The uniqueness of this dish is that it is delicious either hot or cold. Therefore, you can cook it more and not be embarrassed. After all, having eaten it hot, it is necessary that it remains for the second day. Differently. when you try it cold.
Methods for preparing this dish may vary slightly among different sources. But this does not change the essence. The dish always comes out very appetizing and tasty.
I will outline for you the recipe with the full composition of ingredients, as expected. But if suddenly there are no tomatoes, replace them with salted ones or tomato paste. Experiment, maybe you will get your own recipe, even tastier.
Greek fish with marinade
- fillet of any sea fish 700-800 gr.
- onions 4-6 pcs.
- carrots 4-5 pcs.
- tomatoes 3-4 pcs.
- tomato paste -2 tbsp. spoons
- snow-white dry wine -0.5 tbsp.
- sugar - 0.5 tsp.
- vegetable oil
- salt, reddish pepper, ground dark pepper.
- rosemary, thyme, bay leaf.
- flour 2-3 tbsp. spoons.
Cooking vegetables in marinade
- Cut the onion into thin half rings. We grate the carrots using a Korean carrot grater, just not coarsely. Why I don’t recommend grating carrots on an ordinary grater. Yes, everything is quite simple, the appearance of the finished dish looks much more aesthetically pleasing. Pour boiling water over the tomatoes, remove the skin and cut into cubes.
- Heat the oil in a frying pan for 4-5 seconds. spoons We send the onion there and simmer it until golden brown.
- In a separate frying pan, fry the tomato paste in a small amount of oil, add half a teaspoon of sugar to it. Stir constantly, making sure it doesn't burn. Then add chopped tomatoes to the pasta and wait until it boils. Place on a very low heat and let the tomatoes simmer. But don't forget to stir.
- Also don't forget to stir the onion. When the onion turns golden, add grated carrots to it.
- Fry and simmer quickly until the carrots become limp.
- You can also add salt, pepper, spices and herbs.
- We transfer the prepared tomatoes to the vegetables, add a piece of reddish capsicum and a bay leaf, and pour in the wine. And simmer for another 5-7 minutes.
Making marinated fish
- Cut the fish fillet into portions, add salt and pepper.
- Heat oil in a frying pan. Dip the fish pieces in flour and fry over high heat until golden brown. We just need to fry it, we don’t need to bring it to readiness. When ready, place the fish on a paper towel to drain excess oil.
- In the meantime, prepare a form where we will place the fish and marinade. A frying pan with high sides or a cauldron will do.
- Spread half of the marinade on the bottom. We lay out the fish in a second layer and cover it with marinade. If the shape is small, then the layers can be repeated. But the bottom and top layers should be marinade.
- Heat over low heat, covering with a lid. After you notice that it has boiled (or even gurgled faster), simmer for 15 minutes. Let all the products come together as one.
- Now turn off the gas and let the dish stand for 10 minutes and rest.
Well, that’s all, our fish with Greek marinade is ready. The only thing left to create is to eat our dish. If you want to eat the dish hot, start immediately. If you want it cool, wait until it cools down and is saturated with juices.
