  7. Place the garlic cloves on a cutting board, then press them down with the side surface of a knife or an ordinary spoon. We now have homemade minced beef. We buy meat from relatives (homemade), twist it, pack it in bags and put it in the freezer. Before cooking, all that remains is to defrost and add the necessary ingredients.

Step 1. Place the defrosted briquette in a large bowl. Cut the onion into small cubes.

Step 2. Rub the peeled potato tubers with a small-mesh grater. Usually, potatoes produce a lot of juice. From time to time, I drain it, only in those cases when the meat itself contains a lot of water. But together with the juice, starch is combined.

Juice with starch not only adds fluffiness to the finished products, but also makes them softer and more tender. Well, the juiciness also increases.

In addition, starch binds the ingredients together and helps keep the shape of the finished product.

Step 3. Add salt, seasoning for minced meat or just ground dark pepper to the bowl.

Step 4. Beat in the egg and sprinkle with semolina. Why do I use cereal? I deliberately did not squeeze out the potato juice to preserve the starch. With the juice, the meat becomes watery; now I also added an egg, which is also 90% water. Therefore, I add semolina, it will absorb all the liquid.

Step 5. All ingredients are added. Now knead the minced meat. It is necessary not only to mix it well, but to beat it off. To do this, grab it with your hands, lift it and throw it to the bottom of the bowl. We repeat the beating process 3-4 times.

With all this, all the ingredients are firmly glued together, the mass comes out more homogeneous. When frying and turning over, the cutlets do not fall apart. But there is also a negative side to this process. When hitting the bottom of the pan, small pieces of meat may fly in different directions.

To avoid this, put the meat mass in a plastic bag, then the beating will be even more fun and without splashing.

Step 6. We form flat cakes from the beaten minced meat and place them on the board.

Step 7. Heat a frying pan with vegetable oil. Transfer the formed products to a frying pan.

Step 8. How long to fry the cutlets? We do this: first, over high heat, fry one side of the flatbread until golden brown, about 5 minutes. Then turn it over to the other side.

After the formation of a golden brown crust, cook under a closed lid over low heat. The crust retains the juiciness inside the products.

You can check for doneness by piercing the meat patty with a fork and pressing lightly on it. If the juice comes out clear, the dish is ready.
