How to make redcurrant pie

Ingredients:

  • Reddish currants – 400 g
  • Flour – 120 g
  • Butter – 100 g
  • Sugar – 120 g
  • Baking powder – 1 tsp.
  • Vanilla sugar – 1 pack
  • Starch – 70 g
  • Testicle – 2 pcs. huge (or 3 small)
  • Sweet powder – 2 tsp. for filing

Manufacturing:

When starting to prepare a pie with red currants, wash the berries, remove the branches and lay the currants on a towel or cardboard napkins to dry.

Grind soft butter with vanilla sugar and seventy grams of sugar until smooth.

Add one huge egg (or one and a half small ones) to our butter consistency and mix thoroughly.

Sift 100 grams of flour, 50 grams of starch and baking powder. Starch will make the dough crumbly.

Add flour mixture evenly and stir until smooth. Grease a baking dish with butter (it is more convenient to use a rectangular or square one) and sprinkle with flour. After baking, the pie is cut into squares, these are slices for yourself, so do not make the pie very thick, take a small form.

Using a spatula, distribute the dough moderately over the pan and place the berries on top. It is necessary to ensure that the berries do not touch the side; otherwise, after baking, it will be quite difficult to wash off the berries that have burned onto the pan.

We will bake the cake for about 20-25 minutes at a temperature of 180 degrees.

Beat the white of a huge egg (or one and a half whites from small eggs, if you used one and a half in the dough) into a strong foam. Grind the yolk with the remaining sugar, add one tablespoon of flour and the remaining starch, also the beaten egg white. Mix carefully.

Distribute the mixture sparingly over the almost finished pie and bake for another 10 minutes. We take them out of the oven and cool the redcurrant pie, sprinkle with sweet powder. Cut into nine serving squares. It is better to eat this pie on the same day, otherwise the top of the pie may become a little sticky due to humidity.
