Liver rolls - traditional recipe

Ingredients:
- Liver (it is better to take beef) – 0.25 kg
- 1 medium onion
- 1 testicle
- Hard cheese – 150 gr
- 50 ml milk
- 80 g mayonnaise
- Flour – 100 g
- Vegetable oil - 2 tbsp. l.
- Garlic, pepper, salt - to taste
- No matter what kind of greens – 50 g
Manufacturing:
The liver must be washed and dried, placed in a blender along with the onion. Add milk, chicken egg, 2 tablespoons of butter, wheat flour, seasonings. Salt everything. Fry pancakes from the acquired consistency. Grate the cheese, mix with mayonnaise, garlic and herbs. Spread the purchased liver pancakes with the entrails, roll them into a tube, and cut them diagonally. If served with sour cream, it will be even tastier.
Spinach roll with liver pate
This appetizer will seem unique to everyone present at the table, as the rolls will turn out to be a rich greenish color.
Ingredients:
- 0.5 kg liver
- 15 g sunflower oil
- 3 testicles
- Flour – 2.5 tablespoons;
- ½ cup cream
- 1 large onion
- 50 g butter
- Salt and pepper.
Manufacturing:
The first step is to prepare the roll.
To do this, separate the chicken whites from the yolks.
Place spinach, yolks, salt in a blender and beat everything.
Add flour there, mix again, pour the whole mass into a separate container.
Beat the whites separately, then add them to the dough.
Place baking parchment on a baking sheet and pour the entire mixture there. Bake in an oven preheated to 180°C for approximately 12 minutes.
Then roll the hot dough into a large roll and put it in the refrigerator.
Then comes the inside:
Wash the liver, dry it, remove all veins.
Add just a little sunflower oil to the frying pan, heat well and place the liver in 1 layer.
Fry for 3-4 minutes, the other side for 2. Add onion.
Fry the whole mixture over low heat, pour in the cream, add salt and pepper to taste.
Cool the resulting mass, put it in a blender with butter, and beat everything.
You can start assembling the roll. Spread a thin, even layer of butter onto the dough, and top with liver pate. Carefully roll everything up, wrap it in cling film and put it in the refrigerator to soak completely. You can keep it there for an hour, but it’s better all night (that is, in the dark) .
Liver rolls with double entrails
A very original dish, as it has carrot-onion and egg-cheese interior.
Ingredients:
- 500 g pork or chicken liver;
- eggs – 3 pieces;
- 0.5 glasses of milk;
- 100 g flour
- Salt and pepper to taste
- Vegetable oil – 1 tbsp.
Inside #1:
- 2 large carrots;
- 2 onions;
- 1 clove of garlic;
- 3 tbsp. mayonnaise.
Inside #2:
- 5 eggs
- 70 g Dutch cheese
- 3-4 spoons of mayonnaise
- Garlic to taste
Manufacturing:
Wash the liver thoroughly and grind in a meat grinder or blender. Add chicken eggs, milk, salt and ground pepper there. Then flour.
Mix everything well.
Fry pancakes from the acquired consistency.
Now you can proceed to the interior No. 1:
Grate the washed carrots and mix with chopped onions.
Fry all this in a frying pan.
Apply mayonnaise, onion, carrots, and garlic squeezed through a press in an even, thin layer onto the liver pancake.
Place this filling in only half of the pancakes. Cut the rolls in half diagonally.
Let's move on to interior No. 2:
Finely chop the boiled eggs.
Grate the cheese on a large grater.
And apply mayonnaise, eggs, cheese and chopped garlic sparingly to the rest of the pancakes.
Also roll the rolls and cut them into 2 halves.
Liver rolls with beets
An easy and tasty recipe that will be a good summer snack. As for beets, they are available in any store and are completely cheap.
Ingredients:
- 250 g liver;
- 1 glass of milk
- 1 onion (120 g)
- Olive or sunflower oil

- Flour – 20 g;

- Champignons – 200 g

Place liver, celery, sweet pepper and parsley in the middle of the chicken layer.
Roll the roll, starting from the wide side. Cut it in half. We wrap each half with several layers of cling film, tie the ends, and tie the roll itself with thread.
Pour 2 liters of water into a huge saucepan, add allspice, bay leaf, parsley root and other spices for the broth. Add salt so that the water is slightly salted. Bring to a boil. Recipe for “Chicken rolls with liver”:
Wash the liver, pat dry with a napkin, cut into small pieces, add soy sauce and spices to taste. I used dark pepper, dry garlic and paprika. Let it marinate.
Let's get to the meat for now. I had skin-on, bone-in breast. I separated the fillet (the weight indicated is for an unblemished fillet). 6 small pieces came out. We carefully beat the fillet pieces through the film.
Fry the liver in a frying pan for a couple of minutes. Wash the greens, dry and finely chop. Choose greens according to your own taste. Add the greens to the liver and stir.
Cut 30 grams of cheese into small pieces according to the number of fillets. Place a spoonful of liver and a block of cheese on the edge of the chopped fillet.
Roll it up. Place in a baking dish, seam side down. Place in the oven to bake at 180 degrees for 20 minutes.
Cut the remaining 40 grams of cheese into thin slices, place on top of the rolls and bake for another 10 minutes.
It is best served with sauce, because if you take it from the breast it will still be a little dry.
