Flour 180 g

  • Sugar 180 g
  • Chicken eggs 4 pcs.
  • Water 70 ml.
  • Cocoa powder 25 g
  • Vanilla sugar 1 tsp.
  • Baking powder 5 g
  • Salt 1 pinch
  • For cream and interior

    Cream 33-35% fat 500 ml

  • Cottage cheese 250 g
  • Sugar 150 g
  • Chocolate 100 g
  • Gelatin 10 g
  • Water 70 ml
  • Bananas 4-6 pcs.
  • Cocoa powder for sprinkling the cake

    Sift flour with baking powder and cocoa powder.

    Separate the whites from the yolks.

    Beat the yolks in several additions by adding boiling water.

    Add vanilla sugar.

    Without ceasing to beat, add sugar evenly.

    Beat with a mixer for another 5-7 minutes until a light, airy, light mass is formed.

    Beat the whites with salt until stiff peaks form.

    Transfer the whipped whites onto the yolk mixture.

    Pour the flour mixture on top and carefully knead the airy dough with a spatula.

    Place the dough in a baking pan lined with parchment. Bake in a previously preheated oven at 180*C for 30 minutes.

    Check the readiness of the biscuit with a wooden skewer.

    Place the hot biscuit on a wire rack and let it cool slightly.

    Then remove the biscuit from the mold and leave it on a wire rack until it cools completely.

    Mix gelatin with cool water and leave to swell.

    Cut out the center of the biscuit, leaving the bottom and sides 1.5 cm wide.

    Knead all the selected biscuit into crumbs.

    Fill the bottom of the biscuit pan with whole bananas.

    Place a pastry ring or sides of a springform pan on top of the biscuit.

    For the inside, grind the cottage cheese with sugar and banana in a blender.

    Dissolve the swollen gelatin in a water bath.

    Let the gelatin cool slightly and add it to the curd mass.

    Place the curd filling in the refrigerator for 20-30 minutes. The mass should thicken only slightly.

    Whip the chilled cream until it reaches a stable foam.

    Gently mix the whipped cream with the curd mass.

    Stir grated chocolate into the cream.

    Spread the cream on top of the bananas.

    Remove the pastry ring and sprinkle the cake with biscuit crumbs.

    Prepare the ingredients for the “Mole Mink” cake.
