Lazy pita dumplings can be prepared without much effort as a snack or for dinner. The dish turns out to be so satisfying that there is no need to add a side dish to it. The most noticeable thing will be that the pita bread is not felt at all. You can cook this kind of dumplings in the oven or simmer them in a frying pan. Anything can be used as minced meat. If you prefer pork, then use that specifically. For lovers of the least nutritious meat, you can choose turkey or chicken fillet.
It is best to pour some kind of sauce over the dumplings, so they will come out the most juicy and tasty. This recipe uses water in which the mayonnaise is mixed. This sauce can be easily replaced with sour cream or tomato paste. To make the dish look most presentable, it is best to cook it in a beautiful clay and colored mold.
Ingredients:
Lavash – 0.5 pcs.
Minced meat – 150 g.
Mayonnaise or sour cream – 1.5 tbsp. l.
Salt - to taste.
Ground dark pepper - to taste.
How to cook:
1. If you have a whole piece of meat, then be sure to grind it in a meat grinder beforehand. After this, add salt and ground dark pepper to it.
2. Unfold the pita bread, cut it so that it becomes rectangular.
3. Now grease it with mayonnaise (1 tablespoon) or sour cream.
4. Place the minced meat filling. Level it very well so that it completely covers the entire pita bread.
5. Now roll the pita bread into a roll. Do this function right away, before the pita bread gets soggy.
6. Cut it into pieces of similar thickness. Place them in a baking dish.
7. Pour 100 ml of water into a bowl and add 0.5 tbsp. spoons of mayonnaise or sour cream. Mix everything well using an iron whisk.
8. Pour the prepared sauce over the dumplings. If it is not enough, then make another half portion.
9. Send them to preheat to 190 degrees for 20-25 minutes. Now very carefully remove the pan from the oven.
You can serve the dumplings right away to the table directly in the form or put them on a beautiful portioned dish.

I would say that this is a recipe for Noodles or Strudli (as you wish ) from lavash, but the word goes to the creator of the recipe, Anyuta.
Dumplings are a fairly popular dish, but if you want to really enjoy their taste, you will have to work hard and prepare them yourself. Unfortunately, this is a rather painstaking task; you don’t always have the energy and time. Lazy dumplings can be made from a sheet of dough, folding minced meat filling into it. There is also a good substitute for regular dumplings, namely lazy dumplings made from lavash with minced meat.
The second method is convenient because you don’t need to knead the dough at all; it’s enough to buy a couple of slices of narrow Armenian lavash made from unleavened dough.
In appearance, such dumplings naturally differ from ordinary ones - they are very reminiscent of small rolls or even rolls, but in taste they are in no way inferior to Siberian ones. By the way, not only meat, but also potato, mushroom and vegetable entrails can be used as entrails.
List of ingredients: 2 sheets of pita bread, 450 g of minced meat, 1 minced chicken egg - optional, 1-2 onions, 1 large carrot, 1 tomato, garlic - a couple of cloves, 1 tbsp. l. tomato paste, 150 ml cream (sour cream), ½ tsp. salt, spices to taste.
Manufacturing:
We mince the minced meat ourselves and either use ready-made minced meat. Add chopped onion to it.
You can add a chicken egg, but it is believed that without it the minced meat is more tender.
Add salt and spices. Mix the finished minced meat well.
Take the freshest pita bread and unroll it on the table. If the pita bread is very dry, you cannot work with it because it will begin to break and crumble in your hands.
Spread the meat fairly tightly over the surface.
Carefully roll the pita bread with entrails into a roll
The pita bread itself should be soaked in meat juice.
The onion needs to be peeled and finely chopped. Peel the carrots and grate them on a large grater. Heat a frying pan, add a little oil for frying and add the onions and carrots there. Sauté over low heat, stirring with a spatula.
While the vegetables in the frying pan are ready, take the lavash rolls and carefully, with a sharp knife, cut it into pieces about 3 cm wide. About 15 minutes after you start frying the vegetables, begin placing the pieces of meatloaf into the frying pan with the cut side down. Place pieces of finely chopped tomato and whole cloves of garlic between the dumplings.
Let's prepare a sauce from sour cream, tomato paste, salt and dark ground pepper. Instead of tomato paste, you can use tomato juice. After mixing the sauce until smooth, taste it. You can create a more varied taste by adding crushed garlic or mustard. A very thick sauce must be diluted with a small amount of boiled water. Pour the tomato-sour cream sauce over the contents of a saucepan or high frying pan. There should be enough water, but it doesn’t have to completely cover the dumplings. The cool thing is that these lazy dumplings can be cooked in the oven. Having made the preparations from pita bread and minced meat, placing them on a “pad” of vegetables, place the frying pan in an oven preheated to 190 degrees, leave it there for 25 minutes. If after this time the dumplings are not ready, you can cover them with foil and continue baking. You can also create a cheese “crust” - this will make it even tastier.
It’s even easier to prepare lazy dumplings from dough or pita bread in a slow cooker. A vegetable “pillow” is also made, on which the rolls are laid out, the whole thing is poured with sauce and the “Stew” mode is selected for 40-50 minutes. After the beep, the lavash dumplings are ready. Bon appetit!

We can also use minced fish, combining it with lard or using it on its own.

How to cook lazy dumplings with minced meat
First, soak the crumb of the loaf, like cutlets, in milk. Let it swell well for 20-25 minutes.
Combine the minced meat with the egg and loaf. Mix well, add salt and pepper. Set aside.
Unroll the pita bread on the table and thickly grease its surface with minced meat. If we have 2 sheets, we use half the inside. We leave the other one for another 1 sheet.
We wrap the pita bread in a roll and leave it - let it soak while we deal with the vegetables.
We clean and chop the onion, put it in a deep frying pan, greased with vegetable oil and sauté.
When it is ready, add carrots, grated on a large grater.
Simmer everything, stirring for another 15 minutes.
When the frying is ready, return to the meat rolls and cut them into equal portions approximately 3 cm wide.
Place any piece cut side down in the pan directly on top of the vegetables.
At the end we make the sauce. Mix sour cream, tomato paste, salt and dark ground pepper in a cup. Mix well with a fork. If desired, you can add a clove of garlic from the press or 1 tsp. mustard. If it seems that the sauce is too thick, add 3-4 tablespoons of boiled water to it.
Pour the resulting tomato-cream sauce over the lavash dumplings and let them simmer under the lid on low heat. Let it sit for at least half an hour, making sure that the liquid does not boil away and the dumplings do not start to burn.
Serve the finished ones piping hot with chopped fresh herbs and gotchitsa.
How to create lavash dumplings in the oven
Now you understand how to make lazy pita dumplings on the stove, as shown in the photo, but you can also create them in the oven.
To do this, simply place the frying pan in an oven already preheated to 190°C and leave for 25 minutes.
After this, we still look: if the dish is not ready yet, but the edges have already begun to glow, cover the top with foil. If everything works out, if desired, sprinkle the dumplings with 100 g of grated hard cheese - this will make them even tastier and more appetizing thanks to the crust.

Salt, pepper and mix.

Ingredients for making lazy lavash dumplings:
minced pork and beef – 0.4-0.5 kg
Armenian narrow lavash – 2 pcs.
snow-white loaf – 2 slices
onion – 1 pc.
large carrots – 1 pc.
chicken egg – 1 pc.
fresh tomatoes/tomato sauce – 150 g/150 ml
sour cream 15% fat – 150 ml
vegetable oil
salt - to taste
seasonings for minced meat or cutlets - to taste
Recipe for making lazy lavash dumplings:
This recipe for lazy dumplings does not involve the usual boiling, but stewing in a deep frying pan, therefore, in order to avoid burning, you need to prepare a vegetable pillow for them. In addition, sweet carrots and fried onions will give the minced meat an extra taste.
First you need to prepare the vegetables for frying - peel, chop and grate not very coarsely: chop the onion with a knife, and grate the carrots on a medium, or ideally, on a large grater. Fry in vegetable oil for about 3-4 minutes. The vegetable pad is ready, you can start making minced meat.
To fill lazy dumplings, mix minced pork and beef, soaked in water or milk and squeezed out snow-white bun or loaf (can be replaced with grated raw potatoes), seasonings for minced meat or cutlets, salt, egg. Mix the minced meat well.
Spread a thin layer of purchased minced meat onto the pita bread, spread with a fork so that an even layer appears over the entire surface of the pita bread.
Roll the pita bread into rolls, leave for a couple of minutes so that the pita bread absorbs the liquid from the minced meat and softens slightly, so it will be easier to cut it into pucks.
Cut the tubes with minced meat into pieces of similar height (about 2 cm) and place them on a vegetable pad with the cuts down and up. Leave space between the washers so that you can pour the prepared sour cream sauce over them later, and any dumpling will be surrounded by liquid and stewed perfectly.
For the sauce, mix regular 15% sour cream and, optionally, fresh tomatoes crushed in a blender or ready-made tomato sauce (maybe ketchup).
Add salt to the sauce, stir until the color is uniform, pour over the dumplings.
Stew lazy pita dumplings as follows: put the frying pan on the fire, bring the sauce to a boil, reduce the flame, simmer the dumplings for 20 minutes under the lid. Then turn off the heat under the frying pan, but do not remove the lid for another 10 minutes. Now the lazy dumplings are completely ready!
