1. Pour milk into a saucepan and place on fire. Heat until warm, approximately 38 degrees. You can also heat it in the microwave.
2. Pour two tablespoons of flour, sugar and dry yeast into warm milk. Mix all this and leave in a warm place for half an hour.
3. When the dough is ready (a foamy cap appears), sift the rest of the flour into it. Be sure to sift to get rid of lumps.
4. Add a pinch of salt, break the egg, and also add softened butter. To keep the butter soft, take it out of the refrigerator in advance before starting production.
5. Knead the dough on the work surface. It is quite soft, but does not stick to your hands. Knead slowly, about 10 minutes.
6. Now put the dough in a bowl, cover with cling film. Leave for an hour in a warm place protected from drafts.
7. After the specified time has passed, roll out the dough into a layer approximately 5 mm wide. We cut out circles using a glass, and make a hole inside each circle using a bottle cap or any other device.
8. Pour vegetable oil into a small saucepan and place on fire. To find out whether the oil has warmed up, simply dip a wooden skewer into it; bubbles should appear from it.
9. Place a couple of donuts in perfectly heated oil and fry on both sides until golden brown. The donuts are fried very quickly, especially the 2nd batch and all the following ones. Therefore, you should not move too far from the stove. The cut out centers can also be fried.
10. Place the fried donuts on a dish lined with cardboard towels to absorb excess fat.

Step-by-step production
- Sift 600 grams of wheat flour into a mixer bowl, add to it one tablespoon of dry yeast, 100 grams of pre-softened butter. Break two chicken eggs into a separate small container and add to the bowl with flour. We also place 50 grams of sweet sand and one level teaspoon of salt here. Then add 2-3 pinches of vanillin, pour in 260 ml of warm milk.
- We install the “hook” attachment on the mixer, designed for kneading dough. Turn on the lowest speed of the mixer, mix the ingredients until the sugar and yeast are completely dissolved, i.e. until smooth. The duration of this operation for us can be 2-3 minutes. When this time has passed, switch the mixer to medium speed and beat the ingredients for another 10 minutes. After 10 minutes, we should have a soft, elastic, homogeneous dough that will stand up perfectly from the walls of the bowl and from our hands.
- We take the dough out of the mixer bowl, roll it into a ball, and place it in a separate container, previously greased with a small amount of vegetable oil. Cover it with a damp towel or cling film and place it in a warm space until the dough has doubled in size.
- When the dough has tripled in size, take it out of the container and put it on the table, lightly sprinkling it with flour in advance. Sprinkle flour on top of the dough, take a rolling pin and roll it out into a layer one and a half centimeters wide.
- Using a glass, mug or a special circle, we form round portioned mugs with a diameter of about 7-8 cm from the layer. In any of these circles we make holes 2-3 centimeters in diameter. You can create this with a stack, a bottle cap, or a pastry cutter.
- From the remaining dough you can form a ball again, knead it slightly, then roll out the layer and create more of the same donuts. Place the donuts on a baking sheet and place in a warm oven to rise. You can use the oven with the light on or the “low heat” oven function. At this moment, the temperature in the oven is 35-40 degrees. We let the baking sheet with donuts sit for 30 minutes, then we take them out of there and see that they have increased in volume. At this point, you need to use a soft kitchen brush to sweep away excess flour from the products so that it does not burn in the oil.
- Let's move on to frying. To do this, use a deep frying pan, wok or cauldron. Pour oil into it in such an amount that the products simply float when frying, without touching the bottom of the dish. You need a liter of oil.
- Heat the oil to a temperature of 160 degrees. If you do not have a kitchen temperature gauge, then know that at 160 degrees a light snow-white smoke appears. Fry the donuts on both sides until golden brown, place on a tray, which we cover with cardboard towels in two layers. This is necessary in order to get rid of excess fat.
- When the donuts have completely cooled down, place them on a flat dish, sprinkle with about 50 grams of sweet powder through a sieve, you can also cover the delicacy with chocolate, fruit or sweet glaze.
