Cottage cheese Easter with raisins and dried apricots without baking - the usual traditional recipe
Let's start with the usual ceremonial cottage cheese dish. To make Easter delicious, pay attention to the choice of dried fruits. It is better to take dried ones with a soft texture; if they are a little dry, soak them in warm water. If you like the sweetest cottage cheese, add honey or sweetener to taste.
To make Easter, we will need an immersion blender - it will make the cottage cheese soft and remove the smallest lumps, the presence of which in almost everything describes the taste of the future Easter.
If you don't have a blender, rub the cottage cheese through a fine sieve 2-3 times.
It will take a little more time, but in the end the cottage cheese dish will turn out just as worthy in its own structure.
What will be useful:
• 350 g of fresh cottage cheese;
• 2 tbsp.
l sour cream (10% fat); • a handful of dried apricots;
• a handful of seedless raisins;
• a handful of prunes;
• a handful of walnuts;
• sweetener or honey (amount to taste).
How to cook:
– combine cottage cheese, sweetener and sour cream and beat with a blender until smooth
To replace sour cream, you can use coconut oil or butter.
– use a sharp knife to chop the dried fruits and nuts, then add them to the curd mass and mix well, trying to moderately distribute the “filling”
– cover the Easter form with gauze, lay out the prepared mass and place a press on top of it, after which we put it in the refrigerator for at least 12 hours, or better yet for a day
– remove the finished cottage cheese Easter from the mold and proceed to serving, decorating if desired with grated chocolate, chopped pieces of dried apricots or chopped nuts
Cottage cheese Easter perfectly holds its given shape, looks indescribably aesthetically pleasing and very appetizing. Be sure to try to cook it - this dish will probably become one of your favorites (and maybe not only on holidays!).
How to make royal Easter cottage cheese with chocolate
Let’s move on to the “striped” dessert, which will be especially appreciated by lovers of chocolate and rich creamy taste. This is a two-color Easter made from cottage cheese - beautiful on the outside and incredibly tasty on the inside. Royal Easter is being prepared just as quickly as the traditional version (you will see for yourself in the process).
For production, I recommend choosing cottage cheese of medium fat content. Pay attention to the freshness of this product - it should not contain coarse and dried pieces, otherwise you won’t get a gentle structure.
What will be useful:
• 350 g of fresh cottage cheese;
• 50 g butter;
• 3 tbsp.
l. sweet powder; • 50 g walnuts;
• 85 g bitter chocolate;
• 100 ml. new cream.
How to cook:
– break the chocolate into small pieces, add 30 ml of cream and place in a water bath until completely dissolved, after which we let it cool slightly
– chop the nuts with a knife
– rub the cottage cheese through a fine sieve (or use a blender), after which we divide the mass into 2 equal parts parts
- add 35 grams of cream to the first part, also half the size of butter (softened) and sweet powder
The powder can be replaced with honey or any sweetener.
– beat all the ingredients with a blender or mix with a spatula, but do it carefully
– add melted chocolate, remaining butter, cream and sweet powder to the second part of the curd mass – mix everything carefully
– mix both parts of the curd mass with nuts
You can replace the walnuts with hazelnuts, add almonds or lightly roasted peanuts. Regardless of the type of nuts, the aftertaste will be very pleasant - you won’t have to hesitate!
– line the Easter pan with gauze previously soaked in water and wrung out. Now spread the cottage cheese, alternating light and black layers
– cover the outermost layer with the ends of gauze, place a press on top and put the Easter in the refrigerator for a day (or for at least 12 hours, so that the mass “sets”)
– take the finished Easter out of the mold, put it on a ceremonial dish and serve it perfectly.
Dietary Easter made from cottage cheese with gelatin
Using recipes for proper nutrition, any festive table can be made both tasty and immediately healthy - another Easter is proof of this. But, since the treat will be dietary, it is better to choose cottage cheese with a maximum of 5 percent fat content.
According to Russian traditions, Easter cottage cheese is prepared in special pyramid-shaped bowls, but if you are making this dish for the first time and there are no suitable tools in the kitchen, use an ordinary round salad bowl. The finished Easter will take the shape of a hemisphere, which will perfectly complement the festive table.
A special point from the video: dissolve gelatin in slightly heated kefir! If you accidentally overheat it in the microwave (and this is very easy to do - you just have to turn away, and an extra 10 seconds will instantly force the drink to boil), the gelatin will lose its thickening function, and the Easter risks losing its shape.
Feel free to prepare three recipes at once and be convinced that one serving will literally not be enough for you. The cottage cheese treat is the very first to be eaten - it comes out so tender, light and moderately sweet that it is simply impossible to resist. Definitely give it a try. By the way, Easter in 2019 will be on April 28. Have a bright and delicious holiday everyone!

Baked cottage cheese Easter
Where my grandmothers and great-grandmothers live, it is customary to prepare Easter cottage cheese not raw, but baked . Naturally, I slightly modified my grandmother’s usual recipe for PP - everything is prepared without sugar, without flour . It’s just a pity that there is no Russian oven, and it comes out very tasty in the oven!
What is necessary:
- 0.5 kg soft, non-sour cottage cheese
- 100 ml heavy cream (30%)
- corn starch - 0.5 tbsp.
- honey - 3-4 tbsp.
- nuts, raisins, dried berries - only about 3/4 tbsp.
- eggs - 5 pcs. (only 2 yolks!)
- zest of a medium-sized orange
- a pinch of vanillin.
Let's prepare it step by step:
- We turn the cottage cheese into a homogeneous mass in a blender or meat grinder. Grandma once grinded it through a sieve - it took a long time, but there were no gadgets. Add cream and mix the mixture thoroughly.
- We prepare nuts and dried fruits: wash them, soak them if necessary, and cut them into small pieces.
- Wash the orange in hot water and put all the orange zest on a small grater.
- Mix the curd mass with zest, nuts, fruits, honey, vanilla. If the honey is candied, melt it in a water bath.
- We divide the eggs into whites and yolks. Beat the yolks until snow-white and immediately pour them into the cottage cheese.
- We try to beat the whites until fluffy. If it doesn’t reach the “standing peaks,” it’s not scary. At the very end, add the starch evenly, without ceasing to beat.
- Now you need to carefully mix the curd and protein mass. Don't be overzealous! Just stir it down with a spoon.
- Pour the liquid, fragrant dough into any mold (it’s convenient to bake in silicone, then you don’t have to grease it), filling it halfway. The cottage cheese baked Easter will rise in the oven, but will later settle, which is why it is not allowed to pour the full form - you need to leave space so that the dough “walks”.
- The top can be greased with a little beaten yolk.
- Bake for 40 minutes at 180 degrees. Then turn off the oven and let it sit for another 15-20 minutes. We take it out, cool it, and only after that we carefully release it from the mold and decorate it as we please.
Baked Easter recipe
Low-calorie cottage cheese cake is easy to prepare in the oven. We'll tell you step by step how to create this. The components are all permitted, PP-shnye . If you have a bread machine, the manufacturing process is simplified many times over - then the entire process (kneading, “rising” of the dough, baking) takes place in this accessory!
It will be necessary:
- whole grain flour - 2 tbsp.
- cottage cheese - 1 tbsp.
- ripe banana - 1 pc.
- dry yeast - 1.5 tsp.
- water - 50 ml
- whey - 1 tbsp.
- honey - 3 tbsp. l.
- raisins - 100 g
- salt - 1/2 tsp.
- Valilin - on the tip of a knife.
- nuts for sprinkling - half a glass.
Manufacturing:
- Dissolve the yeast with a small amount of water. Wash the raisins and soak in hot water for 5-10 minutes.
- Peel the banana and mash it into a puree with a fork.
- Heat the whey to 35-37 degrees. Let's dilute salt and honey in it.
- Add whey, banana, cottage cheese, and diluted yeast to the sifted flour. Salt the water with the raisins, dry them with a cardboard towel, add them to the dough. Knead thoroughly.
- Cover the dish with the dough with a napkin and place it in a warm, draft-free space.
- Over the course of 2 hours, knead the dough at least 2-3 times.
- Divide the finished dough into parts and place in prepared pans. Let it rise and place it in an oven preheated to 180 degrees. Baking time will depend on the size of the molds, on average 40 minutes. If your oven “cooks” the top, immediately place a piece of foil on the pan.
- Take it out, lightly brush the hot paska with egg white and sprinkle crushed nuts on top.
