, so you can serve the freshest sour cream in a separate bowl. They also often eat pies simply instead of bread, for example with soup.

My dad also likes to put a piece of sausage on top. Although I still prefer baked pies with potatoes simply washed down with milk or tea, because this completely fills me up. You can create this too, or change your own drink to coffee, chicory, or whatever suits your taste.
