First, let's prepare the minced meat, because potato shingles quickly darken. To do this, cut the pork into pieces and pass through a meat grinder. To make the meat cook faster and easier, place it in the freezer for half an hour beforehand.
Next, we pass the peeled onions through a meat grinder (one large onion is half the amount of the indicated ingredients).
Salt and pepper the minced pork and onions. Mix with your hands and taste for salt. If necessary, add more seasonings.
To make the inside of the potato pancakes juicy and tender, you can additionally beat the minced meat (for a few minutes). To do this, simply forcefully throw the minced meat into a bowl or transfer it to a bag and beat it on the table. In other words, we simply throw from a small height. For now, put the prepared minced meat in the refrigerator.
Let's make dough for potato pancakes. To do this, peel the potatoes and onions (2nd half of the ingredients). I’ll say right away that there literally can’t be too many onions in shingles. Moreover, onions not only add flavor to the finished potato pancakes, but also protect the grated potatoes from darkening for longer.
Grind the vegetables on the smallest shingle grater. I have this attachment in my food processor, but previously I used a hand grater.
Add a couple of chicken eggs, sour cream, salt and wheat flour to the potatoes and onions. Use sour cream of any fat content - it doesn’t matter at all. By the way, from time to time I even use a drink instead. The main thing is that it is a fermented milk product, which will prevent the potatoes from darkening and make the potato pancakes more tender. It is also not necessary to use the highest grade of wheat flour - the first grade will do. It is clear that some may say, they say, what are all these additives for? Draniki are pure potatoes and onions. But this is exactly how I cook and we like it exactly this way.
