  • Potatoes - kilogram.

  • Wheat flour – 100 gr.
  • Butter – 40 gr.
  • Breading – 2 tablespoons.

1. Beforehand, peel and wash the potatoes. Be sure to cook from old food, because it contains more starch. We cut it into four parts, pour in water and put it on the fire to cook until fully cooked.

Potato zrazy is prepared with different entrails - meat, mushrooms, vegetables. But one of the most favorite entrails is still minced meat. According to this recipe, you can prepare zrazy from potatoes with minced meat and mushrooms, or without them. Potato zrazy with minced meat can be served as an independent dish, for example with sour cream.

Prepare the main ingredients for potato zrazas with minced meat: meat, potatoes, carrots, onions, flour, eggs and dried mushrooms. Before cooking, dried mushrooms need to be soaked for 10-15 minutes, then washed and poured with boiling water for about 1 hour (do not throw away the water from the mushrooms, we will need it later). You can also use frozen mushrooms.

Let's prepare the potato base for zraz. Boil and mash the potatoes. Break an egg into the potatoes, add salt and pepper to taste, add flour. As you mix everything, the puree should eventually become dense and thick.

Grind the beef through a meat grinder, maybe 2 times, so that the minced meat comes out as tender as possible. Chop the soaked mushrooms, grate the carrots, and chop the onions.

  1. We wash the potato tubers, peel them and cut them into quarters or simply slices of approximately the same size. Fill with water and cook at moderate boil until soft.
  2. In the meantime, prepare the filling for the potato zrazas. After removing the husk, finely chop the onion and fry for 2-3 minutes in vegetable oil.
  3. Add minced meat to the already soft onion. To ensure even cooking, break the meat mass into small pieces using a spatula. Fry over moderate heat until the minced meat is completely cooked. Season the meat filling immediately with salt and pepper to taste.
  4. Drain the water from the boiled potatoes, transfer the potato slices to a separate bowl and wait 10 minutes for the hot tubers to cool slightly.
  5. Drive a raw egg into warm, but no longer hot potatoes and begin to grind the mass into a homogeneous smooth puree.
  6. Add flour evenly, carefully kneading the potato dough with a spoon. The mass will be soft and plastic. With all this, the dough will stick to your hands - this is how it should be! There is no need to increase the dose of flour, otherwise it will “overwhelm” the potato taste and the dish will no longer be as tasty.
  7. Using palms moistened with water, form a small flat cake from the potato mixture. Place a portion of minced meat in the middle.
  8. We fasten the edges, forming an oblong piece and hiding the filling inside. Roll the resulting potato “cutlet” in breadcrumbs. We make other patterns in the same way.
  9. Cover the bottom of a large, thick-bottomed frying pan with a thin layer of vegetable oil. We warm it up well, and then lay out our semi-finished products on a hot surface. Fry on both sides over moderate heat until an appetizing “tanned” crust forms.
  10. Serve potato zrazy with minced meat hot or at least warm. Because the dish already combines both meat and side dish, no additions to it are required.
