Fluffy zebra pie

There are a lot of recipes for sweet homemade baked goods, and there are so many different pies out there. Now I would like to tell you how to prepare a delicious zebra pie with kefir. I think that almost everyone knows about the existence of such a pie, and they have been preparing it for many years. But having tried several options, I can confidently say that this zebra pie recipe turns out to be the most delicious and easiest to make. Now this is one of my favorite recipes, I hope you will appreciate it too.

You will spend very little time on production, because you don’t have to spend a long time fiddling with the dough or kneading it. Everything is simple here, whip, mix, bake. This zebra is quite sweet, so if you don’t like a lot of sugar, you can reduce its amount a little. The entire process of making zebra pie is shown in the recipe with step-by-step photos, so even beginners will not have any difficulties. You can also create a balloon with cherries, which turns out very tasty. I recommend baking such pastries, because it is so simple, and the taste will not leave anyone indifferent.

  • Salt - a pinch
  • Vanillin - a pinch

How to make zebra pie

To make a pie, you first need to create the dough. Pour sugar into a mixer bowl and beat in three eggs.

I beat for a short time, 2-3 minutes is enough, until a small foam forms.

Then pour in the drink, add vegetable oil, slaked soda or baking powder, salt and vanillin. It is very important that the oil be refined, because otherwise you will not get the same result in the end.

Using a whisk or mixer at low speed, mix everything. Now I’m pouring in the flour, which I add in one go and it’s better to sift it in advance.

After that, use a whisk or spatula to mix the flour into the rest of the mixture until a homogeneous mixture comes out. This kefir batter is suitable for various pies in the oven.

The zebra pie is made two-color, so I divide the resulting dough into two parts, and pour cocoa powder into one.

I stir in the cocoa with a spoon and get a wonderful chocolate color.

The baking pan needs to be prepared; to do this, I grease its sides with a piece of butter, and put a sheet of parchment on the bottom and secure the pan. The dough should be spooned out using a tablespoon.

In order for you to have the same zebra pie as in my recipe in the photo, you must adhere to the order of laying out the dough. First, I put 2 tablespoons of light dough in the center, then 2 tablespoons of chocolate dough in the middle of the light dough, and so on until the end.

The end result is a striped sketch like this, but that’s not all.

To make the baked goods even more attractive, you need a toothpick, with which I draw stripes along the dough from the middle to the edges. This sketch looks like a cobweb.

I bake the pie in a preheated oven at 180 degrees for 40-45 minutes. I check its readiness with a toothpick, which must remain dry when piercing the pie. If so, then it is ready and I take it out of the oven.

I carefully remove the mold and parchment and transfer the finished deliciousness to a plate.

This zebra pie with kefir comes out very fluffy, savory and sweet. Definitely give it a try because it's worth it.

If desired, you can even create a cake from it by cutting it into several layers and spreading it with sour cream, for example. The recipe is quite good and comes out constantly.

The pie is great! I took a little more than a glass of sugar and the pie tasted perfect. The pie is very soft with a crispy crust on top. I recommend!

Thanks for your feedback! I'm very glad that you liked it.

This is luxury technology! Ordinary and always beautiful. Can be used in both square and rectangular shapes. Just add light and black dough in portions and make squiggles. my first pie 10 years ago was a zebra)) And I started mastering the slow cooker with it, almost the same composition as yours. It also comes out great. The crust is probably worse than in the oven, and even more fluffy.

try to create a zebra according to this recipe, it is indescribably delicious and better than others! I don’t really like baking in a slow cooker, I’m more used to the oven

I decided to make this pie for the first time using your recipe. He came out wonderful, so affectionate and shaggy that he wanted to eat another piece. Topped with more chocolate fudge, thanks for the recipe!

I really like this zebra) I’m glad that you liked it too))

Thank you very much for the recipe. My daughter makes this pie every week and taught us how to make it. It turns out very tasty.

This is a homemade recipe right now) very nice!

Simply delicious, even our dachshund stole a piece. And the kids are simply in ecstasy. It turned out to be a pleasant family tea party. My husband doesn’t really like baking, but he joined in here too.

I really love this pie and I’m glad that someone else was able to appreciate it) cook for your health)

I've never had anything so disgusting before. I don’t understand what I did wrong. Instead of kefir I had natural yogurt. I couldn’t force myself to knead TWO glasses of sugar, and added ONE incomplete glass - I don’t like very sweet things, and I always put less than in recipes - I’ve never had any problems. The dough rose at first and the pie itself was excellent. And later, during the cooling process, it COMPLETELY fell off on the table! The cut looks like soap! I thought that I could somehow save it with cream, like it would get wet and it would be like a dessert, but how annoying it may sound! Soap with cream came out :) I saw at the preparatory step of mixing, when I added slaked soda, there were no bubbles, but I thought that it was necessary. But I completely threw out the kefir dough from my own recipes, because at one point it didn’t work out, but then I had a recipe with jam in the dough, and by an experimental method I determined that the jam must be currant, or very sour, and this is not always available. But according to this recipe, you either need to use more vinegar for the soda, or a little more flour so that it rises and does not fall. Or under no circumstances is it permissible to replace the drink with yogurt...

It's a shame it didn't work out. The drink literally does not need to be replaced with yogurt, this has been tested! the bubbles should be from the reaction of soda with sour kefir. Add as much sugar as indicated in the recipe. and another option, maybe you took it out of the oven earlier than it was baked. Check the readiness with a toothpick constantly so that it is not moistened, not sticky, but dry!

I had the same thing. The dough is tasty, but raw. I think it is not permissible to pour in a cold drink. It needs to be poured in warm for the reaction to take place. I forgot about it myself. I remembered when I started adding flour... this had never happened before. I often baked zebra with kefir.

It didn’t work out for me either, I didn’t replace anything, I put in less sugar and it was a little sweet (((

Refined vegetable oil?

If the soda is old, it will not go out and there will be no bubbles.

then extinguish with vinegar

Thanks for the recipe. The pie is simply perfect!

you are beautiful! I'm glad you liked it!

I used 1 cup of sugar instead of 2 and it still came out very sweet(((

Well, everyone has different tastes, but we like it this way)

Is it possible / necessary to replace the drink with sour cream? How does this affect the final outcome/taste?

no, no need to replace it. The dough may be at its densest and will not have the appropriate airiness.

Hello. The pie is just super 👍👍👍. My kids and husband really liked it. They were in ecstasy. Now I cook it quite often. Thank you very much for the recipe.

and thank you for your feedback! cook for your health!

Zebra pie with kefir: traditional recipe

It is not reliably clear in which specific year this pie originated. But his first recipe, later called “Traditional” and preserved to this day, spread among Russian housewives quite rapidly.

This was facilitated by the fact that its recipe used products that were available in any refrigerator. The second advantage of the Zebra cake is that the ingredients could be replaced with similar ones. For example: flour - semolina, and drink - sour cream or milk.

Ingredients

To make the dough for a traditional Zebra cake from kefir you will need:

  • drink: 200 ml (1 tbsp.);
  • premium or 1st grade flour: 250 g (2 tbsp.);
  • eggs: 3 pieces;
  • sugar: 160 g (1 tbsp.);
  • cocoa: 60 g (3 tablespoons without a slide);
  • baking soda: 10g (1 tsp without a slide);
  • vanillin: 10g (1 sachet).

Manufacturing method

The Zebra cake is prepared using the following method:

  1. Break the eggs into a deep bowl and add sugar to them. Beat the resulting mass until it doubles in volume.
  2. Pour the drink into another bowl and pour soda and vanillin into it.
  3. Mix the kefir and egg mixtures together and gradually add sifted flour to them. Mix until a homogeneous fluid mass is formed without lumps.
  4. Divide the dough into 2 parts. Add cocoa powder to one half and mix the resulting mass again.
  5. Prepare a baking dish using one of the following methods:
    1. From an alloy: cover the bottom with duralumin foil or parchment, and grease the walls with butter or sprinkle with flour.
    2. From silicone: grease the walls with oil.
  6. Place 2 tablespoons of light dough in the center of the mold and wait 1-2 minutes for it to spread.
  7. Place the same amount of dark dough in the center of the light spot.
  8. Repeat steps 6 and 7 until the pan is filled to the brim or the dough is complete.
  9. Preheat the oven to 160–170º C and place the cake in it for 20–35 minutes. When finished, check readiness with a match or toothpick. If the outermost one is covered with watery dough, then you need to keep the pie in the oven for a couple more minutes.
  10. Cool the cake and cut it using one of the following methods: into triangular pieces or into 2-3 shortcakes. In the second case, you can additionally lubricate them with butter cream or condensed milk.

This completes the making of the “Zebra” cake with kefir.

Zebra cake with poppy seeds

This version of the pie recipe is somewhat more difficult than the traditional one due to the fact that in addition to the dough, you also need to prepare the filling.

Ingredients

To make Zebra pie with poppy seeds you will need the following products:

  • dough;
  • flour: 250-300g (2 tbsp.);
  • water: 2 tbsp. l.;
  • salt: on the tip of a teaspoon;
  • butter: 100g (half a pack).
  • interior:
  • milk with 2.5% fat content – 600 ml (3 tbsp.);
  • butter: 100g;
  • testicles: 1 pc.;
  • homemade cottage cheese or with a fat content of 9%;
  • ground poppy seeds: 200g (1 tbsp.);
  • sugar: 200g (1.5 tbsp.);
  • semolina: 200g (1 tbsp.).

Manufacturing method

The Zebra cake with poppy inside is prepared as follows:

  1. Sift the flour into a cup, add salt, water and grated butter. Mix the ingredients and place the resulting mass in the refrigerator for 10–15 minutes.
  2. Pour the milk into the pan, and then add sugar and butter to it. Put it on the fire and bring the solution to a boil.
  3. Mix poppy seeds and semolina, and then pour them into the milk. Cook until the semolina swells. After this, remove the pan from the heat.
  4. Mix the cottage cheese with the egg using a fork or mixer. Divide the resulting mass into 3 equal parts. Add two of them to the manno-poppy mixture, and transfer 3 to another cup.
  5. Take out the chilled dough and roll it out. Before rolling out, it is recommended to place it between 2 sheets of parchment so that it does not stick to the rolling pin. You can use flour instead of paper.
  6. Grease the mold with oil and place the dough in the bottom.
  7. Place the manno-poppy mixture in its center, and put the previously set aside cottage cheese in its middle.
  8. Spread the filling moderately over the surface of the dough using a spoon or shaking the pan a couple of times.
  9. Place the latter in the oven, preheated to 170–180º C for 1 hour.

This completes the production of the Zebra cake with poppy inside.

Manufacturing secrets and tricks

In order to create the most delicious and beautiful pie, you can use one of the following tips:

  • For production, it is best to use a drink with the highest fat content (7–8%), but one with a fat content of 3.2% is also suitable.
  • While baking a cake made according to a traditional recipe, the oven door must under no circumstances be opened. This will cause the dough to fall and become dense, not airy.
  • The sour circular sketch of the traditional Zebra cake made from kefir can be changed to a web-like one. To do this, before baking, place a toothpick or match in the center of the dough and use it to draw straight stripes to the side of the pan.
  • To enhance the chocolate flavor of the cake, you can cover it with icing.

Chocolate frosting recipe

To make this delicious decoration, the following products will be useful:

  • cocoa powder: 40–50g (2 tbsp);
  • sugar: 40–50g (2 tbsp);
  • butter: 50g (¼ pack);
  • sour cream: 2 tbsp. l.

Preparing the glaze is quite simple:

  1. Place all ingredients in a saucepan and place on low heat.
  2. Constantly stirring the mixture, bring it to a homogeneous fluid mass. It is not allowed to boil it, otherwise it will become unsuitable for future use.
  3. Remove the pan from the heat and cool its contents.

This completes the making of the glaze. After cooling, it can be applied to the cake. You can also sprinkle it with something. Chopped nuts or multi-colored sprinkles.

Zebra cake with kefir is a delicacy with almost everyone’s favorite chocolate taste, which any housewife can prepare thanks to the ease of production and the availability of goods.
