Traditional mulled wine recipe
Traditional mulled wine recipe
Did you know that mulled wine was previously drunk cold? In Old Rome it was prepared from cool wine to which various spices were added. This is how people enhanced the taste of the drink and gave it a spicy smell. There was no talk of warming properties at that time.

Everything changed in the 17th century. The inhabitants of the cool regions of Europe began to heat it to keep warm. They also began to add galangal to it to give the wine a special smell. Later, in the 18-19th century, they began to add honey, cinnamon, cloves and some other spices to the herb given to us. It was then that the drink that we now call mulled wine arose. Its historical homeland is called Germany.
Below we attach a traditional recipe for red wine, which has remained virtually unchanged after centuries.
Traditional mulled red wine
Ingredients:
- reddish wine - 0.7 l;
- sugar - 1 tbsp. l;
- water - 100 ml;
- nutmeg (grated) - 1 pinch;
- ground ginger - 1 tsp;
- cloves - 5 buds;
- cinnamon - 1 small stick;
- honey - to taste.
Manufacturing development:
- Mix spices in a separate pan, add water.
- Boil the mixture, turn off the heat. Wait 10 minutes.
- Strain the mixture using any easily accessible method.
- Pour the wine, strained mixture and sugar into the pan. Mix.
- Heat the liquid over low heat to 65-70°C. Don't boil!
- Cover with a lid and let sit for 10 minutes.
- Serve the drink hot.
Fundamentally! Mulled wine that has been heated again loses its distinctive smell and taste. Therefore, it is better to prepare the drink in small portions so that you can consume it all.
Which wine is suitable
For traditional mulled wine, reddish dry or semi-dry table wine is ideal. According to the standards established in Germany, the historical homeland of the drink, it is necessary to drink wines with an alcohol content of at least 7%.
The following brands are suitable: Cabernet, Merlot, Alazani Plain, Kindzazuli, Kagor and other mid-price wines. There is no point in drinking expensive wines.
You can also make mulled wine with snow-white wine. But in this case it is necessary to add more sugar, because snow-white wines have higher acidity.
What to serve mulled wine with
Mulled wine is a universal drink, so the choice of snacks for it is enormous. Here are the main ones:
- meat dishes (grilled pork, fried lamb, game, homemade ham);
- cheeses (Cheddar, Roquefort, goat milk cheeses, etc.);
- sweets and baked goods (dry cookies, apple, pear, plum pies, ginger cookies, chocolate, shortcrust pastry, etc.);
- small snacks (tartlets, canapés).
In addition to the given recipe, there are still dozens of different ones. But we would recommend starting specifically with the traditional one. And then you can experiment with tastes, smells, or even try to invent your own unique mulled wine. There are no creative boundaries.
Fundamentally! If you don’t want to find the ingredients separately, we recommend purchasing a ready-made “Mulled Wine” set of herbs and spices. It contains everything you need to make delicious mulled wine.

How to make mulled wine: a traditional recipe
Traditional mulled wine is prepared on the basis of reddish wine - it is better to choose dry or semi-dry. To make it you will need:
- a bottle of wine;
- 2 cinnamon sticks;
- 4–5 clove buds;
- 1 tbsp. l. sugar (if you like sweet drinks, you can add more);
Optional: ginger, star anise, zest.
To prepare mulled wine, you need to mix wine, spices and sugar in a saucepan and heat over medium heat to 70–80 degrees. Even if you don’t have a temperature indicator, this moment is easy to find by eye: steam starts coming out of the wine, and a little later the first bubbles appear. You should not bring the mixture to a boil, otherwise some of the alcohol may evaporate and the drink will not be as rich. Remove the pan from the heat, cover and let sit for at least 5 minutes. Before serving, mulled wine must be strained so that pieces of spices do not float in the drink.
How to create non-alcoholic mulled wine
Mulled wine does not necessarily have to be alcoholic - there are many options for those who do not like or do not drink alcoholic beverages at all. Typically, non-alcoholic mulled wine is prepared from various juices - apple, cherry and, of course, grape. The extreme option seems to me closer to the unique taste of mulled wine. To make it you will need:
- 1 l. dark grape juice;
- 1 cinnamon stick;
- 3 clove buds;
- 3 slices (circles) of fresh ginger;
- 1 orange.
Optional: star anise, dark peppercorns, honey (add at the very end if you like it sweeter).
The manufacturing process is almost the same as in traditional mulled wine. Pour the juice into the pan, add spices and sliced orange. You can mash the orange a little so that it releases the juice. Remove the pan from the heat, without bringing it to a boil, and let it brew. Before serving, do not forget to strain the drink.
How to make mulled wine with orange
Orange makes the drink the juiciest and least strong, and also looks unsurpassed! To prepare orange mulled wine: you will need:
- 1 bottle of reddish wine;
- 2 oranges;
- a couple of lemon slices;
- 2 cinnamon sticks;
- 7-8 clove buds;
- 3 tbsp. l. honey
Optional: star anise, ginger, dark peppercorns.
To make orange mulled wine, you need to cut the orange into slices, put it in a pan and mash so that it releases the juice. At this step, I advise you to set aside a couple of orange slices to decorate the glasses. Add wine, spices and lemon slices to the pan with oranges, place the pan over medium heat and heat to 80 degrees. Let the consistency brew under the lid. When it has cooled slightly, add honey, strain the drink and serve!
How to make mulled tea
Mulled wine is not a drink for every day. For those who love its taste, there is a candidate: mulled wine-flavored tea. This drink contains neither wine nor juice, but thanks to the addition of spices, its taste is reminiscent of real mulled wine. Ingredients:
- dark tea;
- 1/2 orange;
- 1/2 lemon;
- cinnamon;
- carnation;
- honey.
Pour hot water over dark tea. Add a couple of slices of orange and lemon or the juice of half any fruit, as well as spices, to the teapot (or directly into the cup). Let it brew. Before use, add honey to taste.
For tea lovers, I also recommend the publication that I wrote in the beginning:
It seems to me that almost all of the recipes will be relevant in the winter
How to create mulled wine in 5 minutes
From time to time you want mulled wine, but there is absolutely no time to stand at the stove and conjure with spices. What should we create? In this case, I advise you to purchase a ready-made set of spices for mulled wine.
The production method is simple: pour the wine into a pan, add spices from a bag and heat to 80 degrees. The whole process will take no more than 5 minutes. Usually detailed {instructions} are indicated on the bag itself - I won’t duplicate it. The main thing is, don’t forget to strain the finished drink.
In the end, I would like to say that these recipes are not bad as a base, but do not be afraid to experiment and change them to your own taste. Try brewing mulled wine with snow-white wine instead of red wine, add tangerines instead of oranges, remove cinnamon if you don’t like it, and add vanilla if you want something sweeter. It may not be traditional mulled wine, but the main thing is that you will like it specifically.
I hope you will need my recipes. Thank you for your attention to my publication!

Dear guests and regular guests of our Web Cafeteria!
It’s winter outside, snowy and cool, real Russian! And it seems that she feels like a mistress and makes certain adjustments in our lives! Due to snow drifts, federal highways (Trans-Caucasus Highway, Ural Federal Highway) are blocked, almost all flights are delayed and school classes are canceled due to bad weather. Unprecedented snowfalls bring so much snow that the roofs of buildings cannot withstand.
In such weather, cafes and restaurants serve hot alcoholic drinks - mulled wine. Maybe our establishment is not so decent compared to a restaurant, but we decided to support this glorious tradition. And we made mulled wine for our guests from reddish dry wine (we enclose the recipe for making it).
The very first recipe for mulled wine “came” to us from Old Rome. True, the wine was not heated then, there was no need for this (the climate was very warm, Mediterranean), they simply added fragrant spices to it. This drink was not very popular at that time. In the Middle Ages, mulled wine came to the Scandinavian Peninsula. And then a hot spicy drink with alcohol captured everyone’s love. It was cooked at home, especially in winter! Not a single Christmas market would be complete without it! And several centuries later, the warming drink became known throughout Europe. And they prepared it even in countries with warm climates.
The recipe for making mulled wine is completely ordinary. You can enjoy yourself with hot wine flavored with spices without leaving your home. To do this, you don’t need to go to a cafe or restaurant at all. You just need to know certain aspects. This is what we will tell you about at the moment.
1. According to the traditional recipe, mulled wine is made from reddish wine. A reddish table wine, dry, semi-dry, semi-sweet or sweet wine is ideal. Not the most precious, for example: Khvanchkara, Cabernet, Kagor, Kindzmarauli. Fortified wines are not appropriate here because when heated, they will certainly release a pungent odor of alcohol, which will overwhelm the smell of spices and spoil all the pleasure of mulled wine.
By the way, you can prepare a warming drink from snow-white wine. But then more sweet sand will be needed, because snow-white types of wine have significantly higher acidity.
2. Under no circumstances should wine be brought to a boil! Heat it to a maximum of 70 degrees, stirring occasionally. If the recipe uses water, then add all the spices to the water and boil the solution. They leave it for some time, filter it, and then add wine. If necessary, reheat again (this time with wine), add sugar or honey, lemon slices. If the recipe calls for heating the wine, then at the first bubbles with steam appearing, you need to remove the container from the heat before it has time to boil.
3. The spices in the drink are very different, depending on your own taste: cinnamon and cloves, cardamom and dark pepper, ginger and nutmeg. But the most common is mulled wine with cinnamon. In addition, you can add your favorite fruits to this drink. But here it is important to understand that store-bought fruits (oranges, lemons, apples) are often treated with wax or polymer film so that they retain their presentation for longer. Well, we know how to get rid of wax. To do this, you should hold the fruit in warm water for 3-5 minutes, but it is impossible to simply remove the polymer film at home. Therefore, it is better to add only the pulp of such fruits, without the skin, to mulled wine.
4. It is not recommended to reheat mulled wine. With all this, all the taste and smell of the drink disappears. It is prepared in small portions so that you can drink it right away. As needed (if suddenly there is not enough for the whole company), mulled wine is made again.
5. There is a non-alcoholic mulled wine option. Apple or grape juice is used as its base. Everything else is done according to the recipe for an alcoholic warming drink.
6. It is necessary to prepare mulled wine in enamel or glass containers to avoid unnecessary chemical reactions from the contact of different metals with the wine.
7. What to eat with mulled wine? Typically, dry cookies, pies and unsweetened fruits are used as snacks. You can drink mulled wine with meat dishes. In Germany, by the way, they drink this drink right on the street. Together with sausages or shish kebab, cooked on the grill.
Mulled wine is a beautiful drink for a Christmas party or winter picnic. Making it is a creative and exciting process, so we begin to create mulled wine from reddish dry wine according to our recipes.

Mulled wine as it is
To make this wonderful hot drink, reddish dry or semi-dry wines are used as a standard. Some recipes contain cognac or rum. If you still have to use crushed spices, then they must be put in a gauze bag or in a linen bag (the structure of tissues of living organisms is studied by the science of histology) and placed in a saucepan. When the drink is ready, remove the bag and throw it away.
7. When making mulled wine with water, remember: water should not be more than one fifth of the total size of the drink.
8. Water is poured in carefully - in a thin stream along the wall of the container.
9. Before drinking mulled wine, be sure to strain it.
10. The drink is never reheated.
