Puff pastries with cottage cheese are a good option for quick baking. The curd inside can be both sweet and filling, and this is its main advantage. If “unexpected” guests take the hostess by surprise, you can always resort to a recipe for curd puffs. Puffs from ready-made puff pastry with cottage cheese are prepared very quickly, because you don’t need to waste time on kneading, but buy it in the store and keep it in the freezer for a suitable option.
Yeast-free recipe
Cottage cheese puffs made from flaky, yeast-free dough turn out crispy and golden brown. This recipe for curd puffs can be varied by adding soaked raisins or other dried fruits to the list of ingredients.
Ingredients:
• A pack of yeast-free puff pastry (500 g)
• One egg
• A pinch of vanillin
• 300 g cottage cheese
• Egg yolk
- Remove the packaging from the dough and place it on a board with flour so that it does not dry out, cover with cling film. Throw in to defrost.
- Roll out into a sheet 3 mm wide, cut into rectangles. At the level of thoughts, divide the rectangles in half, make cuts on one half with a knife, hot steam will escape through their insides during baking.
- If there are lumps in the cottage cheese, it must be wiped or “punched” with a blender. Add vanillin, sugar and eggs, mix thoroughly.
- Divide the filling into rectangles, spreading it along the side where there are no cuts. Place the puff pastry in half, covering the cut side with the filling. Seal the edges with a dinner fork.
- Line a baking dish or baking tray with baking paper. Arrange the puff pastries, leaving space between them, and brush with yolk. Bake at 200 degrees for 15 minutes, the surface of the products must be golden.
Yeast recipe
Cottage cheese puffs made from flaky, yeast dough come out fluffy and very appetizing. Butter dough tastes sweeter than the yeast-free version; this should be taken into account when preparing the inside. It must be rolled out thinly and only in one direction, being careful not to damage its fragile multi-layer structure.
Ingredients:
• 250-350 g of cottage cheese
• A pinch of vanillin
• A pack of yeast puff pastry
• 30-50 g of sugar
- Defrost the dough and roll it out on the table. Cut the rolled out dough into squares.
- Prepare cottage cheese - if it’s very dry, you can moisten it with a spoon of sour cream or natural yogurt, and if it’s very wet, let it “rest” by putting it on a sieve and letting the excess water drain.
- Mix the filling - add sugar and a pinch of vanillin. The amount of sugar can be varied depending on taste. The resulting mass should be smooth and gentle.
- Place a spoonful of insides onto each piece of dough, connect the reverse corners and pinch. The sides should be left open so that the hot steam comes out without moistening the baked goods.
- Place the puff pastries on a sheet lined with parchment.
- Bake in the oven for 20 minutes at 200 degrees. Finished products should be ruddy.

Puff pastry puffs with cottage cheese and apple are one of the favorite puff pastry options. For contrast, you can combine a sour apple and a sweet pear in the inside.
Ingredients:
• Two apples
• 1/2 tsp.
lemon juice • Pack of puff pastry
• 2 tbsp.
vanilla sugar • Three egg yolks
• 200 g cottage cheese
- Prepare the apples - peel and cut into thin slices. Sprinkle apples with lemon juice to prevent them from browning.
- Combine vanilla sugar, yolks and cottage cheese, carefully grind with a fork or use a blender.
- Thaw the dough, roll it out and cut into squares.
- Make cuts on one half of each piece, place a small amount of curd mass on the second, and cover with apple slices. Seal the puff pastries, securing the edges with a fork.
- Place the products on parchment and bake for 20 minutes at 200 degrees.

- Place the filling on any piece of dough, overlap the corners and brush the pieces with yolk.
- In a preheated oven, bake the puff pastries for 15-20 minutes at 180 degrees.
With cherry
The combination of cottage cheese and cherries is often found in recipes for casseroles and pies.

• 3 tbsp.
sugar • 200 g cottage cheese

Puff pastries with cottage cheese
I baked these savory puff pastries on yeast puff pastry. It's so fast, inexpensive and very tasty. It just takes time to defrost the dough. The finished product comes out soft on the inside and crispy on the outside. It's definitely worth a try!
How to cook “Soft puff pastries with cottage cheese” step by step with photos at home
To make soft puff pastries, take ready-made puff pastry dough, eggs, cottage cheese, sugar and vanilla sugar. The dough must be defrosted at room temperature in advance.
Rub the cottage cheese through a sieve so that it becomes smooth and homogeneous.
Add a pinch of salt, sugar to your own taste and 1/2 of a scrambled egg to the cottage cheese. We will leave the second part for lubrication. If the eggs are small, you can take 2. Mix the filling until smooth. Please note that the dough does not contain sugar.
Divide the dough layer into 2 equal parts and, if necessary, roll it out further.
Connect 2 layers of dough and cut into equal squares.
Cut 1 part of the purchased squares (from the top layer of dough) obliquely so that the stripes are parallel to each other.
Place the curd filling on the second part of the squares.
Cover with cut dough squares. For the best gluing of the dough, you can grease the edges of the squares with water, carefully press down and create pinches with a fork. Let the pies rise a little and brush the surface with the remaining egg. Bake them for 20 minutes at 180°C.
It’s best to serve the finished puff pastries right away, and they’re also delicious when they’ve cooled.
If desired, you can sprinkle their surface with sweet powder.
