Stunning chicken meatballs with rice in tomato sauce

This recipe is unusual in that spinach is added to the tomato sauce for the meatballs. Just one handful of chopped spinach leaves transforms an ordinary gravy into the most exciting dish, with little greenish flecks. The rest of the preparation is usual - we will prepare meatballs from minced chicken with rice, and tomato sauce from onions with carrots, with the addition of pasta and hot pepper for piquancy.

Ingredients:

For the meatballs:

  • Minced chicken – 350 g.
  • Boiled rice – 4 tbsp. l.
  • Onions – 0.5 pcs.
  • Salt and pepper - to taste.
  • Small egg – 1 pc.
  • Sunflower oil – 2-3 tbsp. l.

For the sauce:

  • Onions – 0.5 pcs.
  • Small carrots – 1 pc.
  • Salt and pepper - to taste.
  • Sunflower oil – 2 tbsp. l.
  • Tomato paste – 1 tbsp. l. with a slide.
  • Hot pepper – 1/3 pcs. or to taste.
  • Spinach – 1 handful.
  • Water – approximately 500 ml.

Manufacturing:

1. Wash the rice thoroughly and boil in salted water until half cooked. Drain in a colander and rinse under running water to remove excess starch. The rice should be slightly undercooked, because it will still cook when the meatballs are stewed in the gravy.

2. Mix rice in a bowl (4 tablespoons of ready-cooked rice will come in handy) and minced meat. If you grind it without the help of others, then it is best to mix chicken breast with thigh meat - this way the minced meat will be juicier and more tender, and not dry. For juiciness, add half a grated onion, and for a bunch, beat in a small egg, salt and pepper.

3. Cover the bowl with film and put it in the refrigerator for half an hour.

4. Meanwhile, prepare the sauce. Cut the remaining half of the onion into cubes and chop the carrots on a large grater. Heat a little oil in a frying pan and sauté the onion first. Once it has softened, add the cooked carrots to the pan and continue frying the vegetables until they turn golden brown. Stir frequently so that nothing burns.

5. Add tomato paste and finely chopped hot pepper (the amount is freely determined by taste and depending on whether the children will eat this dish). Stir quickly and fry everything together for about a minute.

6. Next, fill the contents of the frying pan with water - about two glasses will be useful (some of the water will boil away). Add salt and pepper, simmer for 20 minutes. The result should be a savory tomato sauce of medium mixture, fragrant, slightly sweet due to the carrots and with a slight spice. Try it and get it to your desired taste. If your tomato paste is sour, in other words, it makes sense to add a small pinch of sugar - it will balance the taste.

7. Form meatballs. The minced meat, after standing in the refrigerator, will become thicker, but will still be sticky and spill (in general, almost everything depends on the initial properties of the minced meat itself, how thick and dense it was). Wet your hands with cool water and form the minced meat into small balls the size of a walnut, scooping the minced meat with a teaspoon. Heat the oil in a frying pan and quickly fry them on both sides for 30 seconds. Due to the fact that the composition contains chicken meat, rich in proteins, they will quickly set, and the meatballs will not fall apart.

8. Place the browned meat balls into the sauce. Stir, cover the pan and simmer for 20 minutes.

9. At the very end, add chopped spinach leaves, heat for no more than a minute and remove from heat.

Serve the minced chicken meatballs in tomato sauce hot. The output from the indicated quantity of goods is 4 servings.

  • chicken fillet – 600 g;
  • chicken egg – 1 pc.;
  • long grain rice - 2 tbsp. l.;
  • onion – 1 large head;
  • carrots – 1 pc.;
  • garlic – 2-3 cloves;
  • wheat flour – 2 tbsp. l.;
  • tomato paste – 3 tbsp. l.;
  • olive oil – 50 ml;
  • salt and dark ground pepper - to taste;
  • seasoning for chicken – 1 tsp;
  • dark aromatic pepper – 3 peas;
  • bay leaf – 2 pcs.;
  • dill - 1 bunch.

Appetizing balls of minced chicken combined with sweet and sour tomato sauce are very tasty and satisfying. That’s why now I suggest preparing tender chicken meatballs in tomato sauce for lunch. Mashed potatoes, various cereals or pasta are perfect as a side dish. During the manufacturing process, the meatballs are soaked in sauce and turn out very juicy and fragrant. If you don't have a blender, you can grind the chicken fillet using a meat grinder with a small mesh.

Cooking chicken meatballs in tomato sauce:

Wash the chicken fillet, remove fat and films. Cut the meat into small pieces and place in a blender bowl. Add peeled garlic cloves and half a coarsely chopped onion to the fillet. Grind the ingredients into homogeneous mince.

Transfer the prepared minced meat into a bowl and add the rice, boiled until half cooked.

Beat a chicken egg into the minced meat so that the minced chicken meatballs in tomato sauce hold their shape and do not fall apart during frying. Add salt and spices to taste.

Mix the ingredients thoroughly, achieving a homogeneous mixture of minced meatballs.

Wet your hands in cool water and form the minced meat into round meatballs of similar size. Bread the dough in wheat flour.

Place the meatballs in a heated frying pan with vegetable oil.

Fry the products over medium heat until golden brown on both sides. Transfer the fried meatballs to a deep bowl.

Meanwhile, prepare the tomato sauce. Cut the remaining half of the onion into small cubes and grate the carrots using a large grater.

Place chopped onion in a frying pan with heated vegetable oil. Stirring occasionally, sauté the vegetables over low heat until golden brown.

Then add grated carrots to the onions. Stir and continue to fry the vegetables together for another 3 minutes until the carrots become soft.

Next, add tomato paste to the vegetables, pour in 300 ml of hot water, following the recipe for chicken meatballs in tomato sauce. For flavor, add dark aromatic pepper and bay leaves to the sauce, add salt to taste.

Place fried meatballs in tomato sauce. Cover the pan with a lid and bring the sauce to a boil. Reducing the heat to low, we will simmer the meatballs in tomato sauce over low heat for 25-30 minutes.

We will serve the finished meatballs hot together with tomato sauce, garnished with dill.

The preparation of this delicious dish begins with preparing the mass for the meatballs. For meatballs, in addition to minced chicken, we will need rice. Boil the rice in salted water until half cooked. Literally the same as for making cabbage rolls, the rice should be slightly hard and undercooked. Place the cooked rice in a colander and wash under running water.

Peel and puree the onion. Now you can start making the mixture for chicken meatballs. You can purchase ready-made minced chicken in the store or create it at home from chicken breasts or thighs. Store-bought minced meat often helps me out. So, put the minced chicken into a bowl.

Place the onion puree into the bowl with the minced chicken. Thanks to the onion, the minced chicken meatballs will turn out fragrant.

Stir the minced meat with rice.

To prevent chicken meatballs from falling apart and keeping their shape perfectly, beat one chicken egg into the mixture.

Add dark ground pepper to taste and a small amount of salt.

Pour vegetable oil into another frying pan and place it on the stove. To prevent the meatballs from sticking to your hands, wet your hands with cool water. Form small balls of similar size from minced meat and rice. Place them in the pan.

After the bottom of the meatballs is cooked through, turn them over to the other side. Fry them on the side given to us until golden and golden brown.

Recipe for Chicken Meatballs in Special Tomato Sauce:

Grind in a meat grinder: chicken breasts, one medium onion and 3 cloves of garlic, prepare the minced meat.
Boil the rice until half cooked.

Take chopped carrots (in a meat grinder), boiled rice, one tablespoon of tomato paste and add to the minced meat.
