Compote of apples and chokeberries for the winter
Mon, September 11, 2017
Autumn has already arrived, and we are still continuing to prepare for the winter. Now I offer a recipe for a fragrant and very tasty drink - let's prepare apple compote with chokeberries. The pleasant sweet taste with a subtle sourness and the gentle smell of this drink will be appreciated by both adults and children.
Traditionally, I store compotes and juices for the winter in small jars. This recipe will use 3 jars, any with a capacity of 1 liter, so you can take one three-liter jar. The proportions of the required ingredients are indicated exactly for this volume. We will prepare this fruit and berry compote using the double-pouring method, and store the drink in a cool, dry place or closet.
Ingredients:
Making a dish step by step:
We will prepare this tasty and fragrant compote for the winter from chokeberries, apples, water, sweet sand and citric acid. The amount of sugar depends on the variety (sweetness) of apples and your preference.
First, you need to painstakingly prepare the jars and lids using any method that suits you. Because even for compotes I use jars with a capacity of no more than 1 liter; they fit perfectly in the microwave, in which the sterilization process takes place. Wash the jars well with soda or detergent, then rinse them in cool water and pour about 100 ml of water into the bottom of each. Place in the microwave and steam at the highest power. For one jar – 5 minutes, and 3 jars together take 7-8 minutes. I simply wash the lids, put them in a saucepan, pour in water (so that the lids are covered one hundred percent) and boil for about 5 minutes. Place the berries in the prepared jars - I gave the proportions for a three-liter jar, if you remember. In other words, in one liter jar we put 100 grams of berries, which must be removed from the branches in advance, sorted and washed.
Next we put the apples. 400 grams is pulp with skin without seed pods, cut into slices. I used 3 large apples, each weighing about 180 grams.
Boil water (about 3 liters, pour out excess) and pour boiling water over the fruits in the jars.
Cover with lids and leave for 10-15 minutes. During this period of time, the berries will color the water. By the way, in this way the fruits are sterilized.
During this period of time, the chokeberry will release juice and the water will turn pink.
Pour 300 grams of sweet sand and a quarter teaspoon of citric acid into a saucepan.
Pour the fruit and berry infusion into a saucepan and put on fire. Bring to a boil, stir until the sugar dissolves, and cook at moderate boil for almost a minute or two.
We pour the bubbling compote into the jars to the fullest, in other words, practically to the very top.
Immediately screw it on with screw-shaped lids (or roll it up using a key), turn it upside down and wrap it in a blanket or blanket. In this position, let the apple compote cool one hundred percent. Then we move it to the basement or cellar, where we store it until needed.
This homemade drink is not only fragrant and tasty, but also very beautiful. You can eat the apple slices, and if you wish, you can dilute the compote with boiled water if you like it not too sweet. Cook for your health, friends, and bon appetit!

Step-by-step production
Step 1:
For the compote you will need: chokeberry (chokeberry), apples, water and granulated sugar.
Step 2:
Wash jars for compote in advance with soda and sterilize using any method that is comfortable for you. Because my jar has an iron clasp, it cannot be sterilized in the microwave. That's why I put the wet jar in a cool one! oven bottom up, having previously removed the sealing ring. And I sterilize for 15 minutes at a temperature of 120 degrees. I simply pour boiling water over the O-rings for three minutes. If you have ordinary iron lids, it will come
Step 3:
Wash the apples under running water and cut them into four parts and remove the seed boxes.
Step 4:
If you have fresh rowan, you need to wash it and sort it from the branches. If it's frozen, just pick it up. Place apples and rowan berries at the bottom of a sterilized jar.
Step 5:
Fill the jar with boiling water from a kettle, for example. It is necessary to pour boiling water into the middle, onto the apples. In other words, not directly on the glass, so that it does not burst. Cover the jar with a lid and leave for 5 minutes so that the apples warm up inside.
Step 6:
After this time, carefully pour the water from the jar into the pan, holding the jar with oven mitts so as not to get burned.
Step 7:
Add sugar to the pan and bring the syrup to a boil over low heat, stirring constantly until the sugar grains are completely dissolved.
Step 8:
Using a ladle, pour the syrup back into the jars. Don't forget to pour boiling water over the ladle in advance! The smallest organisms can also live on it, which will prevent the compote from standing all winter. Try to fill the jar up to the very top. If there is a slight shortage of syrup, simply add boiling water to the jar.
Step 9:
Roll up the jars with lids and wrap them with a thick towel. If you have roll-up jars, it would be better to turn the already rolled up jar of compote upside down and wrap it like that. The jars must cool completely before they can be stored.
This compote is stored all winter in a dark, cold room.
It would be great to open such a jar and serve homemade compote at any event. For example, for the new year.
