1. Wash the breast, blot it with napkins and create several punctures with a knife - so that it is easier for the seasonings to seep deep.
2. Pour soy sauce into a cup or saucepan. We bathe the turkey in it, rub the sauce well into the fillet, and then rub it with spices and put it in the refrigerator to marinate for a couple of hours.
3. After this, carefully place the meat in the sleeve and secure the ends of this useful bag with special clips or simply wrap it with thread.
4. You can place the breast in the sleeve on a baking sheet and place it in the oven, preheated to 220°C. Just don’t forget to create 3-4 punctures in the upper part of the sleeve, so that excess steam has something to escape through.
5. After 25 minutes, turn off the oven, but do not rush to remove the dish. Let it sit there for another hour or two - this will benefit both the taste and juiciness.

Turkey fillet with vegetables is a tender and nutritious dish, a must on a diet
- Turkey fillet - 400 gr;
- Tomatoes - 2 pcs;
- Onion - 1 piece;
- Garlic - 1 piece;
- Snow white wine - 3 (table spoon);
- Bay leaf;
- Salt, black pepper and herbs - to taste;
1. Line a baking tray or any other baking dish with foil. Create a layer of onion cut into rings or half rings. Place 2-3 bay leaves on the onion, place the fillet on top. And on the fillet - chopped garlic and tomato slices.

- Turkey fillet - 3 pcs;
- Prunes - 150 gr;
- Dried apricots - 150 gr;

Roasted turkey is a savory dish that can be made dietary. Most often, people on a diet opt for turkey breast. This part of the bird does not contain enough fat and, accordingly, has low energy value. The low fat content makes this part of the bird not only low in calories, but also dry when frying or baking. But the dryness of turkey meat is often associated not with its properties, but with the mistakes of the cook. Even a turkey breast will come out juicy in the oven if you bake it correctly.

The process of baking a turkey breast is not complicated, but in order for it to come out juicy and soft, the cook needs to know and take into account several fundamental points.
- Preference should be given to fresh or chilled poultry meat. When defrosting, the product loses some of its water, which has a bad effect on the organoleptic qualities of the finished dish. In order for the turkey breast to lose as little juice as possible, it is recommended to defrost it in the refrigerator without exposing it to sudden temperature changes. Trying to speed up the process using a microwave or warm water will not lead to anything great.
- You can bake the breast whole or cut into medallions. Cut the meat across the grain. When roasting a breast, it is still recommended to separate the fillet from the bones.
- To prevent the whole breast from drying out when baking, place it in a baking sleeve or wrap it in foil. 15 minutes before the end of cooking, the foil or film is torn so that the breast is browned.
- The breast will turn out juicy and soft even without foil, if you cover it with batter or rich sauce and sprinkle with cheese.
- To make the turkey breast juicy and to soften it, they resort to marinating. Compositions containing sour cream or other fermented milk products, mayonnaise, butter or vegetable oil are very suitable for breast. Keep the breasts in the marinade for at least 2 hours. To best saturate the meat with sauce, pierce the breast in several places with a knife and remove the thick skin.
Baked breast is served as a separate dish or with a side dish. The best addition to it will be vegetables: fresh, baked or stewed. From time to time, turkey breast cooked in the oven is served as a cool appetizer.
How long and at what temperature to bake
The baking time for turkey breast depends on the size of the pieces and the temperature in the oven.
- A whole turkey breast is baked at 200-220 degrees for an hour. From time to time, it is cooked for the first 10 minutes at 220-230 degrees, for the next 10 minutes at 200 degrees, then brought to readiness at 180 degrees for 40 minutes. The total difficulty is still an hour.
- Turkey breast medallions or roast fillets cut into pieces are cooked for 25-35 minutes at a temperature of 180-200 degrees.
Some recipes require a different production time for the product. To avoid mistakes, you should pay attention to the annotations accompanying them.
Turkey breast baked in foil
Compound:
- turkey breast fillet – 1 kg;
- drink – 0.25 l;
- lemon – 0.5 pcs.;
- ketchup – 50 ml;
- salt, poultry spices - to taste.
- Rinse the turkey breast fillets under the tap and pat dry with a cardboard towel. Cover with film and beat lightly on all sides. Remove the film. Using a sharp knife, pierce the breast in several places. Place it in a bowl.
- Pour the drink into a separate container and squeeze the juice from half a lemon into it. Add salt, spices and ketchup.
- Whisk the drink to mix the ingredients.
- Pour kefir sauce over the breast and place in the refrigerator for 2 hours. After an hour of marinating, turn the breast over so that it is moderately soaked in the sauce.
- Fold a large sheet of foil a couple of times. It is necessary that the sauce does not spill out during baking.
- Place the breast on the foil and pour the sauce in which it was marinated. Lift the edges of the foil and seal them at the top.
- Place the package of turkey breast in a baking dish.
- Preheat the oven to 200 degrees. Place the form in it. Roast the turkey for 60 minutes. 10-15 minutes before the dish is ready, unfold the foil so that the breast can brown.
An appetizer made according to this recipe will be delicious both hot and cold.
Turkey breast baked in a sleeve
- turkey breast fillet – 0.8 kg;
- tomato paste – 40 ml;
- sour cream or mayonnaise – 40 ml;
- garlic – 4 cloves;
- fresh herbs – 50 g;
- salt, pepper mixture - to taste.
- Grind the peppers using a mill or coffee grinder. It is better to create this shortly before preparing the dish, so that the spices are very fragrant.
- Rinse, pat the greens with a napkin, and finely chop them with a knife. Parsley and basil are ideal.
- Peel the garlic cloves and crush them using a special press.
- Place the greens, peppers, salt and garlic puree into a common container. Add sour cream or mayonnaise, as well as tomato paste. Stir the ingredients thoroughly.
- Wash the turkey breast, dry it, and make several punctures in it with a knife.
- Coat the turkey thoroughly with the resulting sauce and place it in the cooking sleeve. Secure the bag on both sides with special clips or simply tie it.
- Place the bag in the refrigerator for 2-3 hours, then transfer to a baking sheet.
- Make several holes in the cellophane for steam to escape, place the baking sheet in an oven preheated to 200 degrees.
- Roast the turkey breast for an hour.
This recipe makes the turkey breast unusually tender, juicy and fragrant. There is hardly a person who can refuse such a treat.
Turkey breast fillet with vegetables in the oven
- turkey breast fillet – 0.45 kg;
- pumpkin – 0.25 kg;
- potatoes – 0.3 kg;
- green beans – 150 g;
- carrots – 100 g;
- onions – 100 g;
- garlic – 5 cloves;
- olive oil – 60 ml;
- soy sauce – 40 ml;
- salt, pepper, dried herbs - to taste.
- Wash the turkey breast fillet, pat dry with a kitchen towel, and cut into walnut-sized pieces.
- Place the breast fillet in a container, sprinkle with salt, pepper, dried herbs, pour over 2 tablespoons of vegetable oil and soy sauce. Stir until the sauce coats any piece. Close the container and put it in the refrigerator for 2 hours.
- Peel the pumpkin, remove the pulp and seeds. Cut the vegetable into cubes about 1.5 cm in size.
- Peel and cut the potatoes into approximately the same pieces as the pumpkin.
- Scrub, wash the carrots, cut into circles or semicircles.
- Remove the peel from the onion and cut it into thin half rings.
- Cut the green beans into 2 cm pieces.
- Cut the garlic into thin slices.
- Mix vegetables with turkey breast.
- Grease the pan with the remaining oil, place the vegetable and turkey mixture in it, and pour over the turkey breast marinade.
- Cover the pan with foil and place in an oven preheated to 180 degrees for 45 minutes. Remove the foil 15 minutes before the dish is ready.
Using this recipe, you will prepare a real dish that will appeal to both gourmets who love tasty food and people on a diet.
Turkey breast fillet with cheese
Compound:
- Turkey breast medallions – 0.5 kg;
- tomato – 100 g;
- hard cheese – 50 g;
- mayonnaise – 100 ml;
- garlic – 3 cloves;
- salt, seasonings for poultry - to taste.
- Lightly beat the medallions, rub with salt and spices, coat on all sides with mayonnaise mixed with crushed garlic.
- Leave the medallions to marinate for 2 hours, then place them in the mold.
- Cut the tomato into circles and place on medallions.
- Grind the cheese and sprinkle the cheese shavings over the meat.
- Place the pan in an oven preheated to 180 degrees and bake the turkey for 35 minutes.

Compound:
- turkey breast fillet – 0.8-1 kg;
- water – 2 l;
- salt – 80 g;
- refined vegetable oil – 60 ml;
- garlic – 3 cloves;
- table mustard – 5 ml;
- dried basil – 10 g;
- oregano – 10 g;
- coriander – 5 g;
- ground paprika – 10 g;
- hot reddish pepper - on the tip of a knife.
- Peel the skin from the turkey breast fillet and pierce it in several places with a knife. Fill with brine consisting of 2 liters of water and 80 g of salt. Leave for 2 hours.
- Immediately prepare a fragrant paste by mixing herbs and spices with oil and mustard.
- Cut the garlic cloves lengthwise into slices about 2 mm wide.
- Stuff the breast with garlic and coat it with the fragrant paste using a knife.
- Place the breast on a baking sheet.
- Preheat the oven to the highest temperature (230-250 degrees).
- Place the baking sheet in the oven. Bake the breast at the indicated temperature for 15-20 minutes.
- Turn off the oven, but do not open it, leave the breast in it for 2-2.5 hours, during which time it will be ready.
Pastrami is best served cool as part of a meat tenderloin.

I saw the recipe for such turkey breast pastrami in almost all sources, including Yulia Vysotskaya (she prepared it literally the same way, with garlic and soaking in salt water, but the ingredients for coating were few; the rest: sweet paprika, salt, a mixture of various peppers : snow-white, dark, reddish and vegetable oil). I recommend it so strongly because this is a recipe that I personally prepare again and again - everyone at home demands it, and even willingly. You see, there are such dishes that sink into the soul and are remembered. This is one of them. Even now, when I look at the photo of the turkey pastrami given to us, I’m afraid of a piece.
Ingredients: 1.5 kg. turkey breast fillet, 2 liters of water for marinade, ground coriander – 1 teaspoon, coriander beans – 1 tablespoon, mustard – 1 tablespoon, reddish hot pepper – 1 teaspoon, oregano – 1 tablespoon, dried basil – 1 tablespoon spoon, reddish paprika - 1 tablespoon, garlic - 5 cloves, vegetable oil - 3 tablespoons, salt - 4 tablespoons.
Manufacturing method:
- Pour water into a saucepan, dilute salt in water, and place a washed, skinless turkey breast in the water. Let it marinate in this brine for 2 hours.
- After 2 hours of marinating, remove the turkey fillet from the water, pat lightly with napkins, and stuff with chopped garlic cloves. You can use more garlic.
- Prepare a homogeneous mixture of all seasonings and vegetable oil. Coat the meat properly on all sides with the consistency given to us.
- Preheat the oven to 250 degrees. Please note that it is very important to preheat the oven in advance.
- Place the meat on a baking sheet in a preheated oven and cook for exactly 15 minutes.
- After 15 minutes, turn off the oven and, without ever opening the oven door, leave the turkey breast fillet in the cooling oven for 2 hours.
So, within 2 hours, the turkey will be fully cooked in the turned off oven. It will have a baked crust and will be very juicy inside. Maybe the meat will be pink inside, but this doesn’t have to scare you - it should be - just try it, it’s deliciously tasty.
Recipe No. 2. Spicy turkey breast fillet baked in the oven in foil
This recipe is even simpler than the previous one, but it is suitable only for those who like it spicy, because adjika, red pepper and garlic are involved here (just a nuclear mixture!). If you don’t really like spicy dishes, then instead of reddish pepper, take dark pepper, but much less, and instead of adjika, you can take ordinary, non-spicy ketchup or tomato paste. Don’t skimp on the garlic; stuff the turkey “lengthwise and crosswise” with it, making deep cuts with a sharp knife and pushing the pieces of garlic deeper inside.
Ingredients: 1.5 kg. turkey breast fillet, adjika - 2 tablespoons, garlic - 5 cloves, vegetable oil - 2 tablespoons, reddish hot pepper - 0.5 teaspoons, salt - 2 teaspoons (flat), water for soaking the turkey.
Manufacturing method:
- Pour water into a saucepan, dilute salt in water, and place a washed, skinless turkey breast in the water. Let it marinate in this brine for 2 hours.
- After 2 hours of marinating, remove the turkey fillet from the water, pat dry with a cardboard napkin, and stuff with garlic.
- Prepare a mixture of adjika, vegetable oil, hot reddish pepper, spread the meat as needed with the consistency given to us.
- Wrap the meat in foil and place in the oven for 30 minutes. The oven must be preheated to 200 degrees.
- After 30 minutes, turn off the oven, leaving the meat inside, without opening the oven door, let the meat stand for another hour and a half.
Recipe No. 3. Turkey fillet in the oven with potatoes
A good recipe, very ordinary and very tasty. There are a minimum of ingredients (to simplify the recipe, I am giving here a very ascetic version - basically just turkey and potatoes, but in the next recipe I will show what other vegetables can be added to this recipe, not counting potatoes). This dish is best prepared in a sealed baking bag.
Ingredients: 1 kg. turkey breast fillet, potatoes – 6 pcs., onions – 1 pc., carrots – 1 pc., salt, dark ground pepper, 2 tablespoons of vegetable oil. Optional: 300 grams of whole mushrooms.
Manufacturing method:
- Wash the turkey fillet and cut into cubes (2-3 cm on a side).
- Peel the potatoes, rinse and cut into fairly large pieces.
- Chop the onion and grate the carrots.
- If there are mushrooms, just wash them; there is no need to cut them, even if they are large champignons.
- In a saucepan, combine turkey fillet, carrots, onions, potatoes, vegetable oil, salt and pepper the mixture.
- Place the mixture in a baking bag or a thick cauldron, add a couple of tablespoons of water, and place in the oven for 50 minutes at 200 degrees. The form in which the dish is baked must be hermetically sealed (if it is a cauldron, then the lid must cover it tightly). The dish will turn out very juicy and soft. The water does not have to evaporate, the dish does not have to fry, it has to stew in its own juice.
Mushrooms – champignons, whole – will look very good in this recipe. Just rinse them and add them to the mixture. The finished dish will contain whole mushrooms. Cabbage will also look great in this dish. The standard is a mixture of ordinary (fresh white cabbage) and sauerkraut.
Recipe No. 4. Turkey fillet in the oven with vegetables
There are quite a lot of ingredients in this recipe. I love recipes that have a lot of ingredients, because they give a very, very rich taste, just an explosion of feelings, a real pleasure. It is clear that virtually any vegetables in this dish can be neglected and cooked without their role. It’s just that the taste will be slightly different, but nevertheless, it will still turn out very tasty.
Ingredients: 1 kg. turkey breast fillet, potatoes – 4 pcs., onions – 1 pc., carrots – 1 pc., shredded white cabbage – 200 g, sauerkraut – 150 g (handful), small zucchini – 1 pc., small eggplant – 1 pc., handful green beans, sweet pepper (preferably colored - reddish, yellowish) - 1 piece, adjika or savory Georgian tomato sauce - 3 tablespoons, salt, dark ground pepper, 2 tablespoons of vegetable oil, herbs: dill and parsley.
Manufacturing method:
- Wash the turkey fillet and cut into cubes (2-3 cm on a side).
- Peel the potatoes, rinse and cut into fairly large pieces.
- Chop the cabbage, grate the carrots, chop the onion, cut the zucchini and eggplant into cubes (you can remove the skin), chop the reddish sweet pepper into strips. Green beans do not require chopping.
- Mix all the vegetables and meat in a large saucepan, add salt and pepper to taste, add tomato sauce, vegetable oil, and mix.
- Transfer the mixture to a baking bag or large cauldron, cover it with a lid, and bake in the oven for 2 hours at 180 degrees. Let it simmer and simmer until fully cooked. Vegetables will release all their juices and odors.
Recipe No. 5. Turkey breast fillet in the accordion oven with soy sauce, cheese and tomatoes
This method of roasting meat is well known to experienced chefs. The meat is cut into slices along the entire length, without cutting to the end; in other words, the piece remains intact, but is repeatedly cut lengthwise. A slice of tomato and cheese is inserted into any cut (pocket). As a result, we get a very beautiful accordion of meat, in each fold of which you can see the reddish color of a tomato and browned cheese.
Ingredients: 1 kg. turkey breast fillet, 2 medium tomatoes, 150 grams of cheese, soy sauce - 3 tablespoons, salt, dark ground pepper, other seasonings to taste (for example, suneli hops, coriander, reddish sweet paprika or basil.)
Manufacturing method:
- Rinse the turkey fillet, remove the skin, and immerse it in a saline solution for an hour (4 tablespoons of salt per 2 liters of water). You can keep the marinating turkey water in the refrigerator.
- Blot the meat with a napkin to remove excess water, sprinkle the meat with soy sauce, and treat with spices.
- Cut the meat repeatedly without cutting all the way through.
- Place tomato and cheese slices into the cuts.
- Wrap the accordion meat in foil and bake in the oven for 30 minutes at 200 degrees.
