Homemade toffee - a beloved dessert of the Russian era

Homemade toffee is a delicacy that has been popular since Russian times, which you can prepare yourself in your kitchen. But they are all identical in one thing - they contain only natural ingredients and the absence of harmful additives, which cannot be said about store-bought products. The calorie content of the product is about 380-400 kcal per 100 g. This is a rather impressive figure, but if you eat a few candies, this will not have a negative impact on your health and figure. Let's look at several step-by-step recipes on how to create toffee at home.

Taffy with sour cream

This is the most common manufacturing option with the smallest set of ingredients. Cooking time for three servings is 40 minutes.

  • Granulated sugar and sour cream – 220 g each;
  • Butter – 30 g.

Preparing toffees at home:

  1. If you need to create more of this sweet treat, double or triple the amount of ingredients this toffee recipe includes;
  2. In a separate stainless steel container (not an enameled one), combine sugar and sour cream. Place on medium flame, bring to a boil, do not forget to stir always;
  3. At first, the mixture will be covered with small bubbles. Stir and do not leave the stove;
  4. After some time, the mixture will look like condensed milk. Stir and especially work the bottom well;
  5. Soon the mixture will change color and become creamy and thick, so you will soon get sticky candies. If you want the darkest color of the delicacies, then increase the cooking time and stirring intensity;
  6. When you are one hundred percent satisfied with the color, remove the dish from the heat and add butter. Mix it thoroughly into the composition;
  7. A thick toffee mass came out. Quickly pour it into molds, or pour it onto a flat surface, greasing it with butter;
  8. You can use any molds, for example, glass for baking or silicone for candies. It is better to create cuts immediately with a damp knife on the surface; later it will be easier to divide our sour cream toffees into pieces. It is necessary to give the yummy some time to harden;
  9. Next, release the delicacy from the mold and cut into portions. Makes approximately 260 grams of sweets.

Toffees with milk

The recipe for butterscotch with milk will send children into ecstasy. And if you also involve your child in the cooking process itself, for example, let him fill the molds with a viscous mass, the child will be extremely happy.

  • Butter – 30-40 g;
  • Granulated sugar and milk - 200 g each;
  • Vanilla sugar - two teaspoons;
  • Honey (preferably natural) – a large spoon;
  • Vegetable oil.
  1. Take a container with a thick bottom, pour milk into it and put it on the flame. Add regular sugar and vanilla. The last one can be replaced with 2 drops of vanilla essence;
  2. Add honey to milk, stir well. When the milky-honey consistency boils, the heat must be reduced;
  3. Next, add butter to the bubbling mixture and stir;
  4. Cook everything over low heat and be sure to stir. Do not leave the product unattended, it may “escape”;
  5. The mixture should thicken and take on a caramel color. This will take about half an hour, and the goodies will be ready;
  6. Grease a mold for ice or candy with vegetable oil. Fill the cells with the sweet mixture and place in the refrigerator until completely hardened. If there is no suitable form, then the candy mass is distributed on oiled parchment paper in such a way that a rectangle about 2 cm wide comes out. After cooling, cut the delicacy with a knife so that small toffees come out;
  7. We wait for complete hardening and then remove the sweetness from the mold;
  8. It is better to store the dessert in the refrigerator in a closed container, because at room temperature the candies may melt and soften.

Creamy toffee

Nowadays, the selection of sweet treats in the store is large, but almost all people, especially the older generation, feel nostalgic for the sweets sold in the Russian Union. You can create creamy toffees yourself and the result will be wonderful.

  1. Dissolve 500 g of sugar in 250 g of cream and place the bowl on medium flame;
  2. Be sure to stir the mixture and after some time it will darken and thicken. When the caramel mass turns the color of coffee with milk, it means it is ready. Remove it from the heat, grind it with 100 grams of butter and flavor with 2-3 drops of vanilla extract;
  3. Place the culinary dish on the prepared surface (greased with oil), smooth it out and let it harden, then cut it perfectly and serve.

Taffy with condensed milk

This is a very savory and especially sweet version of the beloved sweet.

  • Condensed milk – 300 g;
  • Milk – 200 g;
  • Wheat flour – 40 g;
  • Butter – 100 g.

  1. Melt the butter over a low flame;
  2. Add flour and fry until golden brown, stirring constantly;
  3. Pour in the condensed milk and keep on the flame for 10 minutes, always stirring;
  4. Add milk at room temperature to condensed milk;

  • Sweet sand – 200 g;

  • Butter – 30 g.

How to make toffee:

  1. Take a saucepan and add all the ingredients according to the list into it, stir well. You can use a mixer;
  2. Cook the mixture on the stove over moderate heat for about half an hour and always stir;
  3. You can use ordinary ice trays; the delicacy will look great in them. Any cell must be well coated with refined oil;
  4. Carefully place the finished sweet mass into the cells;
  5. Cool and place in the freezer for half an hour.

We can say that toffee is a dessert that occupies an intermediate state between caramel and sweets. But even this is not the final step of production. To achieve the desired mixture, the toffees are placed in a drying unit, in which, at a temperature of 38 degrees, sugar crystallizes, after which the toffees melt from an incomprehensible mass into actually the toffees that we know.

Types of iris

It is in the drying chamber, at the last step of production, that the toffees acquire the degree of softness on which their belonging to one of the types depends:

  • viscous;
  • soft;
  • semi-solid;
  • replicated;
  • semi-solid cast.

So that the toffee does not stick to the teeth, but crumbles and melts in the mouth like ordinary candies, they invented mass-produced toffee - for this, during the production process, crumbles of previously prepared toffees are added to the viscous mixture.
