Children like this cake so much that mothers still cook it not only for children's parties, but also as a favorite dessert on weekends. Its unique appearance with lots of sour cream constantly creates a real appetite.

The proposed version of the Turtle cake is a traditional version of making it with cream made from rich village sour cream, which, if desired, can always be replaced with ordinary store-bought sour cream. But there is a small difference: store-bought sour cream is thinner, it pours better and has less consumption. With village sour cream, everything is completely opposite, but the cakes made from it always turn out more tender, softer and tastier.

Typically, a Turtle cake is formed in the shape of a slide or a turtle, decorated with grated chocolate on top or drizzled with chocolate glaze.

Required ingredients:

  • 4 testicles;
  • 130-150 g sugar (to taste);
  • 1 teaspoon of slaked soda or 1.5 teaspoons of baking powder;
  • a pinch of salt;
  • 2 g vanilla powder (optional);
  • 300 g flour.
  • 800 ml of village sour cream (600 ml of store-bought);
  • 130 – 150 g sugar (to taste);
  • 1 tbsp. spoon of cocoa powder.
  • 1/2 bar of bittersweet chocolate.

How to cook:

To make a Turtle cake, take: premium flour, sweet sand, baking powder or slaked soda, a pinch of salt, eggs, cocoa powder, dark chocolate and full-fat sour cream. Decide for yourself which sour cream to use for a cake: store-bought is thinner, pours better and has time to soak all the cakes. Country sour cream is much richer and does not flow; when you spread it on a flatbread, it will sit there, so it has a higher consumption (!). Naturally, a Turtle cake made with full-fat sour cream will always be tastier in terms of taste.

So, immediately turn on the oven to preheat to 180 degrees. Prepare a baking sheet and parchment paper, which is best coated with vegetable oil.

Break the eggs into a deep cup and add sugar. Beat the mixture with a mixer or whisk until foam appears on the surface and is homogeneous. There is no need to beat the eggs into a strong foam, because then slaked soda or baking powder is added to it. Next, add a pinch of salt and vanilla sugar to the dough. Whisk the mixture again until the reaction begins and the mixture becomes fluffy. Next, add the sifted flour into the dough in parts. Knead with a whisk a thick and homogeneous dough without lumps. The finished dough should be similar in thickness to pancake dough, and if you run a spoon over it, the groove will not close immediately, but evenly. Using a teaspoon, place the pieces at a small distance. Place the baking sheet in a preheated oven at 180 degrees, bake the cakes for 6 - 8 minutes, until a pleasant golden color appears. Pay attention to how the cakes “puff up” during baking; they grow in size, both in width and in height. If desired, you can lay out even smaller cakes, for example, take less than a full spoon. A Turtle cake made from small cakes will look more beautiful and neat. Bake other cakes this way. In the end, I ended up with two and a half baking sheets. Separate the cakes from the parchment, they just come off and cool. Prepare sour cream cream.

Place sour cream, sugar and cocoa powder in a large bowl. Stir the cream until the mixture is homogeneous, in other words, until the sugar crystals are one hundred percent dissolved. Then dip the cake in the cream, place it on a serving plate and continue to form a cake in the shape of a slide or a turtle. If you have cakes of different sizes, then place the largest ones on the bottom, and the smallest ones on the top. Don’t forget that the cream made from rustic sour cream will not flow and how you spread it on the flatbread will stay there. Sprinkle grated chocolate on top of the finished cake and put it in the refrigerator for several hours so that it is soaked in cream. If you don’t have bitter chocolate on hand, you can prepare chocolate glaze: pour 1 cup of sugar into a saucepan, add 4 tbsp. spoons of cocoa powder, 3 - 4 tbsp. spoons of milk and 50 g of butter. Break the eggs into a bowl, add sugar (150 g) and beat with a whisk until light foam.

Melt butter (100) and add to the egg mixture, stir again.

Add a couple of drops of vinegar to the soda and add it to the dough. Add sour cream (170 g), mix again, add flour and mix again.

Sprinkle the baking sheet with flour, pour the dough in the form of pancakes (1 tablespoon each) at a greater distance from each other.
Bake the dough in a preheated oven at 180 degrees until golden brown (about 8 minutes).

Prepare the cream: use a whisk to mix sour cream (200 g), sugar (170 g), room temperature butter (170 g) until smooth.

We place the pancakes on top of each other in a round shape (this will be the shell), setting aside 10 pancakes (on the head and legs of the turtle), grease any layer of the cake with cream (also pour cream over the top).
From the set aside pancakes, lay out the legs and head in 2 layers, also coating them in the middle. Place the cake in the refrigerator for 30-50 minutes.

Prepare the glaze: mix sugar (8 tbsp) and cocoa, add milk, butter (100 g). Place on the fire and cook over medium heat, bring to a boil. Let cool; the more the glaze cools, the thicker it will become.

  • making sour cream;
  • assembling the cake;
  • formation of glaze;
  • cake decoration.

Step 1 – Making the dough:

  1. Preheat the oven to 190 degrees Celsius.
  2. Mix two cups of wheat flour and 2 teaspoons of baking powder, and then sift.
  3. Pour 6 chicken eggs into a beating container and pour in one and a half cups of sugar. Before this, it is better to grind the sugar in a blender, because the sweet powder dissolves better, creating a homogeneous mass.
  4. Beat the mixture with a mixer until stable foam.
  5. Add 2 tablespoons of cocoa powder to the egg-sugar mixture and lightly beat with a mixer or stir until smooth.
  6. Add 2 cups of prepared and sifted flour to the resulting mixture in parts and beat or stir well until the dough becomes like pancake dough, the mixture reminiscent of sour cream.
  7. Line a baking sheet with parchment paper and grease with butter.
  8. Using a spoon, carefully place the dough in the form of flat cakes of similar size at a distance of 3 cm from each other on a baking sheet lined with parchment paper.
  9. Place the baking sheet in an oven preheated to 190 degrees Celsius and bake the cakes for 7 minutes until golden brown. You can check the readiness of the dough by piercing it with a toothpick, after which the toothpick should remain dry.

Step 2 – Making sour cream:

  1. Remove 250 grams of butter from the refrigerator and leave at room temperature until softened.
  2. Place 250 grams of softened butter, 850 grams of sour cream, one and a half cups of sugar and 2 tablespoons of cocoa powder in a mixing container.
  3. Beat with a mixer for about 7 minutes until smooth.

Step 3 – Assembling the cake:

  1. Set aside and do not touch 5 cakes for now - they will be used to make the head and legs of the turtle in the cake.
  2. Take a tray or a huge dish on which the cake will be served.
  3. Alternately take the cakes and dip them in the prepared cream, and then place them on a tray or a huge dish in the form of a slide, representing a turtle shell.
  4. Pour the remaining cream onto the top of the formed cake and smooth it moderately over the entire cake with a spoon until a smooth surface is obtained.
  5. Place the cake in the refrigerator for 2 hours.

Step 4 – Forming the Glaze:

  1. Remove 50 grams of butter from the refrigerator and leave at room temperature until softened.
  2. Place 50 grams of softened butter, 150 grams of sour cream, half a glass of sugar and 2 tablespoons of cocoa powder in a cooking pan.
  3. Mix well.
  4. Place the saucepan with the mixture in a water bath and bring until completely dissolved and uniform, stirring with a spoon or spatula.

Step 5 – Decorating the cake:

  1. Remove the cake from the refrigerator.
  2. Place a little of the glaze in a baking bag.
  3. Pour the rest of the glaze over the top of the cake sparingly.
  4. Carefully slide 1 cake under the turtle’s shell, which will be the turtle’s head, and 4 cakes, which will be the legs.
  5. Using a cooking bag, create eyes and a mouth on the turtle’s head, and claws on its paws.
  6. Additionally, the top of the “Turtle” shell can be decorated with nuts or raisins, sprinkled with chocolate chips or coconut flakes.
