Greetings to all readers of the magazine! Now we are preparing chicken soup with rice and potatoes according to the usual recipe. This is a very tasty, soft, airy soup that even an inexperienced housewife can easily prepare. Although, to make a decent dish, you literally need to know what kind of rice is best to cook, what kind of chicken to eat, how best to cut vegetables. Therefore, I propose to analyze all aspects of production together.

From the very beginning you need to decide on the chicken. To cook a tasty broth, it is best to use a rustic carcass. If there is no such ability, we will buy a carcass already cut into pieces in the store. Prepared without potatoes. First, boil the chicken and remove it from the pan. Dip the rice into the broth and after 7-8 minutes add the fried onions and carrots. Then bring to a boil and slowly pour in 2 raw eggs, stirring evenly. We cut the boiled leg into pieces and put it back into the dish. Add fresh herbs. The result is an unusual egg version. Try it, it's delicious.

Creamy soup is very tasty! First, prepare everything according to the traditional recipe, then mix 1 tbsp in a frying pan. l. flour, 1 tbsp. l. butter and a glass of milk, warm it up and slowly pour it into the pan with the soup. The mass will immediately thicken, become lighter, richer and softer. Add green onions and dill for flavor. It will turn out very tasty! I like creamy soups, they are rich and filling.

  • With mushrooms

If you add mushrooms to chicken soup with rice, you will get the most intense smell and unusual note. Mushrooms must be fried in butter and spices in advance, it will be even tastier. I like it best with fresh forest mushrooms, but if you don’t have them, then champignons or oyster mushrooms are also suitable. Decorate the serving with parsley, it will add freshness, smell and a beautiful greenish color.

  • With vegetables and chicken meatballs

We prepare minced meatballs from all the trimmings from the chicken. This is a labor-intensive process, and if you don’t want to bother, you can prepare minced chicken breast or simply purchase it. It's comfortable and even faster. Boil the potatoes with rice, add the fried vegetables, and when everything is boiled, add the meatballs and simmer for another 10 minutes. The chicken meatballs vary in softness, just like the rest of the soup. Let's add herbs and spices for emphasis, let it brew for a while and enjoy the hot dish.

  • With egg and spinach

We will cook it like chicken soup with eggs, and later we will add washed and chopped spinach. The dish will acquire wonderful color and freshness. The savory soup will be even more useful thanks to spinach, because everyone knows the “power” of this delicious herb.

Useful tips

  1. Before eating, rice must be washed in “7 waters”, so it will be cleaner and will not stick together.
  2. To ensure the broth is clear, skim off the foam.

    Culinary process step by step:

    1. The chicken meat is washed, placed in a pan and filled with water. They put it on fire. For the best taste, you can add a bay leaf, half an onion, and a few dark peppercorns to the meat. Cooking time after boiling: from 40 to 60 minutes. (depending on the size of the pieces).
    2. While the broth is cooking, peel and chop the vegetables. Carrots can be grated using a grater with large holes.

    2. Carrots and onions are prepared for sautéing: peeled and chopped.
    3. The bubbling broth is salted and washed rice is poured into it. While it is cooking, vegetables are fried in a frying pan. Break the eggs into a separate bowl and lightly beat them until smooth water is obtained.

    Chicken soup with rice and potatoes will turn out even more satisfying and tastier if you add vegetables to it - bell peppers, tomatoes and beans.

    For the first course you will need:

    • chicken meat – 400 g;
    • potatoes – 2–3 pcs.;
    • rice - 3-4 tbsp. l.;
    • tomato – 1 pc.;
    • beans (it is better to take reddish ones) – 2–4 tbsp. l.;
    • garlic – 3 cloves;
    • bell pepper – 1 pc.;
    • carrots – 1 pc.;
    • onion – 1 pc.;
    • herbs, spices, salt - to taste;
    • vegetable oil for sautéing;
    • water – 2–2.5 l.

    Culinary process step by step:

    1. To obtain the broth, boil the chicken (45–60 minutes).
    2. The beans should be cooked ahead of time. Before making it, it is soaked for 4-6 hours and set aside for a while - it will be useful in the final step. After boiling, it will cook for about 1 hour.
    3. The rice is washed. All vegetables are peeled and cut into strips or pieces. It is better to cut the bell pepper into small pieces or narrow strips.
    4. Onions and carrots are sautéed in a frying pan. When the vegetables are fried, they are transferred to a separate bowl.
    5. Squeeze 2 cloves of garlic into a heated frying pan through a press, add pieces of tomatoes, fry over medium heat for 1 minute, stirring constantly. Then they send bell pepper there too. Make sure the vegetables don't burn. Fry for another 2–4 minutes, after which turn off the heat.
    6. The finished meat is removed from the pan, allowed to cool, and then cut into pieces.
    7. The broth is salted. Place rice and potatoes into the pan. Cook for 7 minutes.
    8. Then add bell peppers and tomatoes. After 3 min. – onions with carrots. Pepper and season with spices. The remaining clove of garlic is squeezed through the press.
    9. After 6 min. Turn off the stove and add chicken and boiled beans to the pan. Sprinkle the soup with fresh herbs.

    3. Rice is poured into the bubbling broth. Salted. Cook for 10–12 minutes. Transfer the fried vegetables after 5-7 minutes. they will be ready. Pepper and season with spices.
    4. Melt butter in a separate saucepan and add flour. Mix thoroughly. After 2 min. pour in milk and mix again. Wait for the mixture to warm up. Remove from heat.
