Vertuts are a popular dish in the south of Ukraine and adjacent Moldova. They are prepared with a wide variety of innards: it can be cherries, apricots, sweet cottage cheese or salty innards made from cottage cheese with feta cheese and herbs, and almost everything else. But twirls with apples are one of the most delicious. The main thing in vertuta is a huge amount of interior and the lightest, most delicate airy dough. The secret to making it is to stretch it on an oiled, completely smooth surface.
“It’s quite a complex dish that requires skill. Kitchen utensils don't really matter here. To stretch the dough to a suitable thickness, some manual dexterity will be required. And, obviously, the right flour. It is necessary to knead the dough so that it stretches, but does not tear. To make this dish, use first-grade snow-white wheat flour with the highest gluten content. In Europe, this flour is classified as high-gluten flour type 812,” says the famous Odessa restaurateur Savva Libkin.
How to cook vertuta
Ingredients for 5 twirls
- 300 ml drinking water
- 550 g high-gluten flour type 812
- 1 egg yolk
- 35 ml refined sunflower oil
- a pinch of salt
To grease the dough:
- 120 ml refined sunflower oil
- 300 g peasant butter
For the inside:
- 1 kg of Renet Simirenko apples
- 250 g sugar
- 50 g raisins
- 0.5 tsp. cinnamon
- 1 vanilla pod
- 20 g sweet powder for sprinkling
Manufacturing:
We start, naturally, with the test. We heat the water to a temperature of 30−35 °C. Add salt and flavorless vegetable oil to it. Grind the egg yolk.
Pour flour into it, add water and oil and knead the dough. Knead for 15-20 minutes with your hands. If we use a mixer, then at low speeds and with the “hook” attachment, 10 minutes is enough. The dough should be smooth and not stick to your hands or the table at all. Cover the finished dough with a towel or wrap it in cling film and let it rest for 40-50 minutes.
Meanwhile, peel the firm greenish apples, cut them into 1x1 cm cubes and sprinkle with cinnamon. It is important to cut apples immediately before production.
Divide the dough into 10 equal parts. Roll each into a narrow crust. Leave for 3-5 minutes under a towel.
Melt 300 g of peasant butter. Add vegetable oil to it. Grease the table with oil. Place the crust on the table and stretch it with your hands to the thickness of tissue paper. Repeat the function with the second cake.
Grease 2 cakes with a mixture of oils and place them one on top of the other. We don't save oil. It is correct to use a special silicone brush for lubrication.
Fold in half. You will get a semicircle of 4 layers, greased with oil.
Place apples on the wide part of the semicircle. Sprinkle them with sugar, vanilla seeds and previously washed small light dry raisins. Lubricate your hands with oil and roll the vertuta into a rope. We form it into a snail or a figure eight.
Repeat the function with the remaining dough. In total, from 10 parts we will get 5 twirls.
Place them on a greased baking sheet and bake for 25 minutes at 180°C. Immediately after the hot twirls are taken out of the oven, you need to grease them with the rest of the oil. Let the vertutas cool and sprinkle them with sweet powder.
Moldavian vertuta with apples according to traditional recipes
If you have ever had to prepare plancides, or at least this title does not frighten you, then making vertuta will not seem extremely difficult for you. Developing the dough for such a Moldavian pie will only require your patience and accuracy, and the efforts you put into the dish will more than pay off with its great taste.
Vertuta with apples and cherries
Only apples serve as the insides for a traditional stretch roll, and if you wish, berries can be completely excluded from the recipe.
Ingredients:
- vegetable oil – 130 ml;
- testicle – 1 pc.;
- flour – 1-2 tbsp;
- sugar – 6 tbsp. spoons;
- water – 120 ml;
- apples – 4 pcs.;
- cherries – 150 g;
- salt – 1/2 teaspoon.
Manufacturing
Peel and seed the apples, season with lemon juice to prevent them from turning black, and add sugar. Peel the cherries and also add a small amount of sugar.
Now let’s move on to the main component of the dish – the dough. Pour vegetable oil into a bowl, add eggs, sugar and water, beat the mixture with a blender. Without ceasing to knead, add the sifted flour evenly into the dough. The finished base for vertuta must be soft and sticky. Divide the dough into quarters and place it on a greased surface, let it rest slightly for 15-20 minutes, and then proceed to shaping.
You can lightly roll out the dough with a rolling pin, and then begin to slowly stretch it from the center to the edges. As a result, a translucent layer of dough emerges along one edge, onto which our apple-cherry filling should be placed.
Now you can carefully roll the vertuta, evenly covering the inside layer with an abundance of layers of dough. Place the roll seam side down, coat with beaten yolk and bake for 40-45 minutes at 180 degrees.
Vertuta with cottage cheese and apples
The following vertuta is created for lazy or not very experienced housewives, because it is prepared from ready-made puff pastry. Naturally, you can change the dough to the traditional one at your own discretion and throw in only the filling.
Ingredients:
- puff pastry - 1 package;
- apples – 2 pcs.;
- cinnamon – 1 teaspoon;
- sugar – 4 tbsp. spoons;
- cottage cheese – 100 g.
Manufacturing
Peel and seed the apples and grate them on a large grater. Squeeze out excess juice from the fruits and season them with cinnamon and sugar. We grind the cottage cheese through a sieve to create it as smooth and homogeneous as possible, and mix it with grated apple.
Roll out the dough into a narrow layer on a floured surface. On the virtually transparent layer of dough, from the edge of the wide side, place a strip of curd-apple interior. We roll the dough into a roll, and wrap the finished roll in a spiral. Lubricate the spiral with beaten egg or vegetable oil and put it in the oven to bake at 180 degrees for about 45-50 minutes. Sprinkle the finished dessert with sweet powder and serve.
Vertuta with apples and sour cream
Ingredients:
- flour – 2 tbsp;
- sour cream – 200 g;
- margarine or butter – 200 g;
- testicle – 1 pc.;
- apples – 3 pcs.;
- honey - 3 tbsp. spoons;
- cinnamon – 1 teaspoon.
Manufacturing
Wash the apples, peel and remove the core. Cut the finished fruit into small cubes, mix with 3 tablespoons of watery honey and cinnamon.
To make the dough, take butter or margarine and melt it in a water bath, add sour cream, one egg and flour to the warm butter, mix thoroughly and let it stand for a couple of hours in the refrigerator. This technique will allow the gluten in the dough to disperse and make it easier to work with.
Roll out the rested dough into a narrow, almost translucent layer. Place the apple filling on the wide edge of the dough layer and wrap it evenly, rolling the dough into a roll. Now the roll can be transferred to a baking sheet and baked at 180 degrees for 30-35 minutes.

Vertuta with apples or Odessa-style strudel.
Well, here it is, my beloved Odessa cuisine, which has absorbed Jewish, Moldavian, Romanian, Greek, Bulgarian and other culinary identities of the peoples living in Odessa. Vertuta with apples is extremely tasty, extremely simple and fast.
THE RECIPE IS SIMPLE:
Dough: 4 cups flour + 1 cup boiling water + 1 cup vegetable oil (preferably without flavor) + pinch of salt + 1 tbsp.
Sahara. Pour the flour into a bowl, create a depression in the middle and pour boiling water mixed with salt and sugar into it.
Stir quickly with a spoon, then knead the dough with your hands, adding oil evenly. Knead until you get a smooth elastic dough. Peel the apples and cut into extremely thin slices.
I prefer sweet and sour apples in pies. Antonovka is especially good in pies, which I used in this case. Divide the dough into three parts (The number of parts depends on how many twirls you will make. I got three twirls.).
Roll out the dough into a very, very narrow sheet (it rolls out perfectly and does not tear). Place the apples on the entire sheet, moving 5 cm from the edge. Sprinkle with sugar and cinnamon. If desired, you can add raisins. Roll up, covering the ends, and carefully transfer to a greased baking sheet. Brush the tops of the rolls with beaten egg and sprinkle with sugar.
Bake in an oven preheated to 200 degrees for 40-50 minutes.
Vertuts can be made with various insides: apples, apricots, pumpkin, cottage cheese. You can also create it with unsweetened entrails, for example, with cheese and herbs. They are all extremely tasty. In my photo, the smallest vertuta is with peaches.
Vertuta with apples
This recipe for apple twirls has been around for many years. Even in the old days, Moldovan ladies passed it on from generation to generation. The vertuta dough turns out to be unusual. It is obedient and extremely easy to work with. Ordinary baking constantly helps housewives in the kitchen. So I offer an easy recipe for vertuta. Cheese cheese is usually used as the inside. But at that moment I had apples in the refrigerator that I needed. The apple inside adds juiciness and slight sourness to baked goods. I hope the result will amaze and amuse you.
Ingredients for the dough:
Unrefined vegetable oil – 200 ml
Hot water – 180 ml
Soda – a pinch, on the tip of a knife
Flour – how much dough will take
Ingredients for the inside:
Apples – 2-3 pcs.
Cinnamon – to your taste
Sugar – 170 g
Raisins – 50 g
Pour vegetable oil into a bowl. Add a pinch of baking soda at about the tip of the knife.
Pour in some very hot water. And start sifting the flour on top.
You need enough flour to make the dough soft. It will take approximately 400 g of flour. Keep an eye on it and test it with your hand as you knead the dough. It will be soft and affectionate, do not beat it with flour so as not to spoil it.
Like any dough, let it sit for 15–20 minutes to rest.
Let all the ingredients get to know each other. Let's prepare the ingredients for the inside.
Peel the apples and soak the raisins in warm water. Apples can be sprinkled with lemon juice to prevent them from darkening. Drain the raisins and dry them. Now let's start rolling out the dough.
From these products I get 2 vertuts. Therefore, I divide the dough into 2 equal parts with a knife and begin to roll it out. If you are preparing verita for the first time, in other words, it makes sense to divide the dough into 3-4 koloboks. This will make it easier for you to twist the twist. Grease the surface of the table with vegetable oil and roll out one part of the dough with a rolling pin. Next, start stretching the dough across the table with your fingers, sort of gluing it. It comes out almost transparent.
Grate the apples on top of the entire surface of the dough, sprinkle generously with sugar and ground cinnamon. Also add raisins.
Wrap the vurtuta in a roll and roll it into a ball, it looks like a snail.
Line a baking dish with paper, lay out the apple twirl, and sprinkle sugar and cinnamon on top again.
Place in a preheated oven for 30 minutes. The oven temperature must be at least 180 degrees. Cut the finished vertuta into pieces and treat it to your relatives and friends.
