There are a huge number of different recipes for cupcakes; in my own recipe I would like to tell you how to bake cupcakes with cottage cheese. I am sure that you will really like them, because the curd cupcakes turn out tender and very tasty, children eat such baked goods with great pleasure. It is necessary to take cottage cheese that is not sour, because this can affect the taste of the baked goods. Take the butter and eggs out of the refrigerator in advance to bring them to room temperature before kneading the dough. Well, let's get started?

Beat the softened butter with a mixer until fluffy, then add sugar in two additions, also a pinch of salt and continue to beat for about 3-4 minutes.

Then add eggs one at a time, beat after each egg until smooth. Add vanillin together with the outer egg.

Rub the cottage cheese through a sieve and add to the whipped mixture, again beat everything together for a minute.

Sift the flour and baking powder into a bowl and mix with a spatula.

Insert paper capsules into the cupcake pan and fill them three-quarters full with dough, leveling the top so that there is a smooth surface. Now you can send the form with the dough to the oven, which we preheat to 180 degrees in advance. Bake cupcakes with cottage cheese for approximately 25 minutes.

After the designated time, take the pan out of the oven, check the readiness of the cupcakes with a wooden skewer, it must be dry.

Let the curd cupcakes cool, and later you can try them.

These cupcakes can be baked for a children's party or a picnic, because they are comfortable to take with you. And because we baked them for home Sunday tea, we brew our favorite tea and invite the whole family to the table to help ourselves!

Curd cupcakes

No one can resist such a wonderful and tender delicacy. With this recipe, you can effortlessly prepare fragrant curd cupcakes with creamy curd cream and a slight vanilla scent.

Ingredients

  • 3 testicles
  • 200 g cottage cheese
  • 200 g sugar
  • 200 g flour
  • 150 g butter
  • 10 grams of baking powder or 1/3 tsp. soda

Curd cream for pancakes:

  • 150 g cottage cheese 18% (preferably pasty)
  • 150 g butter
  • 140 g sweet powder
  • 50 ml cream 25-35%
  • 10 g vanilla sugar

Recipe for making a dish at home

  1. Prepare cottage cheese cupcakes . Melt the butter in a water bath or in the microwave, without bringing to a boil, and cool to room temperature. Sift the flour through a sieve along with baking powder into a separate bowl and stir.
  2. Rub the cottage cheese through a sieve or pass through a meat grinder. Beat the eggs with a mixer until foam forms and add sugar in a narrow stream. Beat the egg cream until white and doubled in size, about 5 minutes at high speed.
  3. While whisking continuously, add melted butter. Combine the resulting mass with cottage cheese and beat using a blender or mixer until smooth. Add the sifted flour mixture to the curd mass and mix with a spatula.
  4. Grease muffin tins with oil and sprinkle with flour (just sprinkle silicone ones with water), spread the dough on them (no more than 2/3 of the size) and place in an oven preheated to 180C. Bake the curd cupcakes until golden brown, about 25 minutes.
  5. Remove the molds from the oven and let cool for about 5-10 minutes. Remove the cupcakes from the pans and leave to cool completely. Prepare curd cream for cupcakes . Rub the cottage cheese through a sieve or pass through a meat grinder.
  6. Chop the butter into small pieces and leave in a warm place for 15 minutes until it melts. Combine cottage cheese with cream and beat with a blender or mixer until fluffy. Beat the butter with a mixer at high speed until fluffy.
  7. Without ceasing to beat it, add sweet powder and vanilla sugar evenly, beat for another 3-5 minutes. Combine the curd mass with the butter cream and beat using a blender or mixer at high speed.
  8. Fill a pastry syringe or bag with curd cream and decorate the cooled cupcakes with it. The top of the products can be decorated with grated chocolate, coconut flakes or confectionery sprinkles. Enjoy your tea!

  • Butter (room temperature) - 80 g
  • Condensed milk (+- to taste) - 50 g

Confiture

  • Strawberries - 100 g
  • Sweet powder - 60 g
  • Pectin – 2 g
  • Lemon juice - 0.5 tsp.

How to make cupcakes with curd cream

For the dough, you need to combine sugar and butter at room temperature. Grind with a mixer for 3-5 minutes.

Then beat the eggs into a bowl and mix everything again with a mixer.

Sift flour, cocoa and baking powder into the dough. Mix everything again.
