2. Rub everything into crumbs with your hands, add cottage cheese.
3. Carefully knead the dough with your hands, roll into a ball, cover with cling film and put in the refrigerator. In the meantime, let's get to the insides. To do this, combine the cottage cheese with sour cream and beat everything with a blender, or grind the cottage cheese through a sieve and then combine with sour cream.
4. Add the egg, beat it again with a blender, or mix with a whisk until smooth. Add starch and vanillin.
5. Knead everything thoroughly until smooth. Take a round mold, silicone or iron, 16-18 cm in diameter, cover the bottom with foil or baking paper. We take the dough out of the refrigerator and form a base with sides with our hands, put it in an oven preheated to 180 degrees for 10 minutes.

- 0.5 tbsp. Sahara;
- 2 tbsp. l. potato starch;
- 2 tbsp. l. flour;
- 50 gr. sweet powder;
- 250 gr. cottage cheese;
- 200 gr. sour cream;
- 2 testicles
The usual recipe for cottage cheese pie with cherries
1. Three frozen butter on a large grater.
2. Pour in baking powder and rub with a fork until smooth.
3. Add egg, sour cream, stir well.
4. Add flour in 3 portions, continuing to grind the dough.
5. When all the ingredients are well mixed, we begin to knead the dough with our hands.
6. Finally, we form a ball from the shortcrust pastry.
7. Wrap the prepared dough in cling film, press lightly to flatten it, and place it in the refrigerator for 30 minutes.
8. Let's take care of the insides. First, we wash the berries, tear off the tails, and remove the seeds.
9. Add 2 tbsp to the cherries. starch and half a glass of sugar, mix.
10. Leave for some time so that the cherries release their juice.
11. Place cottage cheese with eggs, sour cream, sweet powder and flour in a separate bowl.
12. Using a blender, beat the curd mixture into a homogeneous mass so that there are no lumps left.
13. Cover the bottom of the baking dish with parchment. For this cake, a springform pan was used; if possible, it is better to use a pan with a huge diameter of approximately 30 cm. Cut out a circle of parchment according to the shape of the bottom. Assemble the mold and place parchment on the bottom. 14. Take the dough out of the refrigerator. It was made a little tougher and firmer by the butter. And now you need to work with it quickly, until the butter melts again and the dough begins to separate.
15. Roll out a large circle approximately 7 mm wide and the size of the mold (bottom + walls). This needs to be done quickly, and the appropriate size should come out from the first or maximum from the 2nd sample. If the kitchen is very hot, the dough may begin to separate over time, in which case it will again need to be put in the refrigerator for some time. There is no need to sprinkle the surface with flour, since the dough is quite oily and will not stick, and you can only beat the delicate dough with flour.
16. Using a rolling pin, transfer the dough into the mold.
17. Press with your fingers to the bottom and sides of the pan, aligning it to the top. The thinner the crust, the tastier the pie will be.
18. Place a square of parchment paper inside and pour a weighting agent on it - dry beans. If you bake a shortbread without a weighting agent, the sides of the dough will move down.
19. Cover the top with another sheet of paper so that the edges do not burn.
