  • 1 egg yolk
  • 50 gr. Sahara
  • 2 gr. salt
  • 125 gr. butter
  • for the inside:
  • 500 gr. new berries (cranberries, lingonberries, dark or reddish currants) or a mixture of them, or frozen berries
  • 100-150 gr. sugar, depending on the sweetness of the berries
  • zest of 1 orange
  • 30 gr. berry jam
  • additionally:
  • vegetable oil for lubrication
  • flour for dust
  • butter for greasing
  • 1 egg or egg white for brushing

Step-by-step manufacturing recipe

1. For the dough, dissolve the yeast in milk, mix with flour, cover with a lid and leave to ferment for 1 hour.

2. Rinse and dry the berries. If using frozen berries, defrost in a colander to drain the juice.

3. Knead the dough. Transfer the dough to a mixer bowl, add other ingredients and knead into a smooth, soft dough. Place it in a lightly greased bowl, cover with cling film or cover with a lid and leave to ferment for 1 hour.

4. Transfer the dough to a floured work surface and divide into 2 parts, one twice the size of the other (approximately 500 and 250 g).

5. Grease the bottom and sides of the pan with butter. Lay out a huge portion of the dough, spread it with your hands. Cover with film and leave to proof for 45-60 minutes. Roll out the smallest part of the dough into a rectangle 5 mm wide, cut strips 5-7 cm wide, and form a grid on paper or oiled film. Cover with film and leave to proof.

6. Preheat the oven with a baking sheet placed in the lower third part to 190°C.

7. Grind the sugar with the orange zest. Brush the bottom of the dough with jam. Place the berries on the jam, sprinkle with sugar and cover with a net. Secure the ends of the mesh. If you wish, make decorations from scraps of dough. Brush the surface of the pie with lightly beaten egg and place in the oven. It is very important not to combine the berries with sugar in advance, so that they do not release the juice ahead of time. After the berries are laid out on the dough and sprinkled with sugar, put the pie in the oven as quickly as possible so that the juice does not wet the dough.

8. Bake the pie for 40-50 minutes until the surface is golden. The bottom layer of dough should be completely baked.

9. Cool the finished pie on a grid in the mold for 10-15 minutes, then remove from the mold and cool to room temperature.

  • Sweet powder with vanilla 5 tbsp.

Manufacturing:

For the dough, warm the milk to room temperature. Add sugar and yeast to the milk and stir well. Leave in a warm place until a fluffy cap forms.

Mix the drink with oil and heat. Then add lightly beaten eggs, salt, dough and stir. Next, add the sifted flour and knead the elastic dough. More flour might be useful.

Place the container with the dough in a warm space for 2 hours. The dough will make two pies with a diameter of 26 cm.

If you use frozen berries, defrost them in advance and drain the excess liquid. Add starch, sweet powder and stir.

Divide the yeast dough into parts. Roll out a huge part into a layer about a centimeter wide and place it in a baking dish, forming sides. Distribute the filling. Make flagella from another part of the dough and place them on the filling in the form of a grid.

Bake the pie in a previously preheated oven at 250 degrees. oven for 20-25 minutes.
