Madeleine cookies are a classic of French cuisine. Its history begins in the 18th century in Lorraine, and later the recipe miraculously finds its way to France to the confectioners of Versailles. Therefore, very common in production, but at the same time, the unique French biscuit cookies became a favorite dessert for the European nobility. There are a huge number of recipes for this sweet, and even one of the best is from Alexandre Dumas in the “Culinary Dictionary”.

Unique “Madelenki” are baked goods made from the most delicate dough, which contains sugar, butter, flour mixture with orange or lemon zest, and eggs. Traditional version of Madeleine cookies
Usually the finished dish is shaped like scallops. This is achieved due to the use of special baking molds.
- Wheat flour – 150 g;
- Testicles - three pieces;
- Vanilla sugar - one package;
- Sweet sand – 100 g (preferably sweet powder);
- Lemon (zest);
- Baking powder - small spoon;
- Butter – 130 g.
{Instructions} for cooking are as follows:
- Beat sugar, eggs, vanilla sugar until fluffy snow-white foam;
- Sift the flour mixture along with the baking powder, add it to the egg mixture and mix thoroughly. Evenly add softened butter, grated lemon zest, and stir everything. Cover the container with the dough with film and put it in the refrigerator for two to three hours (this is a fundamental point, all French websites write about it). This will make our masterpiece more airy;
- Grease the molds a little with butter and sprinkle with flour. We spread the dough in such a way that it fills the molds 2/3;
- We set the temperature to 230 degrees and bake the dessert for four minutes, then reduce it to 180 and bake for another 5 minutes. The cookies should acquire a golden color and convex outlines;
- Cool the finished products and sprinkle with sweet powder.
Molds for madeleine cookies in the shape of shells or scallops are sold in any pastry shop or in large hypermarkets.
But it is possible to do without silicone molds. As a substitute, ordinary disposable paper forms or containers for baking cupcakes and muffins are often used.
The traditional recipe for madeleine cookies will appeal to novice housewives, because it is very easy to implement. You will get soft, wonderful cookies with an unforgettable smell, prepared at home.

Try to measure a clear amount of ingredients, because the final result directly depends on this. You need no more than 50 grams of flour per egg, or better yet 35 grams, then the cookies will turn out airy and not languid. Do not overcook the dish in the oven; it should be a little wet inside.
- Brown sugar – 100 g;
- Flour – 70 g;
- One lemon;
- Two testicles;
- Baking powder - small spoon;
- Almonds (peeled) – 30 g;
- Vanilla extract – 1/4 teaspoon;
- Butter – 80 g.
- Preheat the oven to 180 degrees in advance;
- Grind almonds in a blender until powdered;
- Stir flour with baking powder and add almond powder;
- Grate the lemon zest on a small grater;
- Melt the butter (70 g);
- In a food processor, beat the sugar and eggs until fluffy;
- Add the flour mixture with almonds, lemon zest, vanilla extract and melted butter, whisking constantly. Knead for another minute at low speed;
- Grease the molds for our dish (preferably “shells” or “scallops”) with the remaining oil, fill with dough and place in a preheated oven for 10-12 minutes;
- Cool the finished treat and later remove it from the molds.

Madeleine with pistachios

- Two egg whites;
- Flour – 85 g;
- Candied orange fruits - a handful;
- Small sugar – 100 g;
- One egg yolk;
- Butter – 110 g;
- Unsalted pistachios – 50 g;
- Sweet powder - a teaspoon;
- Sea salt - 1/4 small spoon.
- Previously, set the temperature in the oven to 180 degrees;
- In a small bowl, melt 100 grams of butter and cool it a little;
- In a blender, “beat” the pistachios into crumbs, add them to the flour mixture with sugar and salt;
- Mix the candied fruits with the yolk, add melted butter, mix well;
- Pour this mixture into flour and mix thoroughly;
- Beat the whites into a strong foam and mix evenly into the dough mixture;
- Grease the baking pans with the remaining butter and place them in the dough;
- Bake for 10-12 minutes in a heated oven, and sprinkle the finished product with sweet powder.

Citrus madeleine cookies
In world cooking, there are a different number of recipes for Madeleines with vanilla, salted caramel, and pistachios. The citrus version is also very popular.
- Two eggs;
- Lime, orange, lemon - one fruit each;
- Flour and brown sugar – 70 g each;
- Peeled almonds – 30 g;
- Sea salt – 1/4 small spoon;
- Baking powder – 10 g;
- Butter – 80 g.
Now the step-by-step recipe:
- Set the oven temperature to 170 degrees;
- Grind almonds in a blender until powdered;
- Sift the baking powder and flour through a sieve and mix with “almond powder”;
- We grate the zest of 3 of our fruits on a small grater;
- Melt 70 grams of butter;
- Beat the sugar and eggs in a blender until light;
- We don't stop whipping. Add melted butter, add salt and beat for some more time;
- Add the egg mass to the floury almond mixture, then add 100% zest and knead the dough;
- Coat the cookie molds with the remaining butter, fill with the test mixture and place in a preheated oven for 12 minutes;
- Let the newly-made dish cool and then remove it from the molds.

Madeleine cookies are a famous French cookie, usually shaped like shells. Very tasty, light and fragrant shortbread cookies, which are prepared very quickly and are a constant success.

Preparing products for French Madeleine cookies.
Grease the cookie cutters with butter.
Place 60 grams of soft butter in a mixer bowl, add 60 grams of sugar, 1 teaspoon of vanilla sugar, a pinch of salt, a teaspoon of lemon zest and mix at high speed.
While mixing, add one egg evenly and continue stirring at high speed until a homogeneous fluffy mass is obtained.
Sift 60 grams of flour and half a teaspoon of baking powder into the resulting egg-butter mixture.
Mix gently until you obtain a soft, homogeneous dough.
Fill the prepared molds three-quarters full with dough; this can be done using 2 spoons or a pastry bag. We transfer the dough into a pastry bag and fill the molds.
Bake the Madeleine shortbread cookies in an oven preheated to 200 degrees Celsius for about 10 minutes, until golden brown.
Place the finished cookies on a wooden board and let cool.

It can have a flat or convex shape, is often baked in a closed form and has double-sided corrugation.
Typically, the dough for Madeleine is made from flour, butter, sugar and eggs, often, but not always, with the addition of soda. Lemon or orange zest, rum or fragrant liqueurs are added as flavoring. To bake Madeleine cookies, there is a mold or baking tray with specially shaped hollows into which the dough is poured and baked. Cookies are slightly more difficult to prepare than cottage cheese casserole.
Like virtually all recognizable dishes, these cookies have a sweet story behind their origins. They say that more than a quarter of a century ago, the Baron of Lorraine did not prepare dessert during a festive dinner as a result of a conflict between suppliers and the chef. And the maid Madeleine, to smooth out the situation, prepared cookies according to her grandmother’s recipe. Since then, the cookies have been named after her.
