There is a simple, “rustic” one: you pour dough over the berries and into the oven. And there is a biscuit charlotte, solemn, dressed up, masterfully glamorous. Strawberries are most suitable for the design fantasies of charlotte fans.

Now I’ll show you how to make the simplest frisky strawberry charlotte for any day, and I’ll tell you a little about how I make sponge cake. The beauty of the main recipe is in the simplicity of its preparation: I mix all the ingredients for the dough in one bowl, pour it into a mold, add berries and bake. Then I’ll wait until the finished charlotte has cooled down, make tea with mint or lemon balm, with a slice of lemon, or better yet, lime and... stop for a moment.

  • large eggs - 4 pieces,
  • flour - 150 g,
  • sugar – 120 g (for those with a sweet tooth – up to 150 g),
  • baking powder - 2 teaspoons,
  • strawberries - 100 g or more,
  • vegetable oil without aroma - 5 tbsp. spoons,
  • a small pinch of salt, butter for greasing the pan.

First, prepare the strawberries: wash thoroughly, let dry, remove the leaves. Cut the large one into halves and quarters, and for the top layer into plates; small and medium ones can be used whole.

Mix flour and baking powder.
Grease the pan with butter and dust it with flour, or simply place parchment paper on the bottom and sides.
Beat the eggs into a deep bowl, beat them lightly with a mixer, and then add sugar little by little while keeping the mixer running.

Be sure to let this structure harden in the refrigerator. Next, the charlotte is transferred to a flat dish, a “fence” is made from savoiardi, which is attached to the cream and, in addition, for beauty and durability, tied with a ribbon. Sliced ​​fresh strawberries are placed around the circumference, near the cookies.

The step-by-step process for making sponge strawberry charlotte looks like this:

- bake the biscuit, cool;
- create a cream;
- turn some of the strawberries into puree, cut some;
— cover the mold with film, put chopped berries on the bottom;
- add pieces of biscuit, greased with strawberry puree;
- put a little cream;
- then again strawberries, biscuit and cream;
- let it harden in the refrigerator;
— turn it over onto a plate, remove the film.

PS Instead of a biscuit, you can use the same savoiardi.

Combine the eggs with sugar and beat at the highest speed of the mixer for 4-5 minutes.
