This dish is needed in Ukrainian and Polish cuisine. The main ingredient is buckwheat. To make the cutlets juicy and keep their shape, minced meat and fried vegetables are added to them. You can cook it either in a frying pan or bake it in the oven. It turns out very tasty if you pour tomato sauce over the cutlets.
It is better to use a combination of minced meat for cutlets: chicken with turkey, pork with beef. You can also add a small amount of twisted fresh lard. When using 1 type of meat, buckwheat can turn out dry. Be sure to boil the cereal in salted water until tender and it is better to give preference to the core.
It is very important to knead the minced meat well. Otherwise, the cutlets may not stick well, may not hold their shape, or may fall apart when turned over. Since it is customary to add fried onions to buckwheat, it is worth paying attention to the purple variety. It has no pronounced bitterness. As for spices, it is better to stick to salt and pepper.

For production, you can use any meat - pork, beef, chicken or their compositions. But it is better that the minced meat is medium-fat – not dry, and without excess fat in the composition.
- buckwheat – 0.75 cups;
- minced meat (pork + beef) – 500 g;
- chicken egg – 1 pc. (category C-1);
- onions – 1 pc. (medium size);
- table salt – 0.75 tsp. (taste);
- dark ground pepper and other spices - a pinch;
- wheat flour – 2-3 tbsp. l.;
- sunflower oil without aroma – 40-50 ml.
For the tomato sauce:
- onions - 1 medium onion;
- carrots – 1 pc.;
- sour cream – 1-2 tbsp. l.;
- pureed tomato pulp – 200 g;
- sunflower oil without aroma – 40-50 ml;
- salt, spices - to taste.
Wash and sort the buckwheat (if required). Place the cereal in a saucepan and fill it with cool water in a ratio of 1 to 1. Place over medium heat and cook for 8-10 minutes until the water boils. Buckwheat should turn out a little tough, slightly undercooked. But you can also use ready-made cereals.
Add minced meat to buckwheat.
Add the egg to the bowl.
Peel both onions immediately and chop them.
Add half the onion to the minced meat and buckwheat.
Season the minced meat with pepper and other spices to taste - garlic, dill, paprika, etc. Put salt in a bowl and carefully mix the minced meat with your hands until it becomes sticky. If the mass turns out to be very watery, you can add a little breadcrumbs. Cover the bowl with film and refrigerate for 30-40 minutes.
In the meantime, you can start making tomato sauce. Peel the carrots and grate them on a large grater or cut them into narrow strips.
Heat the oil in a frying pan and add the remaining onions and carrots into it. Fry vegetables until soft over medium heat.
Pour the grated tomato pulp into the frying pan and add sour cream. Instead of pureed tomato pulp, you can use a paste, diluting it with water to a watery mixture.
Add salt and spices to the sauce, also pour in hot boiled water (enough to obtain the desired thickness). Bring the sauce to a boil and simmer over low heat for 3-5 minutes.
From the chilled minced meat, form grechaniky - medium-sized and regular-shaped cutlets.
Roll them in flour.
And then fry on both sides until golden brown over moderate heat.
Pour the sauce over the buckwheat cutlets, cover with a lid and simmer for about 20 minutes at a low simmer. During this period of time, they will cook inside, become saturated with sauce, and the gravy itself will become thickest.
As a side dish you can offer pasta, potatoes, vegetable stew, etc.

- 2 onions;
- 2 tbsp. spoons of tomato paste;
- flour for breading;
- 40 gr. butter;
- vegetable oil for frying;
- salt and pepper to taste.

Let's sort and rinse the buckwheat. Put the cereal in a saucepan, pour water 2 fingers above the cereal, add salt, and add a small piece of butter. Cook over low heat, once all the water has boiled away, turn off the heat, close the lid and let it sit for 15 minutes. Then let it cool.
Pass the meat through a meat grinder with one onion.
I have the minced meat already ready. Put the minced meat in a bowl, add buckwheat and eggs to it. Let's add salt and pepper.
Mix thoroughly. We form the minced meat into buckwheat cakes and bread them in flour.

Thoroughly wash and sort the buckwheat. Then put a pan of water on the fire (there should be twice as much water as buckwheat). When the water boils, add salt to taste and add the cereal. Bring the water to a boil again, then reduce the heat and cook the buckwheat until cooked and the water has completely evaporated (20 minutes). Allow the finished buckwheat to cool completely.
Next you need to do the minced meat. You can take purchased minced meat and add to it a peeled onion, chopped, for example, in a blender. You can also prepare minced meat at home by passing pieces of meat together with a clean onion through a meat grinder.
Next, add eggs, ground black pepper and salt to the minced meat with onions, after which the minced meat needs to be kneaded well.
Then you need to add cooled buckwheat to the minced meat and carefully mix the ingredients again.
From the resulting minced meat, you need to form cutlets (buckwheat), roll them in flour on all sides. Then you need to heat the frying pan, add oil to it and fry the cutlets until golden brown on medium heat on both sides. Transfer the fried buckwheat from the frying pan to a plate.
Now let’s prepare the tomato sauce; for this you need to finely chop a whole (you can take half) peeled onion.
Peel and grate the carrots on a large grater (you can not grate the carrots, but cut them into thin cubes).
After the vegetables are prepared, you need to heat the frying pan, add a little vegetable oil, add the onion and fry it for 2-3 minutes over medium heat, stirring. Then add carrots. Fry the vegetables, stirring occasionally, for 3-5 minutes (the carrots and onions should become quite soft).
In a separate container, combine tomato paste, salt, spices, pour in water, and thoroughly mix the resulting sauce. When the carrots and vegetables become quite soft, pour the sauce into the pan and bring to a boil.
After the tomato sauce boils, put the fried buckwheat into it, cover the pan with a lid and let it simmer over low heat for 20-25 minutes (depending on the size of the cutlets and the composition of the minced meat).
After time, the buckwheat cakes will be ready; before serving, you can sprinkle them with herbs.
Place very tasty, tender buckwheat noodles from the frying pan onto plates, pour over tomato sauce and serve with a side dish (for example, boiled potatoes, mashed potatoes) or vegetable salad.
