Ingredients

  • For sponge cake for a 26 cm pan

Flour 180 g

  • Sugar 180 g
  • Chicken eggs 4 pcs.
  • Water 70 ml.
  • Cocoa powder 25 g
  • Vanilla sugar 1 tsp.
  • Baking powder 5 g
  • Salt 1 pinch
  • For cream and interior

    Cream 33-35% fat 500 ml

  • Cottage cheese 250 g
  • Sugar 150 g
  • Chocolate 100 g
  • Gelatin 10 g
  • Water 70 ml
  • Bananas 4-6 pcs.
  • Cocoa powder for sprinkling the cake

    Sift flour with baking powder and cocoa powder.

    Separate the whites from the yolks.

    Beat the yolks in several additions by adding boiling water.

    Add vanilla sugar.

    Without ceasing to beat, add sugar evenly.

    Beat with a mixer for another 5-7 minutes until a light, airy, light mass is formed.

    Beat the whites with salt until stiff peaks form.

    Transfer the whipped whites onto the yolk mixture.

    Pour the flour mixture on top and carefully knead the airy dough with a spatula.

    Place the dough in a baking pan lined with parchment. Bake in a previously preheated oven at 180*C for 30 minutes.

    Check the readiness of the biscuit with a wooden skewer.

    Place the hot biscuit on a wire rack and let it cool slightly.

    Then remove the biscuit from the mold and leave it on a wire rack until it cools completely.

    Mix gelatin with cool water and leave to swell.

    Cut out the center of the biscuit, leaving the bottom and sides 1.5 cm wide.

    Knead all the selected biscuit into crumbs.

    Fill the bottom of the biscuit pan with whole bananas.

    Place a pastry ring or sides of a springform pan on top of the biscuit.

    For the inside, grind the cottage cheese with sugar and banana in a blender.

    Dissolve the swollen gelatin in a water bath.

    Let the gelatin cool slightly and add it to the curd mass.

    Place the curd filling in the refrigerator for 20-30 minutes. The mass should thicken only slightly.

    Whip the chilled cream until it reaches a stable foam.

    Gently mix the whipped cream with the curd mass.

    Stir grated chocolate into the cream.

    Spread the cream on top of the bananas.

    Remove the pastry ring and sprinkle the cake with biscuit crumbs.

    “Mole Mink” cake is one of the traditional cakes. This cake looks original and really is very reminiscent of a mole hole, like a hill of earth from which an earth animal is about to appear. :) The cake itself is very tasty, it consists of a chocolate sponge cake, an interior of curd cream, and bananas.

    Products (for 8 servings)
    For the test:
    Egg – 3 pcs.
    Flour – 180 g
    Sugar – 180 g

    Prepare the ingredients for the “Mole Mink” cake.

    Divide the eggs into whites and yolks. Beat the yolks with a mixer for 30 seconds, then, evenly pouring boiling water, beat the yolk mixture until fluffy foam for about another 30 seconds. Pour sugar into the resulting yolk foam.

    Beat the mixture with the sugar until it becomes stiff but still fluffy. In another container, beat the egg whites until stiff peaks form. Add half of the beaten whites to the yolk mixture.

    Gently fold in the whites. Add the remaining whites and fold them in gently as well.

    In another bowl, combine flour, baking powder and cocoa, stir.

    Mix flour, baking powder and cocoa.
    In a separate plate, beat eggs with sugar (100 g). Add milk (160 ml) and vegetable oil - mix.

    Add the egg mixture to the flour mixture and mix.

    Grease the mold with vegetable oil and fill with dough. Bake in a preheated oven for 30 minutes at 180 degrees.

    Remove from the mold and cool completely. Then we cut out the middle, leaving the bottom and sides.

    Pour gelatin into a ladle and add milk (200 ml). Leave for 30 minutes. Then put it on a slow fire until the gelatin dissolves (! Do not bring to a boil!)

    Mix sugar (80 g) with cottage cheese. Then pour in the contents of the ladle (gelatin + milk) and mix everything thoroughly.

    Place whole bananas on the bottom of the cut out cake and pour the curd mixture over it.
