- 2 cups cottage cheese (the higher the fat content, the better);

- a pinch of salt;

- semolina grits - 3 tbsp. spoons.

- 200 g peeled apples;

- Pour sugar and flour into the pureed cottage cheese, pour in melted butter, and then add raisins, previously washed and steamed in boiling water for 15 minutes.
Instead of raisins, you can take the rest of the dried fruits, any candied fruits, and also add an apple or pear, cut into small cubes, or a handful of berries to the dough
- In eggs, separate the yolk from the white. We add the yolks to our dough, and beat the whites with a mixer until they turn into a snow-white, stable foam.

- semolina - 150 g;
- sugar - 75 g + 75 g (separately for yolks and whites);
- milk - 1.5 cups;
- zest of 1 lemon;

But in order not to turn the pudding into an ordinary casserole, you need to know some ordinary rules:
- To make the product more luxurious, the whites are separated from the yolks. Any product is whipped separately. Then alternately combine with the rest of the ingredients. The whipped protein is introduced into the mixture at the end; it is added carefully so as not to kill the bubbles.
- For baking, special molds with a hole in the middle are used. Then the pudding will bake perfectly. Small cake pans are also used.
- Place the pudding in the oven at one second preheated, otherwise it will instantly be covered with a golden brown crust, but the inside will remain unbaked and raw. Such a product quickly falls off when removed from the oven.

- Pour sugar, snow-white ground crackers and egg yolk into the curd mass. Mix the ingredients thoroughly.
- Dilute the dough with milk and mix well.
- Using a mixer, beat the egg whites into a thick, snow-white, airy foam and add to the curd mass. Mix them in from top to bottom.

- Grind the yolks with sugar, add cottage cheese, a little salt, mix well.
- Combine the softened butter with the curd mixture.

- Beat the whites. If they begin to hold their shape, in other words, you lift the mixture with a spoon and it does not fall off, the whites are whipped correctly.

- Place in an oven preheated to 180 - 190 degrees. The pudding takes quite a long time to bake, so care must be taken so that it does not burn on the bottom. If the heat source in your oven is low, I recommend either placing the pan higher, or placing a container of water on the bottom of the oven.
- It is better not to open the oven door unless necessary, so that the pudding does not fall off.
- During baking, the pudding should rise by one and a half times.
