There is no doubt that compotes made from various berries are the most popular drinks in home cooking. They attract not only with the simplicity of the manufacturing process, but also with their special taste properties. In addition, you can cook virtually any compote every year, and not just during the harvest period, because it is always possible to purchase frozen or dried berry products. Any type of berries allows you to prepare unique drinks with their own unique taste and beneficial qualities, but there are always the most preferred options. These include a wonderful chokeberry compote, which obviously has no equal competitors.

Chokeberry is native to North America and its real name is Aronia chokeberry. It is striking that it belongs to the Rosaceae family and has no relationship with the ordinary rowan, although the fruits of both plants are very identical.

The nutritional value of compote is presented in the table:

Useful Features

Compote from chokeberry has the following qualities:

  • Will reduce cholesterol levels (Insoluble in water, soluble in fats and organic solvents.) .
  • Will be able to restore the functioning of the gastrointestinal tract (the gastrointestinal tract is the digestive system of the organs of real multicellular animals, designed for processing and extracting nutrients from food) .
  • It will remove possible accumulations of heavy metal residues and traces of certain radioactive substances from the body.
  • Improves liver functioning.
  • Acts as an effective choleretic agent.
  • Will bring the blood pressure back to normal.
  • Increases immunity.

Chokeberry compote, along with its beneficial qualities, also has contraindications.

Contraindications

But this drink is not useful for many people, and there are some restrictions on its use for a certain group of people. Unfortunately, chokeberry compote is unacceptable to consume if you have a number of ailments. These include:

  • Gastritis.
  • Thrombophlebitis.
  • Ischemia (Ischemia (lat. ischaemia, - delay, stop - blood) - local anemia, often caused by a vascular factor (narrowing or complete obstruction of the lumen of the artery) , leading to temporary dysfunction or permanent damage to the tissue or organ) .
  • Inflammation in the gastrointestinal tract (the gastrointestinal tract is the digestive system of the organs of real multicellular animals, designed for processing and extracting nutrients from food) and the presence of peptic ulcers.
  • Varicose veins.
  • Increased blood clotting (internal environment of the human and animal body) .

The absence of similar ailments makes it possible to quite frivolously begin making not only the most delicious, but also truly medicinal compote. But in order for the drink to please even the most unique gourmets, at a minimum, some culinary tips should be taken into account.

Cooking tips

The suggested tips are very ordinary, but they are guaranteed to help you prepare the most worthy chokeberry compote. So:

  • Only high-quality fresh, dried or deep-frozen fruits are suitable for the drink.
  • The recommended amount of sugar is not constant. Its share in the drink can be completely changed at your own discretion. But for chokeberry, on average, about 500 grams of sugar is recommended for any liter of water used for compote.
  • You can brew the drink without any sugar at all, and then sweeten the finished compote, taking into account everyone’s personal preferences.
  • Added lemon juice will certainly help preserve maximum vitamins, and just one sprig of mint will add a refreshing note to the compote.
  • When chokeberry is consumed frozen, there is no need to defrost it at all. In this case, the frozen fruits are immediately thrown into boiling water, in other words, without any defrosting.
  • But dried chokeberry fruits will have to be soaked beforehand until they are completely softened.
  • The prepared drink must infuse for a certain time. Usually, thirty to forty minutes are enough for this.

The drink is prepared very simply. Chokeberry compote usually works well even with inexperienced housewives.

You can safely choose any recipes, because they are very identical, but it is preferable to pause your own choice on fairly ordinary options.

Recipes

The most delicious chokeberry compote is guaranteed to be obtained according to the most common traditional recipe.

Traditional compote

You will need a couple of minutes of time and only three ingredients to prepare a wonderful drink not only for immediate consumption, but also to use it as a preparation for the winter.

  • chokeberries – 400 g;
  • sugar – 2 cups;
  • water – 2 l.
  1. The chokeberry fruits are freed from the branches, sorted out, washed, placed in any bowl and poured with boiling water for three minutes. This technique will soften the taste of the berries and reduce their astringency.
  2. After this, the water is combined, and the berries are placed in a three-liter jar sterilized in advance.
  3. Then the water is boiled and ordinary sweet syrup is boiled in it for about 5 minutes.
  4. Then the contents of the jar are filled with the prepared hot syrup.
  5. At the end, the can is twisted, turned over, cooled and sent off to a cold storage space.

Sugar free option

For baby food, a slightly different version of compote without the use of sugar is most suitable, because a child does not need excess sugar.

For such a compote, about 500 grams of chokeberry fruits are prepared using a slightly different method. They are sorted, washed, filled with water and left alone for a day. Then the water is combined and the berries are refilled. A similar soaking function must be done within 3 days.

  1. The cooked berries are drained of extreme water, and then they are placed in a clean, sterilized jar.
  2. Then approximately two liters of water are boiled and the chokeberry fruits placed in a jar are poured into it.
  3. All that remains is to roll up the jar, turn it over, cool the contents and send the medicinal chokeberry compote into a cold space.

Option with cherries

Chokeberry mixes well in compotes with almost all varieties of berries or fruits, for example, cherries. For such a compote, it is better to use large red or yellowish cherries.

  • chokeberries – 250 g;
  • cherries – 1 kg;
  • sugar – 1 glass;
  • water – 1.5 l.
  1. The selected chokeberry must be kept in boiling water for at least 3 minutes.
  2. Then the boiling water is combined, and the berries are placed in a properly prepared ordinary three-liter jar.
  3. Next, the sorted and washed cherries without petioles go into the jar.
  4. Then the usual hot syrup is boiled for a couple of minutes, which needs to be poured over the berries already placed in the jar.
  5. After this, the jar is rolled up, turned over, and cooled naturally. Store the cherry and chokeberry compote for storage.

With raspberries

  • chokeberry - 1.3 kg;
  • sugar – 0.8 kg;
  • raspberries – 700 g;
  • water – 2.4 l.
  1. Prepare chokeberry: sort, remove from branches, soak, wash, dry. Sort the raspberries, but do not wash them.
  2. Boil water in a saucepan and place raspberries and chokeberries in boiling water. Then catch them with a slotted spoon and transfer them to cool water or ice to cool.
  3. Boil syrup from 2.4 liters of water and 0.8 kg of sugar. To do this, pour water into a saucepan, immediately pour out the sugar and put on fire. After boiling, cook for 5 minutes.
  4. When the berries have cooled, place them in sterilized jars, pour hot syrup over them and roll up. Turn over, wrap and cool. Take it to the cellar for storage.

With apples

  • chokeberry - 600 g;
  • sugar – 600 g;
  • apples – 600 g;
  • lemon juice – 50 ml.
  1. Sort the rowan, remove the branches, wash and dry.
  2. Wash the apples, cut out the core, cut into quarters or smaller, depending on the size of the fruit.
  3. Place berries and pieces of apples in a sterilized jar, pour boiling water to the very top, cover with a lid and let stand for 5 minutes.
  4. Then pour the water into a saucepan, put sugar in it, stir and cook for 5 minutes after boiling.
  5. Pour syrup over apples and chokeberries, roll up with tin lids, turn over and leave until cool.

The simple recipe versions presented above are guaranteed to serve as a good basis for creating your own versions of wonderful drinks, which will allow you to prepare a unique chokeberry compote with the appropriate flavor notes.

Useful tips

Tip 1

To remove the snow-white coating from the surface of the berries, which contains tiny pathogenic organisms that cause fermentation and lead to spoilage of the compote, you need to pour the collected berries with cool water and leave for 6 hours. Change the water from time to time.

Tip 2

If the compote seems very concentrated, it can be diluted with boiled water.

Chokeberry compote: the best recipes

Chokeberry or chokeberry often grows in summer cottages as an ornamental plant. It usually bears fruit intensively with black astringent but sweet fruits, which are occasionally used as food or for preparations. Although the fruits of this shrub are very healthy and quite tasty. Now we will talk about how to make chokeberry compote and look at several successful recipes.

Which berries are suitable for compote

Chokeberry is a very useful berry. It contains a large number of different vitamins and minerals that the body needs for real work, so you shouldn’t ignore chokeberry. If you don’t want to eat it fresh, making compote would be a good solution. Depending on the recipe, the drink will be slightly strong, moderately sweet and reminiscent of Coca-Cola. The kids will appreciate it.

The highlight of chokeberry is that its berries can be picked until late dawn, right before the first frost and snow. It should be noted that they ripen quite late. Before the end of September, you shouldn’t even try to collect the harvest.

Due to this individuality, chokeberry berries are perfectly preserved during long-term storage or freezing. For compote, you should choose perfectly ripened and unspoiled berries. Although the extreme ones are rare. The berries must be sorted from twigs, leaves and other debris, thoroughly rinsed and dried on a towel.

You should prepare jars for compote in advance. They need to be carefully washed with baking soda in hot water, and then doused with hot steam or sterilized in a special device. The lids should also be treated. Also prepare a saucer or plate on which the jar can stand freely. You will understand why this is necessary later.

Chokeberry compote: production method

Chokeberry compote can have different compositions and end up with different flavor colors. But the principle of making compote remains similar. Therefore, we will first analyze the method of making a tasty drink, and later we will look at what specific ingredients can be combined with each other. It should be noted that two of them will remain unchanged: sugar and chokeberry berries.

  1. We take berries and other ingredients, selected in accordance with the recipe, not counting sugar, and place them in a jar prepared in advance about a quarter of the total volume.
  2. Boil water in a saucepan at the rate of 3 liters of water per three-liter jar. All the water won’t fit, because we already have berries in the jar. But we need a small supply left.
  3. Place the jar on the prepared plate and pour boiling water into it to the brim until it overflows slightly. The plate will collect the water and prevent it from spilling. To avoid unpleasant situations, pour hot water not on the glass, but on the berries. Otherwise, the bank may burst.
  4. Cover the jar with a lid and leave the preparation for 15 minutes.
  5. After the designated time has passed, pour the water back into the pan and bring to a boil again. It is most convenient to drain the liquid through a nylon cap with holes.
  6. While the water is boiling, pour sugar into the jar. Fill it with bubbling water until it overflows slightly and immediately screw it on or roll it up with a steel lid.

Then the jar of compote needs to be turned upside down and wrapped until it cools completely. Then you can send the finished drink for storage in the cellar or mezzanine. Chokeberry compote is ready.

The best compote recipes

Above we looked at the principle of making chokeberry compote. It should be noted that the method is universally applicable and is suitable for any compote of berries and fruits. Now is the time to look specifically at the recipes that make the drink especially tasty, fragrant and healthy. All recipes' ingredients are based on a three-liter jar of compote.

Chokeberry with lemon

This recipe differs profitably from others. It is as simple as possible, requires a minimum of ingredients and unsurpassedly reveals the taste of chokeberry, while lemon softens the astringent effect of the berry.

  • Chokeberry – 400 gr.
  • Sugar – 1.5 cups.
  • Half a medium sized lemon.
  • Water – 3 liters.

You can cut the lemon in half and put it in the first fold with all the ingredients, or squeeze the juice out of it and add it in the second part, before twisting.

Compote with apples

Another variety of this blank. With all this, experienced housewives recommend taking specifically sour varieties of apples; they, combined with the sweetness of chokeberry, give a great effect.

  • Chokeberry – 300 gr.
  • Sugar - 300 gr.
  • Sour apples – 300 gr.
  • Lemon, small – 1 pc.
  • Water – 3 liters.

Before placing in a jar, apples should be cut, cored and sprinkled with lemon juice to prevent them from darkening. The lemon in the recipe is needed specifically for squeezing the juice that the apples need.

“Cherry” chokeberry compote

This is one of the best recipes used by inventive housewives. Chokeberry compote is indescribably tasty and has an inimitable cherry smell. By the way, almost all the uninitiated will not understand that the main component of the drink is still chokeberry.

  • Chokeberry – 600 gr.
  • Sweet sand – 500 gr.
  • Cherry juice – 1 glass.
  • Cherry leaves – 10 pcs.
  • Water.

It is best if the leaves were harvested in the spring, while the cherry tree is in bloom. Then they are the juiciest and most fragrant. But if there are none, then freshly picked ones are completely suitable. Before making, half the leaves need to be filled with water (2 cups is enough) and boiled for 5 minutes. Then pour into a jar of berries and leave for 8 hours. It is better to create this the night (that is, the dark time of day) before the day of production. Then drain the liquid into a saucepan, add other leaves and pour in cherry juice, boil for about 5 minutes. I pour sugar into a jar with berries and pour the bubbling substance over it. Roll up and turn over, wrapping until cool.

Benefits and harms of chokeberry compote

Aronia chokeberry is the botanical name for the chokeberry. Lush bushes of medium height, abundantly hung with purple-black clusters, can be found in the front gardens of the Middle Zone.

Chokeberry ripens late - at the end of September. The longer the berries remain hanging on the branches, the sweeter they are. From them you can create a fragrant compote, which in winter will become a true treasure trove of vitamins (C, A, P, B, E, K, PP) and essential microelements (iron, fluorine, copper).

The drink improves heart function and blood circulation (blood circulation throughout the body) , lowers blood pressure, restores cholesterol levels (Insoluble in water, soluble in fats and organic solvents.) , removes toxins from the body (Ancient Greek toxin (toxikos) - poisonous - a poison of biological origin) , increases immunity, helps with kidney diseases, gallstones, rheumatism, gastritis.

True, such a compote is not recommended for use by people with a high prothrombin index. It increases blood clotting (internal environment of the human and animal body) . Chokeberry is contraindicated for people with low blood pressure because it can lower it even more. It should not be consumed by patients suffering from stomach ulcers.

Individualities of making a drink from chokeberry

For production you will need sugar, a little lemon juice and the berries themselves. The color and taste of the preservation resembles Coca-Cola. The components for twisting are selected mature, without wormholes or damage. Compote is usually sealed in 3-liter jars. It is prepared in a large enamel pan. For one 3-liter jar you will need 2.5 liters of water and 0.5 kg of raw materials.

First the syrup is made. For 1 liter of water take from 0.3 to 1 kg of sugar. This filling is enough for a glass of raw materials. Place the pan with the liquid on the fire, and when the water boils, add sweet sand. The berries are blanched in hot syrup for 3-5 minutes, and then they are dumped into a jar and filled with the same syrup.

You can pour the rowan into a pot boiling over a slow fire and throw it there. Then bring the syrup with the berries to a boil again and immediately remove the pan from the stove. The hot drink is poured into jars and covered with lids. If the sugar content is low, add a little citric acid, and the 3-liter jars themselves are pasteurized for 15-20 minutes before closing them with lids.

Cans of preserves can be placed in the cellar (at the dacha or in the garage) or in a cold pantry.

The best storage temperature is 10-20 degrees Celsius. Under these conditions, the twists can be stored for 12 months.

Usually all winter preparations are made for one year. For the next season, the latest preserves are prepared from new ingredients. It is better to put an open can of drink in the refrigerator. You need to drink this compote within one week.

If the liquid is very sweet, it can be diluted with boiling water. The more saturated the syrup is used in the process of making compote, the less likely it is that the juice will ferment and the jar will “pop.”

Secrets of making chokeberry compote - how to cook chokeberry compote

Rowan with dark fruits is called chokeberry or chokeberry. The berries are very useful, but almost all gardeners do not pay enough attention to this crop. Perhaps this is due to a certain astringency of the fruits or to the fact that the chokeberry ripens late (late September), and the main preparations from the fruit crops have already been made. We recommend that you do not lose sight of the fact that chokeberry is very useful and has the ability to lower blood pressure, so you simply need to prepare a compote from it.

Compote can be cooked in a saucepan or a modern assistant - a multicooker. For the winter, compotes are rolled into jars of various sizes. You will learn about all the secrets of making chokeberry compote in our article.

Preparing the berries

First, the mountain ash is removed from the clusters, selecting only ripened and not warped fruits. This process will not take very much time, because chokeberry is a fairly large berry and picks off the branches very well.

The next step is to wash the berries. This must be done in cold water. After the dust has cleared from the fruit, the berries are thrown onto a sieve.

If the compote is planned to be prepared from frozen chokeberries, then no preparatory treatment is required. Aronia is not defrosted before cooking.

Options for making compote

In a saucepan with cinnamon

Add 300 grams of chokeberry, 250 grams of sweet sand and ground cinnamon to 2 liters of bubbling water. One pinch will be completely enough. Cover the container tightly with a lid and cook over low heat for 15 minutes. The compote should also cool under the lid for 3-5 hours. During this period of time it will infuse well, and the berries will release all their beneficial substances into the syrup. The finished drink is passed through a sieve and served.

In a slow cooker from frozen chokeberries

A multi-cooker will help you cope with chokeberries stored for future use. Frozen berries (400 g) are placed in a multicooker bowl. Add half a lemon and 350 grams of sweet sand. Please note that this recipe is for a 5 liter multicooker bowl.

The contents of the bowl are filled with cool water to the top mark. This is approximately 3-4 centimeters from the edge. The lid of the unit is closed and the normal “Soup” mode is set. It usually involves cooking for 1 hour.

If you decide to save time and pour boiling water over the fruits, then the cooking time must be reduced to 20 minutes.

The compote is boiled with the lid closed. It is fundamentally! After the signal that it is ready, do not open the lid, but leave the drink to brew. It is very convenient to prepare this dish in the evening, and enjoy this healthy drink only in the morning. Overnight (that is, in the dark), rowan will give all its vitamins (a group of low-molecular organic compounds of relatively simple structure and varied chemical nature) , and the compote will acquire a catchy, rich taste.

Compote in jars for the winter

Traditional option without sterilization

In this article, we specifically do not provide recipes with additional sterilization of preparations, because it is much easier and faster to make chokeberry compotes for the winter using the double-pouring method.

So, first, three-liter jars are washed and sterilized over steam or another convenient method. Place chokeberry into prepared dry containers so that the jar is filled to one-half the size.

While all the preliminary manipulations are being carried out, water (3 liters) is already boiling on the stove. Pour boiling water over jars of chokeberry and cover them with clean lids. It is very important to fill the jars right up to the neck. The remaining hot water is poured into the sink.

After 10 minutes, work with the workpiece continues. Using a special mesh lid, the water darkened by the berries is poured into the pan. Add 2.5 cups of sugar to it and boil again.

The bubbling syrup is poured over the “rested” chokeberry a second time. Use sterile lids to cover jars of compote.

Tip: Do not tighten the lids right away. It is best to start seaming 5 minutes after the final filling. During this period of time, air bubbles that entered the jar along with the bubbling liquid will rise to the top and this will minimize the possibility of the lids breaking off.

Tightly twisted jars are turned upside down and insulated for a day. If the jars were closed with screw-shaped lids, then there is no need to twist them.

The Bulatov Family Kitchen channel shares with you its recipe for chokeberry compote with citric acid

With apples

The combination with apples for chokeberries is traditional. The compote is twisted using the technology described a little higher. Only the base of the drink changes. Chokeberry is twisted together with apples cut into slices. Read more about making chokeberry compote with apples here.

No less fascinating is the option of twisting chokeberry compote with plums.

With mint

For production of 3 l. For the most delicious drink, you will need 3 glasses of chokeberry, 2 sprigs of mint and 2 two-hundred-gram glasses of sugar. The greens are carefully washed and lightly dried. You can just shake the leaves a couple of times.

The washed berries and mint sprigs are placed in a three-liter jar, which was previously sterilized. Then the products are poured with boiling water, covered with a lid and left for a quarter of an hour.

The fragrant infusion is poured into a saucepan and brought to a boil again. Sugar is added directly to the jar before the final filling. The finished compote is twisted and insulated for 24 hours until completely cooled.

How to store chokeberry compote

A drink brewed in a saucepan or in a slow cooker is stored in the refrigerator for no more than 5 days. Jars of compote, sealed for the winter, are placed for storage in a cellar or basement, where the temperature does not exceed +10ºС.

If, after preparing compotes, there are still a surplus of berries left, then we recommend preparing healing syrup or delicious, tender marmalade from chokeberries.
