Squids have ceased to be a delicacy and at the moment they can simply be purchased in almost any large store. Almost everyone doesn’t like them because they look “rubbery.” To prevent the squid from being hard, you just need to boil it properly. This delicious squid and tomato salad comes together quickly.

Prepare the ingredients needed to make the salad.

Pour water into the pan. Bring it to a boil. Salt the water. Place allspice, bay leaf and peppercorns in water. Let the water boil along with the spices for 10-15 minutes.

Place squid in water with spices and cook for 30-60 seconds (counting from when the water boils). Remove the pan from the heat. Cover it with a lid and leave the squid in hot water for 15 minutes. Then remove the squids and leave them to cool.

Cut the squid into strips.

Cut the tomatoes into strips.

Peel the onion and cut into half rings. It is better to use blue Crimean onions. If you use regular onions, you can marinate them in vinegar for a short time.

Boil hard-boiled eggs. Cut them into strips.

Mix squid with tomatoes, eggs and onions. Salt the salad to taste.

Season the salad with mayonnaise. Stir well. Garnish with tomatoes and herbs.

The striking note in this dish is the squid; it is they that carry the main taste. We cook them for only a few minutes, so their meat in the salad is soft and tender. Tomatoes add pleasant sourness and juiciness. We introduce the freshest note with the help of greenery. So, let's start cooking!

Ingredients for salad with squid and tomatoes:

  • 2 pcs. new tomatoes
  • 2 pcs. chicken eggs
  • 2-3 pcs. squid (depending on size)
  • 1 onion
  • A little vinegar for marinade
  • About ½ bunch of green onions
  • 20 gr. fresh dill
  • 3 tbsp. spoons of mayonnaise

Recipe for making salad with squid, tomatoes and eggs:

1) We choose tomatoes that are not very soft, so that they do not lose their shape in the salad. We wash them in cool water and dry them with a clean towel. Cut out the middle and cut into fairly large cubes. Add the tomatoes and leave them to release their juice. Then we put the tomatoes in a colander - in the salad they should be “vigorous”, without excess water.

Place the tomatoes in a bowl.

2) Place the eggs in cool water and cook for 8 minutes after boiling. Peel and chop into small cubes (you can use an egg slicer). Add eggs to tomatoes.

3) Wash the squid, clean it and only then cook it. Boiled squid will be more difficult to clean, and they may acquire an unpleasant bitterness. To make the film come off easily from the carcasses, we scald them and quickly cool them - all the excess will come off like a stocking. Or we simply clean it under a good stream of cool tap water. Don’t forget to remove the chitinous plates on the backs of the squids.

Boil water in a saucepan, add some salt, and throw squid into it. Cook for 2 minutes, no more, over medium heat.

We take out the carcasses, strain, and set aside to cool.

4) Cut the squid into narrow strips. Mix it with tomatoes and eggs.

5) The line of onions has been established. Finely chop the green onions (several arrows). Beforehand, lightly marinate the onions in vinegar or pour boiling water over them to remove the bitterness.

6) Add both types of onions to the ingredients.

Now wash the dill, shake it well from the water and dry it. Finely chop it and add it to the salad.

Immerse the carcasses of cleaned squid in boiling water for exactly 30 seconds (yes, half a minute is enough for the meat to cook) and, after cooling, cut into strips. Peel the tomatoes from the watery center and cut the fleshy part into cubes. Grate the boiled eggs or cut them into strips. Grate the cheese too, just coarsely. A salty one, for example, Russian, is best suited. Gently mix the salad and season with mayonnaise, adding herbs. Bon appetit!
