Cherry jam for the winter at home - recipes with and without gelatin

In the midst of preparing for the winter, I can always find a couple of jars of cherry jam. An irreplaceable thing in the household, don’t you agree? Spread a bun for tea, serve with pancakes, put in baked goods, ice cream. In the selection of my recipes, there were many recipes for making a delicious thick dessert at home - with gelatin, starch, chocolate, strawberries. All you have to do is choose the option you like and get down to business.

Secrets of making delicious cherry jam for the winter

It will be useful for novice preparers to learn about some of the secrets of properly cooking thick jam.

  • Cherry jam, like that made from cherries, is brewed only from ripe berries. At the same time, it is important that the berries ripen on the tree. This significantly affects the taste of the dessert.
  • When picking berries, pick them with their stems. Remove the branches just before making jam.
  • Jam is stored in all conditions. Suitable pantry, refrigerator, cellar. If you place them in sterile containers and treat the lids with boiling water, the dessert will not ferment all winter, even at room temperature.

How to proceed? After freeing the berries from the seeds, set aside some (or even all). Fill with water, cook after boiling for 5 minutes. Drain the broth and add when cooking jam, if the recipe calls for adding water.

How to make thick jam

Cherries have low gelling characteristics; it is quite difficult to make jam from a regular thick mixture. You have to cook for a long time, in several stages. And the result is not always happy if the berry is very juicy. To achieve a suitable mixture, housewives use products that help make the jam thick.

How do you thicken cherry syrup? Gelatin, gelling sugar, gelatin, and marmalade containing pectin are often used. Agar-agar and starch have been used for a long time.

Recipe for traditional thick pitted cherry jam

A thick mixture comes out when cherries and sugar are boiled for a long time. This is how it was cooked earlier, when special thickeners were not used. You will need the recipe for making reddish currant jam - take note, but several more options can be found on another page.

  • Sweet sand – 800 gr.
  • Berries - kilogram.
  1. Rinse the berries and remove the seeds - when making jam, this nasty manipulation cannot be avoided.
  2. Pour the pulp into a saucepan and boil. Boil for a third of an hour, remove from heat and cool.
  3. Chop the cooled pulp with a blender. To what degree to grind, decide for yourself. Personally, I like the mass that is not completely ground. I like jam with small pieces of cherries.
  4. Cover the cherry puree with sweet sand and let it cook. Start with low heat and heat the mixture while stirring. The sugar should dissolve completely.
  5. Skim off the foam; it is not needed when preparing for the winter. Cook for at least 20 minutes.
  6. Turn off the gas and wait for the jam to cool.
  7. Put it back to cook for 20 minutes. When the time is up, remove from the stove and cool.
  8. Then do the third and final cooking. You will have to stand nearby as the jam will begin to thicken. Stir frequently to prevent the mixture from burning.
  9. When you decide that you are happy with the mixture, finish cooking. Jam is great for storing in the pantry if you place it in sterile containers and screw on the lids.

Cherry jam with gelatin for the winter

If the cherries are very juicy, it will take a lot of time to boil them to the desired thickness. Almost all housewives use special thickeners when cooking at home. A more common remedy is gelatin. For me, jam is the inside of pies and cheesecakes. I like to spread it on bread. Hence the main requirement: the jam must be very thick so that the spoon can stand without the help of others.

  • Cherry pulp – kilogram.
  • Gelatin – 5 gr.
  • Sugar – 900 gr.
  • Seed decoction or water – 0.5 liters.

How to seal jam with gelatin:

  1. Boil the bones if you decide to cook with them. Drain the broth into a saucepan. Add sugar, stir and boil slowly so that the sugar has time to dissolve.
  2. Immediately pour cool water over the gelatin. It will swell soon.
  3. Place pitted cherries into the cooking container. After boiling, add gelatin.
  4. Cook until the desired mixture is reached, making sure to skim off the foam. Make sure that the cherry mass does not boil too much - turn the heat to moderate. After cooling the workpiece, put it in jars and roll it up.

Cherry jam from frozen cherries with starch

As an option, if winter supplies are quickly running out, and there are frozen berries in the bins, I give a recipe for cherry jam with starch.

  • Frozen berries - a glass.
  • Starch - level teaspoon.
  • Sugar – 2 huge spoons.
  • Butter – 10 gr.
  • Water – 30 ml, or even less.
  1. Sprinkle frozen cherries with sugar and immediately set to cook.
  2. Soon the berry will begin to release juice and then boil. Wait for the sugar to dissolve.
  3. Add butter, stir until it melts.
  4. Add a little water to the starch and pour into the pan.
  5. Stir the mixture continuously, without letting the jam burn.
  6. When the syrup becomes viscous and thick, finish cooking.

Cherry jam with strawberries

Strawberries can create a thick jam without gelatin. When the cherry ripens, the strawberries usually fall away, but there are still enough berries left to make a tasty jam. Keep a good recipe.

  • Cherry pulp – 1 kg.
  • Strawberries – 500 gr.
  • Water – 300-500 ml.
  • Sugar – 900 gr.

Step-by-step making of strawberry jam:

  1. Wash the berries and remove the center from the cherries. Mix with strawberries and work with the blender with all your heart, chopping the berry mass.
  2. Place in a saucepan and boil. Cook for a quarter of an hour and remove from the burner.
  3. When the mixture has cooled, return to boiling, adding sugar and water. Pour water carefully. Pour 300 ml, stir. Decide that it’s not enough - add more. But here we must not forget that cherries are usually juicy, do not overdo it.
  4. Take your time, cook over medium heat, skimming off the foam and stirring frequently.
  5. The jam is considered ready when it reaches the desired thickness. Pack the cooled jam into jars and store for winter storage.

Extraordinary jam recipe - with chocolate and coffee

You can make a unique jam from cherries, similar in taste to almost everyone’s favorite chocolate-covered cherries. True, here the components change places - the chocolate slices will float in the syrup. In our family, the dessert is very popular and is given out for tea only on holidays.

  • Orange.
  • Sugar – 800 gr.
  • Dark chocolate - half a bar.
  • Coffee – 400 ml.
  • Cherry, pulp - kilogram.
  • Vanillin – 2 small spoons.
  • Cinnamon - a pinch.
  • Gelatin – 5 gr.
  1. Squeeze the juice from the orange and add pitted cherries. Add sugar, vanillin, and gelatin next. Stir the mixture and let it sit for 2 hours.
  2. Brew strong natural coffee.
  3. Place on the stove, turn the heat to moderate and start cooking.
  4. After the sugar has completely dissolved, pour in the coffee.
  5. When the jam boils, add the broken chocolate into pieces.
  6. Wait for another boil, add cinnamon. It should take you 40 minutes to make jam. The delicious jam is stored in the refrigerator - this is the only drawback of the recipe.
