On average, take from 100 to 150 g of sweet sand per 1 liter of water, depending on what you cook from. It is clear that raspberries and cherries are sweeter than cranberries or cherries, which means you can add much less sweetness. And the amount of sugar depends on everyone’s taste preferences.

The proportions of water and berries are also selected personally. Some people like the richest taste, which means they will need more fruit. But this ratio is considered good: the pan should be filled with berries no more than a third (or a quarter).

About cooking methods

Culinary experts recommend cooking berry compote this way: first prepare a syrup from water and sugar, and then boil the fruits in it for 3-5 minutes and leave to infuse. Blackberries and raspberries will give away all that is most valuable if you simply pour syrup over them and let them sit.

This applies to new berries, and frozen ones are poured with cool water and brought to a boil.

There is another method of cooking compote: berries are poured into boiling water. Let it boil, reduce the heat, cook for no more than 5 minutes and leave. Then they filter and add sweet syrup to the finished compote.

About supplements

If the compote is made from sweet berries, then sourness will not hurt at all - add citric acid, or lemon juice or sour berries.

Citrus zest imparts a pleasant taste; do not forget to remove it after cooking.

  2. Prepare the syrup - dissolve sugar in water, bring to a boil and cook over low heat for 5 minutes.
  3. Pour syrup over the berry mixture, bring to a boil and then remove from heat.
  4. Leave covered for 5-6 hours.

Gooseberry and mint compote

  • one and a half glasses of gooseberries;
  • 2 liters of water;
  • 200 grams of sugar;
  • sprig of mint.
  1. Let's select excellent berries, wash them and let the water drain.
  2. Pour sugar into boiling water, stir, put gooseberries in the pan.
  3. Cook for 7 minutes over low heat. Remove from the stove to infuse, adding mint.

  3. Fill the jar with berries with boiling water. As the raspberries color the water, pour it into a saucepan, add 405 g of sugar and cook the sweet syrup. After it boils, remove from heat.
  4. Pour the syrup into the jar of berries through a funnel.
  5. Cover with a lid and roll up the jar. Turn it upside down, cover it with a towel and leave it upside down until it cools completely.

Assorted berry compote for the winter

Ingredients

Reddish currant 2000 g
Gooseberry 200 g
Black currant 200 g
Raspberries 200 g
Sugar 1200 g
Water 12 l.

Making compote

  1. We wash and sterilize the jars using a method that is convenient for you. Boil the lids for 3-5 minutes. We sort the berries and wash them with water. Boil 12 liters in a large saucepan. water. If you do not have such a large container, then boil in several pans. Fill each jar with 500 g of reddish currants.
  2. Distribute gooseberries, raspberries and black currants into jars. Approximately 50 g of each berry.
  3. Pour 300 g of sugar into each jar.
  4. Fill the jars with boiling water to the middle. Approximately 1.5 liters. Cover with a sterilized lid and leave for 6-10 minutes until the sugar dissolves.
  5. Pour the berry water into a common saucepan and boil for a couple of minutes.
  6. Pour the boiled syrup into jars and roll up. We turn the jars upside down and cover them with a thick blanket, leaving them to cool completely.

Ingredients

Citric acid 2 g

Plum 320 g

Making a berry drink

  2. We clear 145 g of black currants from twigs and leaves, rinse with water and pour into a pan with water. Bring to a boil.
  3. Cut 320 g of plums in half, remove the pit and add to the currants.
  4. We wash 150 g of strawberries with water. Remove the tails and cut into halves.
  5. Wash two medium apples, remove the stem and cut into 4 parts.
  6. Pour apples and strawberries into a common saucepan.
  7. Bring all ingredients to a boil, add 125 g of sugar and 2 g of citric acid. Instead of citric acid, you can add a few slices of lemon. Boil the compote over low heat for 5-6 minutes. The finished compote should brew and cool completely.
  8. Pour the berry drink into a carafe.

Grape compote

Ingredients

Water 450 ml
Isabella grapes 500 g
Sugar 205 g
Plum 2 pcs.
Fresh mint 2 branches
Juniper 3 pcs.
Thyme 1 sprig

Making grape compote

  1. Sterilize an airtight jar using steam.
  2. Boil 450 ml of water in a separate saucepan or kettle.
  3. Separate 500 g of reddish grapes from the branches and rinse with water. Pour into a saucepan.
  4. We wash two plums and divide them into two slices, send them to the grapes.
  5. Fill the pan with bubbling water and put it on the fire.
  6. Add 205 g of sugar, a small sprig of thyme, 3 juniper peas and 2 sprigs of fresh mint. Let the compote simmer for 4-6 minutes.
  7. Remove sprigs of mint and thyme from the pan.
  8. Pour the compote into a sterilized jar, pour in the grapes and plums.
  9. Close the jar, cover with a towel and leave until completely cool. Compote in an airtight jar can be stored in the refrigerator or at room temperature for up to 1 year.
