Step by step recipe
Liver cake recipe.
Wash the liver, trim off excess fat (if any), cut into huge pieces and pass through a meat grinder. Add 2 chicken eggs, salt to taste and a little vegetable oil. Mix everything well.
Pour in 200 ml of milk, stir again with a tablespoon.
Add 150 g of sifted flour, mix well so that there are no lumps. If the dough seems runny, add a little more flour. The liver dough should turn out like pancakes.
Heat a frying pan with vegetable oil very hot (it is better to use a cast iron frying pan). Fry the pancakes over medium heat until golden brown.
Turn the pancake over and fry on the other side. To prevent the pancake from breaking during flipping, you can create it like this... fry the pancake on one side, then transfer it to another frying pan, turning it over at the same time. Continue frying until golden brown. If you are worried that the liver cake will turn out to be very greasy, place the cooled shortcakes on a paper towel and blot lightly to remove excess oil.
Peel 3 cloves of garlic and grate it on a small grater or squeeze through a garlic press. To lubricate the liver cakes, mix mayonnaise with crushed garlic.
Assembling the liver cake. Place the first shortbread on a fine dish, grease it with a garlic-mayonnaise mixture. Do this function with all the other shortcakes, stacking them on top of each other.
Grease the top crust and sides generously with mayonnaise. Wash the dill, dry it, chop it finely. Sprinkle the sides of the liver cake with chopped dill.
Decorate the top of the liver cake with cherry tomatoes, cut in half. Let it brew in a cold place for several hours. And it’s best to put it in the refrigerator overnight (that is, in the dark) .

Recipe for making liver cake
Needed :
500 g of liver;
0.5 l of milk;
5 eggs;
2 medium-sized onions;
1 cup flour;
dark ground pepper;
salt;
vegetable oil.
How to cook:
Carefully prepare the liver. Wash it under running cool water. Remove the film from the surface, all vessels and veins. Wash again and dry with cardboard napkins or a towel. Cut the liver into the smallest pieces as necessary.
Pass the liver through a meat grinder.
Peel the onions, cut into 4 parts and also scroll.
Stir the minced meat, add the eggs, season everything with pepper and salt. Mix the mixture again.
Pour in the milk and add 1 cup of flour.
Carefully stir the dough for liver cakes until smooth and beat lightly with a whisk or mixer. Based on the mixture, it should turn out a little thicker than pancake.
Leave the mixture for 10 minutes, so the dough will become more elastic and it will be easier to fry the cake layers.
Place the frying pan on the fire and heat it, pour a small amount of vegetable oil. After it heats up, add a few tablespoons of the liver mass, level it and fry on both sides until golden brown.
Prepare all other cake layers in the same way. Place them on a plate and leave to cool completely.
Liver dough can be poured into a frying pan using a ladle. Scoop up the mixture, pour it into the frying pan and spread the dough over the surface in the same way as when frying pancakes.
To grease the cakes, prepare the filling, for which you will need:
2 onions;
100 g mayonnaise;
vegetable oil.
How to cook:
Cut the onion into half rings. Fry it in vegetable oil, the finished onion should acquire a beautiful golden color.
Now you can start assembling the liver cake:
Place the first shortbread on the dish and brush with mayonnaise, then add the fried onion and smooth it over the entire surface of the liver.
Cover the top with the next liver pancake, grease it with mayonnaise and add the onion filling.
Assemble the entire cake in the same way.
Lubricate it with mayonnaise on top, garnish with herbs and fresh vegetables.
Recipe for liver cake with mushrooms
The base for the liver cake can be different. Experiment and prepare liver shortcakes with mushrooms.
Needed :
500 g of liver;
3 testicles;
1 cup flour;
1 glass of milk;
300 g of new champignons;
3 cloves of garlic.
2 onions;
salt and pepper - to taste.
How to cook:
Peel the champignons, wipe with a towel and cut into slices. Fry the mushrooms in vegetable oil until golden brown.
Prepare the liver dough as described above, and lastly add the fried mushrooms and garlic, passed through a press.
Place the dough with a spoon into a hot frying pan with vegetable oil, level it over the entire surface and fry on both sides.
When the cakes have cooled, brush them with mayonnaise and add the fried onion filling.
Liver mixes very well with sour apples, which can be grated or cut into cubes.
A liver cake with sour berry insides: lingonberries or cranberries has a pleasant fresh taste and excellent smell.
