Buns with cottage cheese
Everything associated with childhood has a special smell and taste! Both literally and figuratively!
Buns with cottage cheese are a pastry familiar from youth. Even if you didn’t indulge in such buns at home, in kindergarten and school they were served all the time. It was not always possible to taste them hot, and when they cooled down, the buns were tangled up in both cheeks: the most delicate curd inside with the smell of vanilla had no other “prospect”!
Believe me, prepared buns with cottage cheese without the help of others will be even tastier! We will bake them in the form of small roses, which will be especially appreciated by young family members, for whom the appearance of the dish is often more important than the content.
Ingredients
- 200 ml milk
- butter 100 g
- fresh yeast 25 g or dry yeast 2 tsp.
- sugar 100 g
- vanilla sugar 1 tsp.
- egg 1 pc.
- wheat flour approximately 3 cups (500 g)
- yolk for brushing dough
- 400 g cottage cheese with 9% fat content
- egg 2 pcs.
- sugar 150 g
- vanilla sugar 1 tsp.
Production time:
1 hour 20 minutes for kneading, proofing and modeling,
30-35 minutes for baking.
Yield : 15 small buns
Manufacturing
Yeast dough is kneaded using a dough base, so you need to start by making the dough.
Mix half the sugar for the dough, yeast, milk heated to 38-40 degrees (not the most) and 3-4 tablespoons of flour, leave for 15 minutes, covering with a napkin.
While the dough is being prepared, you can prepare the rich component. Melt the butter (you can do it in the microwave), let it cool, mix with the egg, the remaining sugar and vanilla sugar.
During this period of time, the dough will turn into a rather huge foamy “cap”; pour the oil mixture into the dough and mix.
Now, adding about half a glass of flour, begin to knead the dough; you will have to knead first with a spoon, and then with your hands. The dough is ready when it stops sticking to your hands, usually 3 cups of flour is needed.
Cover the dough with a lid, napkin or film and place in a warm space (for example, a bowl of warm water) for 40 minutes.
At this time, for the inside, mix cottage cheese, eggs, sugar and vanilla sugar until smooth.
When the dough for cottage cheese buns has doubled in volume, you can start making rose buns.
Divide the dough into 14-15 similar pieces, roll out any piece into a circle on a floured surface, create cuts on 3 sides. Make the cuts in such a way that the “petals” come out in different sizes – small, medium and large.
Place the filling in the middle of the workpiece, wrap it with the smallest “petal”, secure it, then with the medium and large ones.
Make other roses in the same way, place them on a baking sheet greased with vegetable oil or lined with baking paper, and let rise for another 10 minutes. By this time, the temperature in the oven should already warm up to 200 degrees.
Brush the tops of the buns with yolk using a brush and place in the oven. To prevent the bottom of the roses from burning, it is recommended to place a heat-resistant cup of water on the bottom of the oven.
In approximately 30-40 minutes, the baked goods will be ready!
Remove the buns with cottage cheese from the baking sheet and serve.
The basic recipe can be modified by adding lemon zest, candied fruits, raisins or dried apricots to the filling.

The basic rule when kneading dough is that the butter and cottage cheese must be of exceptional quality.
- Curd buns will turn out fluffy and rosy if you use dry cottage cheese with a fat content of more than 9%. Wet - you need to squeeze it out, otherwise you will have to increase the amount of flour, which will affect the baking properties.
- To ensure that the buns come out tender, the cottage cheese is rubbed through a sieve, and the flour is sifted beforehand.
- The finished dough is allowed to rest and quickly shaped.
- It takes 20 minutes to bake the curd cake.
