  1. In the first step, we will start making lean shortcrust pastry. Lightly melt the margarine and beat it with a mixer with vegetable oil and sugar.
  2. You will end up with a shaggy mixture, into which you need to add baking soda, mixed with orange juice in advance. By the way, this mixture will serve as an additional leavening agent for the dough, because when mixed, a reaction will occur and gas bubbles will be released.
  3. In a separate bowl, mix all the flour, cocoa powder and baking powder.
  4. Pour in the cognac, whisk everything again and begin to slowly add the flour and cocoa. Add in small portions, stirring immediately.
  5. When you dump out the last glass of flour, I advise you to work with your hands and not with a mixer - the dough will already be quite thick and dense.
  6. All that remains is to add nuts to the dough (cut them finely), grated chocolate and stir the dough well again.
  7. Now let’s move on to shaping the cookies specifically: pinch off a piece, roll it into a ball no larger than a walnut, press it with your palm so that it flattens.
  8. Make a small depression in the center with your finger - we will pour chocolate into it when we start decorating the baked goods.
  9. While you are forming the cookies, warm the oven to 180 o C. Place the pieces on a baking sheet lined with parchment and place in the oven for 30 minutes. When the smell of baking spreads throughout the apartment, this is a signal that the cookies are ready.
  10. Decorate the baked goods only when they have cooled down. Melt the chocolate using any method and pour a small spoon into each cavity on the cookie.

Lenten cookies - recipe made from oatmeal with honey
