Ingredients

Frozen berries are ideal for making various jellies: with strong whole berries, with crushed soft berries, with squeezed juice and water, or with berry compote.

Jelly from frozen berries can be prepared with gelatin or agar. I like it better with agar, but I will show both options. Blueberries will make gelatin jelly, and sea buckthorn will make agar jelly.

The list of ingredients shows approximate ratios; in other words, you still need to look at the annotations for the gelling ingredients. Add the amount of sugar depending on whether the berries are sour or sweet.

Prepare the products according to the list.

Store-bought berries must be rinsed and slightly dried, and if you prepared the berries yourself, then... at your discretion.

Prepare gelatin as written on the package or follow my values.

First, it must be soaked in cool water, and then heated while stirring in a water bath.

Owners of multicookers can set the “Multicook 60 degrees” mode and dissolve gelatin at guaranteed temperatures.

It works well if you heat the gelatin mass in the microwave; you need to cyclically heat the mass 2-3 times for half a minute at a power of 300-450, stirring each time.

Crush blueberries (or other strong berries) and stir with sweet water, then strain.

To prevent small seeds from getting into the jelly, strain through several layers of gauze. Some of the berries can be left whole and decorated with jelly.

Mix the purchased fruit juice with the prepared gelatin mass.

Pour into bowls or molds and place in the refrigerator.

Boil sea buckthorn or other berries in water with sugar, in other words, bring to a boil and remove from heat.

Then crush the berries and strain this compote.

First dissolve the agar powder in cool water.

Later, while stirring, bring to a boil and cook over low heat for half a minute so that its gelling characteristics appear.

Combine the agar mass with hot berry compote, stir and pour into bowls, cups or molds. Agar jelly hardens even in warm conditions, but it is better to keep it in the refrigerator until serving.

Frozen berry jelly

Berry jelly is an unusual, very tasty and necessary dessert, which, when properly made, retains the taste of new berries. This dessert can be used for decoration, or as an independent dish.

Frozen berry jelly recipe

Ingredients:

  • frozen berries – 500 g;
  • dry gelatin – 1 tbsp. spoon;
  • boiled water – 3 tbsp;
  • fresh mint - for decoration;
  • sweet sand – 100 g.

Now we will tell you how to make jelly from berries. So, first we select the berries for the jelly. The most delicious desserts are usually made from strawberries, blackberries, cranberries and various types of currants. If you have decided and are going to make jelly from reddish currants, then we take approximately 2 times less gelatin, because it contains pectin - a natural plant gelling substance.

Now we sort out the berries and carefully wash them. Place them in a colander and allow excess water to drain. We dilute dry gelatin in a glass of ice water and leave for about 2 hours. After this, dissolve it in a water bath, stirring, but without bringing to a boil. We set aside a few cooked berries to decorate the finished jelly. Grind all other berries in a mortar or rub them through a sieve. Then we let the released juice settle and pour it into a separate bowl.

Pour the berry puree with 2 glasses of boiled water and put on fire. Bring the mixture to a boil, add sugar and boil until the crystals are completely dissolved. After this, remove the dishes from the stove and let the berry broth cool slightly. Now filter the drink through cheesecloth, pour in the berry juice and, stirring, add the gelatin mixture.

Pour cool water over clean silicone molds, place berries on the bottom and fill them with the prepared mixture. Later we put the dessert in the refrigerator to harden. Just before serving, lower the jelly molds into very hot water for a few seconds and place the contents on a flat plate. Decorate the treat with fresh mint leaves.

Berry jelly recipe

Ingredients:

  • sugar – 250 g;
  • frozen strawberries – 150 g;
  • frozen raspberries – 150 g;
  • lemon juice - to taste;
  • dry gelatin – 20 g.

Let's look at another method on how to create jelly from berries. We take out the frozen berries in advance and leave them for about 1 hour. Then grind the strawberries and raspberries in a blender, add sugar and a little lemon juice. Beat the mixture again and leave for 15 minutes. We dilute gelatin in cool water. Place the berry mass on low heat, bring it to a boil, pour in the swollen gelatin and heat the mixture for 5 minutes. Then pour the mass into molds and cool. After this, place the dessert in the refrigerator until completely frozen.

Forest berry jelly with gelatin

Ingredients:

  • frozen blueberries – 100 g;
  • frozen strawberries – 100 g;
  • frozen currants – 100 g;
  • lemon juice - to taste;
  • water – 100 ml;
  • gelatin – 20 g.

Manufacturing

We take frozen berries from the refrigerator, put them in a bowl and leave to defrost for an hour at room temperature. Then we chop the berries with a blender or mixer. Add lemon juice, add sugar and beat again. Pour dry gelatin into a bowl, fill with cool water and leave to swell. Place the whipped berry puree on low heat, bring it to a boil, carefully pour in the gelatin and heat the mixture, stirring constantly. Rinse the beautiful molds with water, place a few berries on the bottom and fill with hot jelly. We leave the dessert to cool, after which we put it in the refrigerator to completely harden for several hours.

Making jelly with gelatin and frozen berries

Regular recipe

There are many options for making jelly from frozen berries with gelatin, plus you can safely experiment by combining the berries, thereby changing the taste of the dessert. The main condition is to have frozen berries, although they are now easy to find on store shelves.

Ingredients needed for regular frozen berry jelly:

  • 300 grams of all frozen berries;
  • 20 g gelatin;
  • 100 ml regular water;
  • A tablespoon of sweet sand (you can add more for those with a sweet tooth);
  • Citric acid.

How to prepare jelly from frozen berries with gelatin according to the usual recipe:
1. The indicated amount of frozen berries must be defrosted before you start cooking.
To do this, just take them out of the freezer and leave them for one hour at room temperature. 2. When the jelly berries are defrosted, they should be crushed in a blender or mashed with a spoon.
Add sweet sand and citric acid. 3. The indicated amount of gelatin should be diluted in the indicated amount of ordinary cool water, then add a little water at room temperature.
4. Next, the gelatin mixture should be heated over medium heat, just a little, do not bring to a boil.
5. Berry puree in sugar and citric acid should be placed on low heat, pour in gelatin, and stir the mixture constantly.
6. The resulting mixture must be poured into special jelly molds, wait until the mixture becomes cool, and send the molds to the refrigerator to harden.

Recipe for currant and strawberry jelly

Frozen berry jelly with gelatin can be prepared most commonly using only two varieties of berries. In addition, such a dessert would be prohibited, by the way, for an adult audience.

What you will need for making:

  1. 400 grams of dark currants and strawberries (you can use both frozen and fresh berries);
  2. 150 grams of snow-white dry wine;
  3. Two tablespoons of lemon juice;
  4. 20 g gelatin;
  5. Sugar (the amount is selected based on taste preferences).

How to cook:
1. Frozen berries should be placed in a container, and the container should be placed in water at room temperature.
2. When the berries are defrosted, you need to squeeze the juice out of them and strain.
3. Add lemon juice, sugar, wine to the berries.
Put everything together on a leisurely fire. 4. When the mixture boils, you need to add the required amount of gelatin to it.
5. The entire resulting mixture must be poured into jelly molds, wait until it cools and put in the refrigerator until the dessert completely hardens.

Tip: To decorate the dish, you can add whole berries to the jelly, once it is poured into molds.
