I continue my apple week with a recipe for charlotte, not regular, but chocolate. Tender, airy, fluffy, moderately sweet biscuit dough with a clear chocolate taste is perfectly complemented by juicy and fragrant apple slices. With a cup of hot tea, a piece of apple charlotte is so spiritual, so homely.

This pie is prepared very simply and quite quickly, and from affordable goods, so you can safely create it not only for a home tea party, but also serve it when guests arrive. Choose sweet and sour apples, and high-quality cocoa powder (then the taste and color of the finished sponge cake will not disappoint you). Flour is suitable for both premium and first grade, and we use medium-sized chicken eggs (45-50 grams each).

The step-by-step recipe for this tender and juicy homemade pie is perfect for a slow cooker. I use one of the most common models - Scarlett SC-411, power 700 W, bowl size - 4 liters. Depending on the power of your assistant, the time for making chocolate charlotte with apples may vary slightly.

Who else, for some reason, has not gotten a multicooker for themselves, can use a version of this step-by-step recipe for charlotte in the oven. Biscuit dough is prepared literally in the same way, apple slices are added to it and the pie is baked in a preheated oven at medium level at 180 degrees for about 50 minutes. About - this is because everyone’s oven is different, so you should not forget about the temperament of your assistant.

Making a dish step by step:

The recipe for this delicious homemade pastry includes the following ingredients: apples (preferably sweet and sour types, so that they don’t fall apart during baking and keep their shape), chicken eggs, wheat flour (I have the highest grade, but you can also use first grade), sweet sand, unsweetened cocoa -powder and absolutely little refined vegetable (I use sunflower) oil to grease the baking dish.

If you bake charlotte in the oven, it’s time to turn it on and heat it up – 180 degrees. In a separate bowl, mix 120 grams of wheat flour and 25 grams of high-quality unsweetened cocoa powder. We sift everything through a sieve.

We take another suitable large-sized dish and break 5 new medium-sized chicken eggs into it. Add 150 grams of sweet sand to them.

Beat everything with a mixer at high speed until the sugar grains are completely dissolved. The egg mass will noticeably turn white and greatly increase in volume.

It will be quite thick. If you ask me how long to beat, I won’t tell you literally - just look at the previous photo and see how the eggs with sugar will greatly increase. You need to beat for a considerable amount of time, and it directly depends on the power of your mixer. The better you beat the eggs with sugar, the more magnificent the finished charlotte with apples will be.

Now sift the wheat flour and cocoa into the beaten eggs in parts. If you just don’t want to make charlottes and biscuits, I advise you to try adding a teaspoon of baking powder to the flour - it will most quickly help the situation.

Evenly add sifted flour and cocoa into the dough, kneading the biscuit dough from bottom to top using scooping (folding) movements. Mix in one direction, but not for very long - biscuit dough does not like this. Try not to force the dough too much so that it remains airy and filled with air bubbles.

It's time to put the biscuit dough into the baking pan. For the oven, take a mold with a diameter of 22-24 centimeters. I bake in a slow cooker, so I use a bowl, which I recommend greasing with a small amount of refined vegetable oil. If you prefer to use butter for this purpose, be sure to sprinkle the greased pan with flour afterwards - such butter contains water. Yes, remember that properly prepared biscuit dough flows from the spatula in a wide ribbon.

Now we are making the filling very quickly, because the biscuit dough does not like to wait. We peel the apples and remove seeds, then cut the fruit into random pieces.

Vertically stick the apple pieces into the biscuit dough so that they are moderately distributed throughout the entire mass. Cook chocolate charlotte with apples in a slow cooker for 1 hour 10 minutes on the Baking mode. As I said above, depending on the power of your device, the time it takes to make this sponge cake may vary.

The finished chocolate charlotte with apples rose unsurpassedly. Check the readiness of the pie with a wooden skewer or toothpick - it should come out dry. But with all this, it is important not to overdry the cake so that the biscuit dough retains its tenderness and juiciness. Let the charlotte stand in the bowl for 10 minutes.

Then we take it out using the steaming insert. We simply place the insert into the bowl, seemingly covering the cake.

After this, we simply turn the entire structure over.

We remove the bowl and our baked goods stand on the insert. Do you see how superb and beautiful our chocolate charlotte with apples turned out to be? And all because we beat the eggs with sugar perfectly and carefully added them to the wheat flour. Let the sponge cake cool.

When the apple charlotte has cooled completely, you can cut it into portions. If you wish, sprinkle the finished pie with sweet powder.

During the apple season, be sure to prepare a fragrant balloon for tea. I suggest now preparing not ordinary charlotte, but chocolate! Juicy apple slices perfectly complement the rich chocolate sponge cake. I constantly add a spoonful of vanilla sugar, then the kitchen is filled with the indescribable smell of homemade baking. By the way, perfectly beaten eggs can raise the dough even without baking powder. If you are confident in preparing biscuits, then do not add, but if you are still in doubt, then a little baking powder will not hurt. It is better to take sweet and sour apples for charlotte. The recipe used a springform pan with a diameter of 25 cm. The chocolate charlotte comes out very tasty, you will love it!

How to make chocolate charlotte with apples

  • In a separate bowl, mix sifted flour, baking powder and cocoa.
  • Break all the eggs into a deep bowl and add sugar.
  • At the highest speed of the mixer, beat the eggs with sugar for 10 minutes. The mass will turn white and increase in volume, the sugar should completely dissolve.
  • Then add flour and cocoa to the bowl, stir with a wide spatula from bottom to top. Do not stir the dough in a circle or beat it with a mixer, otherwise the dough will settle.
  • The dough should be moderately chocolatey without lumps. There is no need to stir for a long time; biscuit dough does not like this.
  • Peel and seed the apples and cut into small slices.
  • Pour the dough into a greased mold.
  • Distribute the apples randomly over the dough, pressing the slices inward.
  • Place the mold in an oven preheated to 180 degrees and bake the chocolate charlotte for 40 minutes.

But I don’t like biscuit dough, or rather, I can’t stand it in any form. For people like me, charlotte tastes much better with butter or at least sour cream.

  • Baking soda (quicklime, not to be confused with baking powder) - 1 tsp.
  • Cinnamon (heaped) - 1 tsp.
  • Cocoa powder - 2 tbsp. l.
  • Butter - 1 pack.
  • Sugar - 3/4 cup.
  • Chicken egg - 5 pcs
  • Wheat flour / Flour - 2 cups.
  • Apple – 1 kg

Place half of the batter into a greased cake pan.

Add apples, stir.

Place in the form.

Place the second half of the “snow-white” dough on top. Bake at 180*C for about an hour until the stick is dry.
